Ask a Bartender: Are There Any Flavored Spirits You Use?

by Carey Jones
Russian Sledges

"I find Hangar One's flavors to be more 'scented' than flavored and that is refreshing"

this is absolutely true; they're actually quite good. one gets the sense that the st. george folks (who still make hangar one in their distillery) wish they could make eau de vie from citrus.

From Drinks

20131218-bartender-josh-berner.jpg

Josh Berner of Zentan in Washington, DC

At Serious Drinks, we see more flavored spirits than you could possibly imagine. Green tea vodka. Cinnamon-roll vodka. We'd just about always prefer a fresh infusion to a bottled concoction, but we're always looking for a diamond in the rough. So we asked a number of bartenders: Are there any flavored spirits that you actually use?

Here's what they had to say.

Ray Anguiano of Atwood Cafe in Chicago

"Dewar's Honey. It's great for a quick and instant hot toddy—just add hot water and lemon juice." — Ray Anguiano (Atwood Café)

"Often spirits are flavored with chemicals, and I usually I try to stay away from them. Deep Eddy, however, makes a sweet-tea vodka that is out of this world. Just smelling it, you can tell it's been infused with tea. And sweetened with honey, not sugar. Don't need to do anything to it except pour it over ice!" — Josh Berner (Zentan)

"I've recently been passionately into Santa Teresa's Araku. It's made with Santa Teresa Rum, estate-grown sugar, and estate-ground coffee. The flavor is pure and really concentrated. I love to pour it in my coffee or over ice cream." — Gianni Cionchi (FishTag)

"I did once do a drink with whipped cream vodka for shits and giggles. It was a fizz with the whipped cream vodka, lemon, raspberry syrup, egg white and soda. It tasted like bubble gum, so we called it Bubblegum Pop. I think Andy Warhol would've liked the homage." — Jonathan Harris (Firefly)

20131221-Papi Hurtado.jpg

Pablo "Papi" Hurtado from The Rittenhouse in Philadelphia

"Stoli Vanilla is one of my favorites to use with citrus- and pineapple juice-based cocktails." — Pablo "Papi" Hurtado (The Rittenhouse)

"Hangar One's Kaffir Lime, for gimlets or ginger limeade." — Jaime Pait (E&O Asian Kitchen)

"The best flavored spirit that I've come across this year is Chareau. It's an aloe vera liquor with fresh botanicals, fruits, and herbs, distilled up in Alameda, CA. Kurt Charron is the wizard behind this gem. It's great on its own with a couple of cubes, or in a simple rickey or gimlet with some gin. It's also absolutely amazing with pisco." — Chris Amirault (The Eveleigh)

"Right now, we are really excited about a cocoa rum liqueur called Cacao Prieto, which is distilled in Brooklyn. It brings a magnificent cocoa aroma and opulent rum flavor to cocktails." — Juan Coronado (The Bazaar by Jose Andres at SLS Hotel South Beach)

"Embarrassingly, I like a sriracha vodka that's coming out. (You're not printing this, right?)" — Justin Fairweather (Evelyn Drinkery)

Just a Hot Tea, Thanks

Daniel Bronson of The Strand Smokehouse and Crescent & Vine in Queens

"I always prefer to make infusions myself, but Cabin Fever Maple Whiskey straight on top of pancakes is a pretty good way to wreck a Sunday." — Dan Bronson (The Strand Smokehouse & Crescent & Vine)

"We have a very tongue-in-cheek, fun Jell-O shot program at Play, and I'm open to just about anything, when it comes to ingredients for them. That being said, I don't stock any flavored spirits on my bar." — Jim Kearns (PLAY)

"I prefer infusions to flavors as you get a cleaner, more genuine flavor, but I always keep an open mind. I find Hangar One's flavors to be more 'scented' than flavored and that is refreshing." — Lauren Lathrop Williams (Jsix Restaurant)

"Fireball is a new, cinnamon-flavored whisky that is really hot and a lot of bars have it stocked because the demand for it is huge. At Upstairs, we tend to just serve it as a straight drink or at customers' specific requests. However, I think mixed drinks will soon follow in a variation of twists on current cocktails like whiskey and ginger, Coke, etc." — Miri Kolici (Upstairs at the Kimberly Hotel)

What are your favorites, when it comes to flavored spirits?

So many drinks, so little time. Keep in the loop on Twitter, or sign up for our weekly newsletter.

Newswire: Ice-T bested by the "deep nerd shit" of Dungeons & Dragons audiobook

by Sean O'Neal
Russian Sledges

“Pegasus. Pegasi. That’s horses with wings,” Ice-T exclaimed. “Motherfuckers talk like Yoda: ‘Outside I go, into the sun thereof, in, out…’ How do you read this shit?... Motherfuckers live in places that don’t exist… This motherfucker got a sword that talks to him and shit.”

Yesterday it was reported that Ice-T—following years of talking over beats, talking to fictional criminals, and talking to the non-butt part of his wife—would be taking a natural next step by hosting a talk show, where his zeal for talking could take on its purest form. But while we don’t yet know what Ice-T will be talking about, we know what he won’t be talking about: Dungeons & Dragons. According to Ice-T’s podcast, in which he can also be heard talking, Ice-T says he recently recorded what he called “a fucking Dungeons & Dragons book” for Audible, whose producers had apparently asked themselves, “Who can we get to bring to life the thrilling swords and sorcery of this beloved fantasy franchise? Is the man who wrote ‘New Jack Hustler’ available?”

To Ice-T’s constant chagrin, he was. “Dungeons & Dragons is some of the most crazy, deep, deep ...

Newswire: Some jerkface stole the Parks And Recreation "Leslie And Ben" lock from Paris

by Sean O'Neal

In the 100th episode of Parks And Recreation, Ben and Leslie take a surprise trip to Paris where, after gawking at the incredibly romantic bridge from Inception, they commemorate their love through the tradition of putting a lock inscribed with their names on the fence overlooking the Pont des Arts. Fans have since made their own pilgrimages to seek out the lock and take their pictures with it, and it was all incredibly sweet and sentimental and a shared experience until some selfish jerkface cut the fence and stole the lock for themselves. The disappearance was first noted on Tumblr, by a Parks acolyte who located its spot using Reddit directions and previous fan photos, only to find it gone. “Whoever you are, super hardcore Parks fan, you kinda suck,” they wrote, speaking for us all.

Michael Schur has since retweeted the news, politely asking, “Please bring it back?” Meanwhile ...

Victorian Blood Book; “To Amy Lester Garland–A legacy left in his lifetime for her future examination by her affectionate father”

“Garland, John Bingley; Waugh, Evelyn, 1903-1966, former owner.’

“Evelyn Waugh was a collector of things Victorian. The “Victorian Blood Book” is a book of decoupage assembled from engravings, many taken from books of etchings by William Blake, as well as other illustrations from early nineteenth-century books. Drops of red india ink and extensive religious commentary have been added to many of the images. The book bears an inscription by one John Bingley Garland to his daughter Amy and dated September 1, 1854: “A legacy left in his lifetime for her future examination by her affectionate father.” Shortly afterwards, she married the Reverend Richard Pyper, so the album was probably an early wedding present.”

Figure Skater Performs Big Lebowski Themed Routine

big-lebowski-figure-skating-routine.jpg The Big Lebowski: it's an important part of every person's life. And to celebrate The Dude, this is a short video from Late Night with Jimmy Fallon of Tara Lipinski performing a Big Lebowski themed routine without ever spilling her White Russian (likely just non-fat milk). That's some serious talent -- I can barely sit on a bar stool without spilling my beer and here she is skating around with a drink like it's nothing. The routine is only a minute long though, so it's not exactly Olympic material. "Yeah, well, yaknow -- that's just like, your opinion, man." I see what you did there, and I'll allow it. You know how many times I've started watching the Big Lebowski after coming home from a night of partying? At least a hundred. And you know how many times I've actually finished it? Maybe one out of ten. I get the sleepies. "You take bong hits till you pass out." I GET THE SLEEPIES. Keep going for the video, along with the original number from the movie. Thanks to Rob, who agrees if she'd been holding a bowling ball in the other hand, that would have really been something.

Glasserie Elevates Rabbit to Menu-Superstar Status

by Sierra Tishgart
Russian Sledges

feed me all the bunnies

There's a lot more than rabbit involved.

Rabbit tends to occupy its own niche on New York menus: It's not impossible to find, but it's rarely a featured item. Lately, though, the perception seems to be changing as more chefs give rabbit the kind of star treatment that they usually reserve for high-profile proteins like pork and chicken. Nowhere is that more true than at Greenpoint's Glasserie, where chef Sara Kramer serves a $76 version that's not so much a single dish as it is a feast, a spread that takes up an entire table — it's worth not only the money that it costs, but every glowing review it's received. It's even worth an hour-long trek to Greenpoint in the middle of a snowstorm.

Here's why: Kramer prepares the rabbit three ways. First, she confits the legs in duck fat, marinates the saddle in paprika and a spice called Hawayij, and simmers the belly and scraps into a stew. Then, she adds pickled vegetables, preserved-lemon yogurt, a red and a green schug (Israeli hot sauce), braised chickpeas, a fennel-and-herb salad, and, best of all, fried "flaky bread" to the spread. The menu simply lists this under its "large dishes" category, but it could easily serve five people and turn into a kind of DIY rabbit-sandwich party. It is glorious.

"You see a whole-roasted chicken on every menu, but I noticed that nobody was serving a whole rabbit," Kramer says. "It's been integral to the concept of the restaurant since day one, but during the first two months, it was a hard sell." She says customers tend to be put off by the idea of eating a bunny, "but the actual texture and flavor of the meat is very approachable. We were selling six a week, and now, we sell something like 50. It's definitely changed as the amount of press has brought people in specifically for the dish."

To buy her rabbits, Kramer turned to the eighteen-month-old Cascun Farm in Syracuse, where Andrea and Don Cascun raise antibiotic-free rabbits and do all of the processing themselves. Needless to say, the Cascuns have had some trouble keeping up with demand. Kramer wants her rabbits to be large, and the Cascuns work hard to meet her special requests. "Sara was originally purchasing eight or ten rabbits a week, and then she had a review in the Times," says Andrea Cascun. "The next week, she asked us for 40 rabbits, which was awesome, but we've had to grow into her demands. Glasserie has jumped us to the next level."

Kramer's rabbits aren't the only ones that have seen a recent bump in popularity. Anna Klinger, the chef and owner of Park Slope's al di là, is New York's most prominent rabbit pioneer. She has served braised rabbit since the late nineties, and recently, she's noticed an uptick. "Rabbit has been on our menu for years, and it's waxed and waned in popularity," Klinger says. "This is definitely a high moment. A few years ago, I was cooking maybe three whole rabbits a day, which gives us nine portions, versus five a day right now." Anita Lo, who sells a saddle of rabbit at Annisa, agrees: "Rabbit, in general, has never been a big seller, but people are ordering it more and more," she says. "I'm not quite sure why."

Part of the reason could be rabbit's many virtues: It's lean, minimally processed, and sustainable as an ingredient. Plenty of other restaurants have recently added rabbit to their menus: The Dutch offers rabbit potpie; Il Buco Alimentari serves fried rabbit at lunch and a spit-roasted version at dinner; Pearl & Ash makes rabbit sausage; and the Modern offers rabbit-truffle dumplings.

Even if the preparations are similar to chicken, the profit margins aren't because high-quality rabbit is more expensive for chefs to buy. "Chicken can cost anywhere from $1.80 a pound to $4 for local, farm-and-pasture-raised beautiful chicken," Kramer says. "But I haven't seen rabbit anywhere for less than $7 a pound." (At $76, Kramer's rabbit feast costs exactly the same as the famous roast chicken for two at the Nomad.) "It's an expensive dish," she says. "But once it comes to the table, everyone sees much food it is. The accompaniments are part of increasing the perceived value of the dish, as well as the style of the meal."

Despite the acclaim and the still-growing popularity of Kramer's rabbit, there is one notable person who still refuses to try it: Kramer's mother. "Still, to this day, my mother won't eat it," Kramer says. "The fear is that they're cute and cuddly. Any association with a pet makes people feel bad. But chickens are cute, too. I actually have chickens in my backyard."

Roadrunner (Jonathan Richman song) - Wikipedia, the free encyclopedia

by russiansledges
Russian Sledges

'As a teenager Richman saw The Velvet Underground perform many times, and the format of “Roadrunner” is derived directly from the Velvets’ song “Sister Ray”. “Roadrunner” mainly uses two chords (D and A, and only two brief uses of E) rather than “Sister Ray”’s three (which are G, F, and C), but they share the same persistent throbbing rhythm, and lyrics which in performance were largely improvised around a central theme.

'However, in contrast to Lou Reed’s morally detached saga of debauchery and decay, Richman’s lyrics are passionate and candid, dealing with the freedom of driving alone and the beauty of the modern suburban environment, specifically the suburbs of Boston, Massachusetts. The introductory countoff, "one - two - three - four - five - six!", and lyrics about "going faster miles an hour" with the "radio on" have endeared the song to many critics and listeners since it was first released.

'Richman wrote the song by 1970, when he began performing it in public, aged 19. Former bandmate John Felice recalled that as teenagers he and Richman "used to get in the car and just drive up and down Route 128 and the Turnpike. We'd come up over a hill and he’d see the radio towers, the beacons flashing, and he would get almost teary-eyed. He'd see all this beauty in things where other people just wouldn’t see it."[2]'

On February 13, 2013, then State Representative Marty Walsh introduced a bill to have '‘Roadrunner’' named official rock song of Massachusetts.[7] Richman however came out against this saying, “I don’t think the song is good enough to be a Massachusetts song of any kind.”[8] Comedian and Massachusetts native John Hodgman came out in support of Walsh's bill, saying the song was, “woven as deeply into the cultural landscape of Massachusetts as the Turnpike itself. It is the pulsing sound of the night and the future. It connects the midnight ride of Paul Revere with the dream of every Massachusetts teenager who has just gotten their license and is discovering the Freedom Trail that is Route 128 after the last movie lets out.”[9]
