Potato salad can get a little boring. Adding six layers of magic really jazzes things up.

Potato salad is simple, perfect, and often so tragically overlooked in favor of trendier salads or flashier side dishes. Make this dish for your next barbecue, and help breathe new life into an old favorite.

Best served with a big spoon and eaten with a big fork.

Serves 8

INGREDIENTS
Potato Salad
2 pounds russet potatoes, peeled and chopped into rough 1-inch cubes
3/4 cup sour cream
1/2 cup mayonnaise
1/2 cup cilantro leaves, divided

Taco Beef
1 tablespoon canola oil
1 lb ground beef
kosher salt and freshly ground pepper
2 tablespoons taco seasoning

Guacamole
2 large, ripe avocados, peeled and chopped into rough ¼-inch cubes
1 large beefsteak tomato, cored and chopped into rough ¼-inch cubes
1 small red onion, minced
juice and zest of 1 lime

Assembly
1 15-ounce can refried beans
2 cups salsa
8 ounces cheddar cheese, grated
1/2 cup black olives, thinly sliced

Special equipment
A deep, clear serving bowl that's at least one gallon in volume.

PREPARATION
Put cubed potatoes in a medium pot. Add enough cold water to cover the potatoes by an inch, then bring the water and potatoes to a boil over high heat. Boil the potatoes until soft (they should mash easily with a fork), 15-20 minutes. Meanwhile, as the potatoes are boiling, prep the taco beef and the guacamole (see below). When the potatoes are cooked, drain them in a colander. Do not rinse them.

For the taco beef, heat canola oil in a large skillet over medium high heat. Add the ground beef, season with a little bit of salt and pepper, and cook, stirring often, until most but not all of the beef has turned brown, about a minute. Add taco seasoning and cook, stirring occasionally, until the beef is cooked all the way through, about 2 minutes. Drain any excess fat from the pan, and turn off the heat.

For the guacamole, combine chopped avocado, chopped tomato, minced red onion, and the juice and zest of one lime in a medium mixing bowl. Season with salt and pepper, and mix with a wooden spoon to combine everything and mash the avocado just slightly. Refrigerate until you're ready to assemble the dip.

When the potatoes are cooked and drained, transfer them to a large mixing bowl. Coarsely chop all but 2 tablespoons of the cilantro (reserve those two tablespoons for garnish), and add the chopped cilantro, sour cream, and mayonnaise to the potatoes. Season with salt and pepper, then mix everything so that the potatoes are evenly coated with the sour cream/mayonnaise mixture and the cilantro is spread throughout.

Assemble the dish in a deep, clear serving bowl that's at least one gallon in volume. Start with the potato salad and spread it an even layer at the bottom of the dish, then spread the refried beans over the potatoes. Add the salsa next, then the cooked ground beef, then the guacamole, then the shredded cheddar cheese. Garnish with sliced olives and the remaining cilantro.

A ~very~ important culinary innovation: The Pimento Cheeseburger Corn Dog.

I am not going to lie to you. These were not easy to make. We had to tweak and retest the recipe several times to get it to work. When you do it, the batter might seem too thick. The popsicles sticks won't want to stay in your meat; you'll have to be careful and deliberate as you dip and fry. The first few dogs may not be pretty. But if your goal is to achieve culinary greatness by way of a burger patty stuffed with pimento cheese then battered and fried like a corn dog with all that gorgeously puffy, bready state fair magic, then this is your path. Go boldly.

Makes 6 corndogs

INGREDIENTS
For the batter
1 ½ cups yellow cornmeal
1 ¼ cups all-purpose flour
¼ cup sugar
1 tablespoon baking powder
¼ teaspoon salt
1 egg, beaten
1 cup buttermilk
1 cup whole milk
1 tablespoon vegetable oil
1 tablespoon honey

For pimento cheese-burgers
1 gallon vegetable oil, for frying
1 pound ground chuck (15-20 percent fat content), chilled
1 ¼ teaspoons kosher salt
¼ teaspoon freshly ground pepper
1 egg, beaten
½ cup pimento cheese

Special equipment
Deep fryer
Deep try thermometer
6 popsicle sticks or other thick wooden sticks to skewer cheeseburger corndogs

PREPARATION
Set aside about 2 tablespoons of vegetable oil (for searing beef later on) then pour the gallon of vegetable oil into a deep fryer or large heavy pot and heat it to 350°F.

For the batter: In a large bowl, combine cornmeal, flour, sugar, baking powder and salt. Stir to mix with a fork, then add the beaten egg, buttermilk, milk, oil, and honey. Stir with a wooden spoon until combined.

For the corndogs: Mix ground chuck, egg, salt, and pepper in a medium mixing bowl and mix until evenly combined. Divide the meat beef mixture into 6 equal portions.

On a large tray or baking sheet, flatten each portion of meat into a rectangle roughly 3 inches wide, 4 inches long, and ½-inch thick. Spoon a tablespoon of pimento cheese onto each rectangle and shape it into a straight, thin line down the middle of the rectangle, leaving about ¼ inch at each end. Roll the rectangles of meat into hot dog-shaped tubes so the pimento cheese is in the middle, and pinch at the ends. Be sure that none of the cheese is visible.

Heat 2 tablespoons canola oil a large skillet over high heat. When the oil is almost smoking, turn the heat down to medium-high, and lay the shaped patties down in the skillet, making sure they're not touching. Cook, without touching, until the underside of the meat is completely cooked and starting to brown, about 3 minutes. Flip the patties and cook until the meat is cooked through, about 3 minutes. Transfer cooked patties to a paper towel-lined plate, and refrigerate for 15 minutes.

Fill a large cup ¾ of the way with cornmeal batter. (The cup should be at least 5-inches tall and wide enough to easily dip the meat sticks into it.)

When the cooked meat sticks have cooled slightly, skewer each with a popsicle stick through the center, being sure to leave at least 2 inches of the stick hanging out at the end.

When you are ready to fry, set your cup of cornmeal batter near the fryer. Line a baking sheet with paper towels to set the cheeseburger corndogs on when they are finished frying.

Dip a cheeseburger corndog into the cup of batter, holding it by the end of the popsicle stick and coating it completely with batter. Dip the battered cheeseburger corndog immediately into the fryer, submerging the dog completely but still holding the popsicle stick with your hand. Fry, spinning it occasionally, until the dog is a deep golden brown evenly. Transfer to the paper towel-lined tray, and repeat the process with the remaining cheeseburger corndogs, refilling the cup with batter as it empties.

The only thing that Louis, a rescued french bulldog, wants to do is to rest his weary head on his human Samantha‘s warm leg, but it just keeps moving. Despite the challenge, Louis creeps persistently along with Samantha’s leg until he finally gets what he wants. And after the year he’s had, this little guy deserves it.

Louis is a rescue French Bulldog from Short Mugs Rescue Squad out of Houston Texas. He lives with me, Samantha, in Dallas Texas. He came to me as a hospice foster dog, with a diagnosis of end stage heartworms and possibly cancer. We made the tough decision to try to cure his heartworms with “super slow kill”, or just giving him heartguard monthly to kill off the baby heartworms, while the adults died naturally. We did this for one year and he seemed ok throughout the process. At his recent x-ray (04/14) we are happy to report that there are NO signs of heartworms in this little guy. What they thought was cancer was actually just the heartworms throwing the xray. He’s a trooper! I officially adopted him April of 2013, even with his cancer/heartworm hospice situation, because he is the most precious, loving, squishy frenchie boy I’ve ever seen.
