This Rigatoni al Segreto recipe was the most closely guarded secret at Gino’s, one of New York City’s most famous Italian restaurants. It was as legendary, as their signature zebra-print wallpaper, and it won awards as the best red sauce in town. 

While there were rumors that the secret ingredient was butter, no one really knew for sure. Once the restaurant closed in 2010, the recipe got out, and indeed, the butter legend was confirmed. Having never been there, I was excited to try it, but there was a big problem. Actually, a small problem. The recipe called for just a half-tablespoon of butter. Regulars knew this couldn’t be right, and so the recipe remained a mystery. Was it a typo? Was the old chef just trolling people?

I’ve been enjoying a lot of frosé this summer. It’s a lightly sweetened, blended drink made with frozen rosé wine that is incredibly refreshing. It is also an easy recipe to use for variations, like this boozy Tiki Frosé and this refreshing Watermelon Frosé, so you can offer your guests – and yourself – a little bit of variety when serving up cold glasses of this summer trend.

Like my regular frosé recipe, this one starts with a bottle of rosé wine that is lightly sweetened and frozen in advance. Freezing the wine means that you don’t need to add any ice when it comes time to blend it, resulting in a creamier and tastier drink. The wine can be frozen in ice cube molds or a shallow baking dish. Once it is frozen, you can make the frosé at any time by putting the frozen wine into your blender with some fresh watermelon.

I used a mini seedless watermelon to prepare this frosé and I suggest that you do the same unless you are preparing an extremely large batch or have a lot of people around to help you eat the leftover melon! Though the mini melons vary slightly, they tend to be about the same size and have thin rinds, so you should easily get 3-4 cups of cubed watermelon from one half of an individual fruit. The exact amount that you use isn’t critical to the success of the recipe, so don’t worry if you have a little more or a little less.

The resulting drink is smooth and refreshing, with a nice balance of sweet wine and melon flavors. You will probably feel as though you could drink it all day – so be sure to prepare extra rosé ice cubes so that you can make up a second batch.

Watermelon Frosé 
1/2 cup sugar
1/4 cup hot water
1 bottle of rosé wine
3-4 cups cubed watermelon (approx 1/2 mini melon)

In a large measuring cup or bowl, whisk together sugar and hot water until sugar is dissolved. Add in wine and stir to combine. Pour mixture into a shallow baking dish or into ice cube trays and freeze until solid, at least 8 hours.
To serve, pop the ice cubes out of the trays or spoon out the frozen mixture and transfer it to a blender. Add in cubed watermelon. Blend until smooth.

Makes 3-4 servings.
