have we ever had a real honest discussion about bundt cakes and how i've never made a successful one and how it was even once a dark joke with yossy and sarah and me? and how all i ever wanted for my wedding was a gaggle of mini bundts on my dessert table and even though that is a gross exaggeration, i tried so hard to have red velvet mini bundts and failed miserably and had to reroute those suckers at the very last minute before saying my vows? the bundt struggle is real, as is the struggle with so many other holiday desserts and i've been doing some thinking: it's time we did some good old fashioned mental preparation for the holidays. 

sure, dessert fails aren't totally specific to the holidays, but any time you're making a dessert for a special occasion, you have the added pressure of *time*, and the challenge gets worse. like, just last month, i got an email about a failed batch of halloween cookies and by the time i could sit down and write a reply, i realized that halloween was half over and knew my advice probably wouldn't do much good at that point. so because the holidays are upon us and because i'm expecting all of you to do a bunch of baking this season, i've put together a little list of tricks that will help you save and repurpose any desserts that have gone south. it's my little way of keeping it together during the holidays, or as the good folks at hallmark say, #keepsakeit together.


if your bundt cake or any other cake breaks while it's coming out of the pan: crumble it all up, distribute the crumbles into individual jars and top them with a dollop of frosting and sprinkles (this is what i did with my wedding bundts!) or you can make cake truffles.

if your gingerbread walls fall apart: you can do what i did during the great gingerbread house catastrophe of 1997, in which we accidentally bought the fluffy flimsy frosting instead of the holds-like-glue frosting: use cardboard for the walls and glue them together with a hot glue gun. decorate with candy as if nothing happened... not even a monstrous tantrum...

if your cheesecake cracks down the middle: happens to me all the time. ugh! do what eva does and dump a bunch of berries on it! or cover the top in frosting or caramel. yum.

if your pie fails in any of the million ways that pies do: chop it up and fold it into some ice cream for a pie sundae or a pie milkshake. you were planning on serving it with ice cream anyway, right?

if your meringues deflate in the oven: break all of them up to make an eton mess!

if your cookies break or burn or you spend your afternoon building sugar cookie mini cakes and then a storm (or cat?) blows through and they all fall down: ok, i made you this sugar cookie mini cake recipe so that i could demonstrate what to do! these little guys are inspired by this cute ornament (seriously with all of the mini cakes that i've made why have i not made cookie mini cakes?? thank you, cookie ornament, for inspiring me to do this!) and for the record, no, a kitty did not come and tip all of these over. we're just talking theoretically here... see below for the recipe and my solution for fixing cookies gone wrong:

makes 6

ingredients

Cookies:

3 c all-purpose flour
1/2 tsp baking soda
3/4 tsp baking powder
3/4 tsp kosher salt
1 c unsalted butter, softened
1 c sugar
1 1/2 tsp vanilla extract
1/2 tsp almond extract
1 large egg
Confectioners’ sugar, for dusting

Frosting:

1 c unsalted butter, softened
2 c confectioners’ sugar
1 tsp vanilla extract
1/2 tsp almond extract
A pinch of kosher salt

Sprinkles, for decorating

Cookies:

Preheat the oven to 350ºF. Line two baking sheets with parchment paper and set aside.

In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. In a large bowl with an electric mixer or the bowl of a stand mixer fitted with a paddle attachment, beat together the butter and sugar on medium high until pale and fluffy, 3-4 minutes. Reduce the speed to medium and add the extracts and egg and mix to combine.  Reduce the speed to low and then gradually add the dry ingredients and mix to combine. Pour the dough out onto a clean work surface and give it a few kneads to bring it all together. Divide it in half, wrap half of it plastic wrap, and refrigerate it while you roll out the first half. (Alternatively, you can make the dough in advance, wrap all of it in plastic wrap and refrigerate it overnight.)

Dust your work surface and a rolling pin with confectioners’ sugar and roll out the dough to 1/4” thickness. Cut out five increasing sizes of circles, 1 1/2"-3" (i use these biscuit cutters) and use a small offset spatula to transfer them to a baking sheet, 1" apart. Re-roll scraps and repeat with the remaining half of the dough. Bake for 10-12 minutes, until the bottoms are lightly browned. Let the cookies cool on the pans for 5 minutes and then transfer them a wire rack to cool completely.

Frosting:

In a large bowl with an electric mixer or the bowl of a stand mixer fitted with a paddle attachment, beat the butter until soft and creamy. Gradually add the sugar and mix to combine. Mix in the extracts and salt. Add food coloring, if desired.

Assembly:

Transfer the frosting to a piping bag. Stack up the circles, largest on bottom, with a thin layer of frosting between them and decorate with sprinkles.


...ok so now you're la-dee-da going about your day after you spent hours building these and this happens:

never fear, make a good old northern midwest cookie salad! crunch up your cookies, fold them into whipped cream, add some fruit if you'd like, top with sprinkles (important!) and make some obscure fargo reference while you serve it in cute trifle cups. and hint: if your cookies failed by way of over baking, let your salad sit in the fridge for a good few hours (or overnight) before serving to allow the cookies to soften in the whipped cream. boom! cookie failure has been reversed.

During this time of year that we can’t get our hands-off pomegranates so we’re busy shucking the arils till we fill our freezer with pomegranate seeds. Our two trees are exploding with red globes and we have to beat the birds to them because they’ll leave us with empty, hollowed out shells if we’re a few days late.

It’s much easier and cleaner than you think to indulge in eating pomegranate seeds. Here’s our method to staying clean and not make it look you killed someone. But to be safe, you still might want to wear an apron when attempting this easy feat.

Adoption Story: Corinne & Moses the Great Dane

To start things off honestly, I’ve always had a dog in my life—not having one has never been an option! They bring too much joy and love for it to be negotiable. Getting Moses, and having a houseful of pets was inevitable.

The Great Dane is by far my most favorite breed. Not only do I love their loyal, regal, silly, stubborn, protective, loving personalities, but I have always been a lover of the enormous breeds. For some reason, the bigger they are, the more human-like they are. Watching a Dane move is like watching a horse in motion, which is so amazing to see.

Moses the Great Dane

I love their true ‘gentle giant’ nature, especially around young children. Fawn Danes were originally bred to be nanny and helper dogs for small children in the European countryside, and that lovely quality still remains present within their DNA, and is truly a sight to behold. I love going to sleep at night knowing that our Dane will see to it that our children wake up safe in their beds every morning. They are just a noble breed—the whole package!

Our boy Moses is from a very special breeding. His father was the National Grand Champion Great Dane for a few years running in the late 90’s, and Moses was actually a frozen specimen for at least a decade until the right Dam was chosen to breed a litter. When Moses was born, his breeder planned on keeping either him or his brother to show and breed. Thankfully, he ended up keeping his brother, and we were allowed to buy Moses for our own family pet!

We brought him home at about 16 weeks old at 75 pounds! We knew he would be enormous and very big boned! And he is! He settled in to our family right away, grew like a champ, and the rest is history. Best dog we’ve ever had…we call him our “once in a lifetime dog”. He is a gem, and so handsome.

He is a true representative of everything that defines the breed.

Naturally, that also means the usual drool and slobber… His head shakes, and suddenly I have to clean the walls. Yup…the struggle is real. #greatdaneprobs

Gear Reviews: Bose 20i Noise Canceling Headphones, ConvertAHanger

I recently found two new products that have made their way onto my permanent packing list.

For years, I put off buying noise canceling headphones for a few reasons: They were big, bulky and cost a lot of money. As someone who travelled light, I didn’t want a pair of large, over the ear headphones finding their way into my carry-on. Even after learning that Bose made a very lightweight pair that fit in your ears, I hesitated. (Mostly because I hate in ear headphones.)

Yet the more I traveled, the more I saw them. I even spoke to one seat mate who had a pair of the in ear type. He raved about them. But I still wasn’t sold.

Then, a few weeks ago, I passed by a Bose store and thought I would try them out. I didn’t hate them. In fact, I liked them. They were comfortable and I hardly felt them in my ears.

But at $300 I took pause.

Luck seemed to be on my side as a few days later, Bose put them on sale for $50 off. And if I bought them through Amazon, I had 30 days to return them if I wasn’t happy.

I tested them on four different flights last week.

 

imageThe verdict: click on the link below and buy them. My life has changed. These little beauties, that fit in an included case about the size of a smartphone, and weighing only 2.6 oz/74 grams (including case) are terrific. They cut out almost all engine noise and limited the volume of conversations around me. If I wanted to hear any announcement being made I either had to take them off or turn off the noise canceling feature.

There are two versions: the 20 (for Android and Windows) and the 20i (for Apple). I have the 20i and they include an on/off switch, rechargeable battery via micro-usb port, volume control, play switch and microphone. They come with three different size ear buds so you can find which size fits best.

Bose claims you can get about 16 hours on one charge. I haven’t tried it for that long.

imageWe’ve all been there…..hotels that don’t use standard hangers but instead offer two theft proof type that only fit on their racks. They either have no hook or tiny ones.

 

 

 

Fortunately, one company has made a product that allows the traveler to convert those hangers to normal ones.

imageAnd they work great. I may now stop packing either inflatable or folding hangers and instead pack a couple of ConverAHangers since they are much smaller and lighter.

Police crack down on naked couch surfers in Arlington alleys

Arlington Police report arresting a pair of local residents they say they found lying nude on a couch behind the Regent Theatre on Medford Street around 11:45 p.m. on Wednesday.

Ryan Barry, 23, and Nicole Carmichael, 26, were both charged with indecent exposure and trespassing. Barry is also charged with disorderly conduct and assault.

Police located a completely naked male subject, later determined to be BARRY, laying down on a couch. Officers determined he was breathing. They located a woman, CARMICHAEL, next to BARRY who was also breathing. "Private Property" and "No Trespassing" signs were clearly visible in the area.

"This is an unfortunate situation where two parties clearly violated the law," Police Chief Frederick Ryan said in a statement. "I applaud the work of the responding officers from the Arlington Police Department who handled the incident professionally and responsibly while ensuring the safety of all involved."

Meet the artist who trades “lettering” for kale salads (and cocktails)

Twenty-three-year-old Lauren Hom has a simple business model: “What I write is what you pay.”

The Crown Heights, Brooklyn, resident and professional hand letterer is the founder of Will Letter For Lunch, a project she started in late March where she writes a restaurant’s daily specials in pretty lettering on a chalkboard in exchange for eating whatever those specials are, which she then documents on her blog.

“Ninety-nine percent of restaurants have a sandwich board outside or a chalkboard menu inside with the specials for the day or the week,” Hom explains. “It’s always written out in some hostess’ handwriting, and I thought I could make them look so much more appetizing. How a dish is written out is how you imagine it tastes.” (We’re thinking messy handwriting says something like not so delicious…)

Hom, who’s originally from Southern California, has a design degree from the School of Visual Arts and a full-time gig hand lettering for advertising and editorial clients, but two days a week, she works on Will Letter for Lunch.

“It started through handing out fliers in Crown Heights and Prospect Heights,” she says. “Now I get emails through word-of-mouth.”

It’s likely you’ve eaten some of her work: Hom has lettered for indie healthy restaurants such as Nourish Kitchen and Table in the West Village and Crown Height’s new Mountain Apothecary Kitchen—and big-name places with plenty of healthy options, like John DeLucie’s The Lion.

“I’ve definitely written quinoa and kale salad a number of times,” she says, and some of her favorite healthy dishes have included a smashed curried chickpea sandwich from Mountain and an egg sandwich with avocado from Nourish Kitchen and Table. Funny enough, since Hom is a vegetarian, she can’t always eat what’s on the menu.”I’ll bring friends, and they love it,” she says. “Who doesn’t want to eat for free?”

Of course, it isn’t all healthy. “I write a lot of happy hour specials,” she laughs. “So there’s definitely been lots of cocktails.”

Despite all of the amazing food (and drink) she’s gotten access to, it’s the project’s ability to influence behaviors around food that fuels her most. “Once I finish the menu, it makes such a difference,” she says proudly. “Restaurants will tell me they can see the change in how a customer views the menu—design and meals have a very interconnected relationship.” That’s certainly food for thought. —Jamie McKillop

The Best French Macarons in Toronto

When it comes to the French macaron, the perfect creations from Ladurée can’t be beat, but when Paris or New York is not an option, luckily there are no shortage of options in our hometown of Toronto. Here are seven of our favourite places in the city.

1. Bobette & Belle

Cake designer Allyson Meredith Bobbette and pastry chef Sarah Bell, gained notoriety with their wedding desserts (by order only) — now thanks to their storefront in Leslieville — anyone can pick up some of their delicious macarons. Flavours include gianduja (chocolate with pralines and hazelnuts), pecan, vanilla and raspberry. Well-sized, these have a crisp crust and generous filling.

2. La Bamboche

Generously sized, a perfectly creamy ganache centre and light and crisp crust, these are to-die for!

Offering flavours like cappuccino, olive oil, rose and salted caramel, you’ll also find adorable Marie Antoinette mini-cakes with macarons and other delectable pastries. The best part? 6. Butter Avenue

A tiny bake shop with limited hours, owner and baker Rosanne Pezzelli started with a passion for fine art which eventually led her to Europe. Developing an obsession for delicate sweets and beautiful pastries while overseas, she enrolled in baking and pastry classes and never looked back. Her ice cream sandwiches are certainly one of the shop’s highlights, but the beautiful macarons are not-to-be-missed. Discover flavours like peanut butter and jelly, black sesame, and coconut, not to mention classics like vanilla bean, chocolate hazelnut and lemon.
