Cheese Sauce for Cheese Fries and Nachos Save Recipe About This Recipe Yield:4-6 (makes about 1 1/2 cups) Active time:15 minutes Total time:15 minutes This recipe appears in:The Burger Lab: Cheese Sauce for Burgers, Fries, and Chips Rated: Ingredients 8 ounces extra sharp cheddar cheese (or a mix of cheddar and pepper Jack—see note), grated on large holes of a box grater 1 tablespoon corn starch 1 (12-ounce) can evaporated milk 2 teaspoons Franks Red Hot or other hot sauce Procedures 1 Add cheese and cornstarch to large bowl. Toss to combine. Transfer to medium saucepan. Add 1 cup evaporated milk and hot sauce. Cook over low heat, stirring constantly with whisk until melted, bubbly, and thickened (about 5 minutes). Mixture will look thin and grainy at first but will thicken and come together after heating. Thin to desired consistency with additional evaporated milk. Serve immediately with fries, tortilla chips, burgers, or hot dogs.

To what era do Americans yearn to return?

IN OUR latest weekly Economist/YouGov poll, we asked Americans which decade of the 20th century they would most like to go back to. Most popular was the 1950s. The decade of economic boom following the second world war is regarded as a time of consumerism, conservatism and cold-war caution. It was an age of stay-at-home wives, novel household appliances and new suburbs—yet was also most popular among women. The haze of Woodstock and Haight-Ashbury in the 1960s rolled up in second place. Republicans in particular preferred the morally uncomplicated 1950s under President Eisenhower and the 1980s of Reagan; Democrats tended to opt for Bill Clinton's 1990s. In general, people yearned for their youth. Over 50% of those over 65 wanted to revisit the 1950s and 1960s, while 45- to 64-year-olds pined for the 1980s. The youngest were torn between the jazz age of the 1920s and the 1990s, their own salad days.

United Plates of America: Interlocking porcelain trays of all 50 states

Ryan and Kaitlyn Lawless have re-created the 50 of the United States as interlocking porcelain trays for anyone to ‘bake, serve and style with pride’. Basically, they did this by cutting out prototypes on a CNC router for precision, which is then translated into plaster molds to create the cast for liquid ceramic to be poured into to create the porcelain plates.

The plates are then fired in an electric kiln, glazed and high-fired again before the undersides are sanded and smoothed. Wonder if we’d need a get a bigger dining table to hold all the states…

on facebook, the city adds: "The three fires that have been ruled accidental are 151 College Ave., as well as the two most recent fires, which were 18 Belmont St. and 19 Banks St. Of the other six, investigators are not releasing further details so as not to hinder their investigation."

SOMERVILLE – Mayor Joseph A. Curtatone, State Fire Marshal Stephen Coan, and Somerville public safety officials held a press conference today to provide the community with an update on the ongoing investigation into recent fires that have occurred in Somerville. Over the last three months, nine house fires have occurred, the most recent of which occurred on Sunday, August 18, on Belmont St. The State Fire Marshal’s office has ruled three of these fires to be accidental. Three others remain under investigation. However, three have now been ruled as intentionally set.

Mark Humbert and Karin Evans were walking along the path leading up Claremont Canyon when they spotted this new art form: bark bombing. Some industrious soul had woven strips of bark into a mat and hung it up on a tree. The artist inscribed the name of the piece into one of the strips: “Always Around You.”

Will bark bombing be the new yarn bombing, a practice that took off in Berkeley over the past few years? What lasts longer, yarn or bark?(...)

It's common to hear people complain that things used to be better in the good old days, but in the case of apples, that might actually be true. Scientists in Japan have detected a long-term trend of deteriorating taste and texture in local apples, which they have associated with a rising average temperature in the areas where the fruit is being grown.

Studying the Fuji and Tsugaru cultivars, Japan's two favorite varieties, the researchers observed lower acid concentration, firmness, and resistance to disease relative to the 1970s. The acid is what gives apples their signature sharp taste, so its reduction might actually be preferable for those with a sweet tooth, but the loss of firmness and increased vulnerability to watercore disorder are undeniably detrimental changes.


Sweeter, softer apples... aren't those called peaches?During the period studied, 1970 to 2010, average air temperatures in the cultivating regions increased by a third of a degree Celsius each decade, which resulted in the apples sprouting and blossoming earlier. The warmer air is also presented as a causative factor for these changes in the apples over time, though the researchers themselves warn that there's a multiplicity of factors that affect the final composition of a fully matured fruit.

Personally, I’ve never seen anything like this, and photographer and digital artist Michael K. Chung said he couldn’t believe what he saw when he was processing images he took for a timelapse of the Perseid meteor shower. It appears he captured a meteor explosion and the resulting expansion of a shock wave or debris ring.

U.S. Olympic Committee doesn’t like Russia’s anti-gay law, asks athletes to comply with it anyway

On Friday, the U.S. Olympic Committee (USOC) denounced a Russian law that criminalize public support for gay rights as "inconsistent with the fundamental principles of the Olympic and Paralympic movements” -- but asked that athletes abide by it anyway.

“The athletes are always going into countries with laws different than his or her own country. They’re going to agree with those laws in some ways, they’re going to disagree with those laws in other ways,” USOC chief executive Scott Blackmun told Russia's R-Sport. “It’s our strong desire that our athletes comply with the laws of every nation that we visit. This law is no different.”

Blackmun also refused to comment on American runner Nick Symmonds, who this week dedicated a silver medal he won in Moscow to his gay and lesbian friends.

“I know he feels strongly about this issue as many Americans do, beyond that we really don’t have any comments,” Blackmun said. “We encourage our athletes to work within Russian law, and I know Nick is trying to do that as well.”
