Broiled stone fruit with thyme and mascarpone cheese
This delicious summer treat is warm, tart and savory. The recipe is very simple and can be changed to suit your own tastes. Use any sort of stone fruit, like peaches, nectarines, plums, apricots or cherries and you can also mix and match with your favorite soft cheeses.
Broiled stone fruit with thyme and mascarpone
Ingredients (serves 4 – 6 as a side dish):
3 nectarines
2 peaches
3 apricots
4 plums
1/2 teaspoon salt
2 tablespoons olive oil, plus more for the bread
2 tablespoons balsamic vinegar
Handful of fresh thyme (the more the merrier)
12 oz. mascarpone (or ricotta or fresh goat cheese)
Handful of parsley, chopped
Sliced french bread
Directions:
Preheat broiler to high.
Slice the fruit and remove pits. Place the cut fruit, half of the chopped parsley and half of the thyme leaves into a mixing bowl. Sprinkle with salt, olive oil, balsamic vinegar, and thyme. Toss to coat. Pour this into a baking dish. Broil (not too close to the flame) until tender, gooey, juicy, and just starting to brown along the edges (about 15 minutes). Remove from the oven and tuck spoonfuls of cheese around the cooked fruit. Broil again until cheese just starts to brown on the top.
On a cookie sheet place the sliced bread drizzled with olive oil and place the cookie sheet into the oven to toast.
Once the fruit and cheese platter is done, remove from oven and garnish with fresh chopped parsley and fresh thyme. Serve immediately with the grilled bread.

Strawberry picking
Kristina, from Poppi Photography, and I went with Hans and our friend, Imri from New York, to pick some strawberries at Spooner Berry U-Pick Farm in Olympia, Washington. It was a fun day soaking up the sun while working hard to gather these delicious northwest treats. Strawberries are just so much more flavorful and juicy when they are picked locally and ripe. Next, we will need to make some jam and maybe a few pies too!
