Eggplant Meatballs From 'The VB6 Cookbook'

Hearty and versatile eggplant has got to be one of the best vegetable substitutes for meat. Mark Bittman uses the nightshade as the base for meat-less meatballs in his new VB6 Cookbook. They're not much harder to throw together than the animal-based version, especially if you've got homemade breadcrumbs and cooked or canned white beans at the ready. Once baked, the tender "meatballs" are surprisingly flavorful (as long as you don't skimp on the salt), making it easy to forget that you may normally be eating beef.

Why I picked this recipe: Eggplant is the meatiest of vegetables, so these "meatballs" were an obvious pick.

What worked: The sweet and silky eggplant was a perfect flavor base in these meat-less meatballs. I also appreciated the extra protein from the added white beans.

What didn't: I thought the final meatballs were a bit too mushy, and could have used structure from nuts or other grains. I wouldn't recommend serving them in a sandwich, as pictured. As written, you're better off serving them on pasta or polenta. In addition, the tomato sauce could stand a longer simmering time if you're not in a rush.

Suggested tweaks: Adding some ground pine nuts, walnuts, or perhaps a whole grain like barley or quinoa would give the meatballs a bit more structure. The cauliflower and mushroom variations listed in the recipe would also help solve this problem. I'd recommend baking the meatballs on parchment paper to prevent any unwanted sticking. The meatballs can be baked ahead of time and reheated for serving.

The megacities in China captured by German photographer Michael Wolf are “as surreal as they are kinda terrifying,” states Tom Hawking. Wolf describes his project in an interview with Vice:

First off, what’s a megacity?

Cities that have a population with more than 5 million. I wouldn’t really consider any European city a megacity. Paris has a population of 2 million, whereas in China, for instance, a city with 3 million is considered small. I’m talking about populations of 5, 10, 20 million—up to 25 million.

Why do they look so depressing in your photos?

Well, some things about megacities have a lot of downsides. These are profit centers. The people who run them are not really concerned about the populations that live in them. They are concerned about making money. So on the one hand they are very intimidating and frightening but on the other hand they are extremely beautiful. In The Architecture of Density (his photo series featuring an extremely dense Hong Kong high-rise), you can almost see them as a tapestry.

How he describes the message of his work:

I’ve always been a social liberal. I’ve always been for the underclass. For example, I did a project called 100×100 where I photographed 100 apartments in a Hong Kong building that was about to be demolished, all measuring ten feet by ten feet. I am showing the living conditions of the city—but again, I’m looking at the vitality and resourcefulness of the people. They are everyday human beings and that’s what I am trying to document.

Bug In DOS-Based Voting Machines Disrupts Belgian Election

jfruh (300774) writes "In 20 cantons in Belgium's Flanders region, voting machines are x86 PCs from the DOS era, with two serial ports, a parallel port, a paltry 1 megabyte of RAM and a 3.5-inch disk drive used to load the voting software from a bootable DOS disk. A software bug in those machines is slowing the release of the results from yesterday's election, in which voters chose members of the regional, national, and European parliaments. The remaining voting machines, which are Linux-based, are unaffected, as were voters in the French-speaking Wallonia region of the country, most of whom use paper ballots."
