AoM Month of Sandwiches Day #20: The Carne Asada Torta

Out of 483 submissions, we picked 20 to highlight here on the site each weekday during the month of April. At the end, we’ll publish all the entries into an epic man-sandwich cookbook. Enjoy.

Today’s Sandwich: The Carne Asada Torta

I thought for sure someone would submit a recipe for one of my all-time favorite sandwiches: The Carne Asada Torta. But no one did, so I decided to make it myself. I discovered the Carne Asada Torta while I was living in Tijuana, Mexico. The torta is a staple in Mexico. Street vendors typically offer it in addition to tacos. Street tortas were a weekly treat for me, and I’d never turn down a torta made by the nice old ladies who would feed me every now and then. Will my stateside torta stack up to the ones I ate in TJ? Let’s find out.

Ingredients

You can get all these ingredients (except the roll) at a regular supermarket, but it’s more fun to visit your local Mexican grocery store.

  • Brisket or flank steak
  • Mexican bolillo roll
  • Guacamole
  • Mayo
  • Refried beans
  • Pickled jalapeños
  • Limes (I used 6)
  • Crushed red pepper
  • Garlic powder
  • Black pepper

Step 1: Prep Meat

The key to carne asada is to cut really thin slices of meat. If you don’t have a meat slicer like Matt Moore, one trick I learned from a lady in Tijuana is to cut the meat when it’s just a bit frozen.

Marinate the meat in lime juice (I used 6 limes), garlic powder, and red and black pepper. Let the meat marinate for a few hours in the fridge.

Step 2: Grill Meat

Grill the meat on high heat. Because the strips are so thin, it won’t take that long.

Step 3: Warm Up Your Beans

Warm up your beans in a pot. I like to put a bit of milk in mine to make them creamier. Another trick I learned from a Tijuana señora.

Yeah, not the prettiest sandwich we’ve showcased (partly due to my poor photo taking on this one). It tastes good. I promise. Oh, and don’t forget the Mexican Coke to go with it. Made with real sugar!

Taster’s Notes

Riquisimo! Took me back to Tijuana and los cholos y perros roñosos. So good. Definitely a lot messier than I remember. I probably packed too much on. The one change I would make is dicing up the meat after grilling it. The meat was a bit too tough to be eaten in strips. Other than that, a filling, muy bueno sandwich.

"Doctor Who" excitement levels are hitting overload as the long-running series gears up for a big 50th anniversary extravaganza episode that will bring together many of the doctors in one show. I would recommend celebrating the occasion with a remote-control flying Tardis. It's not going to get tangled like a super-long scarf, and it's a lot cheaper than building your own working K-9.

Forget aerodynamics, this is a pretty faithful replica of the Doctor's Tardis in miniature. The handset controller runs on four AA batteries while the Tardis itself is chargeable through USB from the handset. Half an hour of charging time will net you up to seven minutes of flight time.

AoM Month of Sandwiches Day #13: Homemade Roast Beef Au Jus

I invited AoM’s food writer, Matt Moore, to contribute a sandwich to our sandwich project, and strongly hinted that making something with roast beef and au jus would be pretty awesome. Well Mr. Moore came through in a big way. This looks delicious!

Today’s Sandwich: Roast Beef Au Jus by Matt Moore

Most often, life is better when you take the time to do things the right way – i.e., no short cuts. That lesson is especially true with this sandwich. Beloved by many, yet deemed too technical by most, the roast beef au jus sandwich is too often passed off by restaurants and home cooks with less than mediocre results. You know what I’m talking about — that concoction of dry, overcooked meat on stale bread served with a side of brown, salted water.

That doesn’t have to be so. With some love and attention (and a bit of time) you can deliver a homemade version of this manly meal that is sure to impress.

Ingredients (serves 6, prep 25 minutes, cook 60 minutes)

1 Ingredients

  • 1 3lb eye of round beef roast
  • Extra virgin olive oil (I suggest Georgia Olive Farms)
  • 1 head of garlic
  • Fresh thyme
  • Kosher salt
  • Fresh cracked pepper
  • 8 cups beef stock
  • 1 onion
  • 6 hoagie rolls

Step 1: Prep Ingredients  

Preheat oven to 400 degrees F. Smash and mince 6 cloves of garlic. Next, strip the leaves off of 4 -6 thyme sprigs and finely chop.

Step 2: Season Meat & Let Sit at Room Temperature

Coat meat with a few tablespoons of olive oil. Next, add minced garlic and thyme, followed by a liberal sprinkling of kosher salt and fresh cracked pepper. Keep the meat out of the fridge! You want it to be at room temperature to create a nice sear and so it will cook evenly.

Bring 8 cups of beef stock, remaining garlic, onion, and 4 sprigs of thyme to a slow simmer over medium heat.

Pre-heat a seasoned cast iron skillet over medium-high heat on the stovetop for 1 minute. It’s a good idea to open a window or turn the vent fan on at this point.

Step 5: Sear Meat

Add meat to pan and sear on all four sides, about 2-3 minutes per side. Do not poke or prod the meat during this process – allow it to maintain contact with the pan to develop a nice sear – this creates flavor.

Once the meat is seared, place it in the preheated oven and cook for 45-55 minutes, or until internal temperature reaches 125 degrees F for rare/medium rare.

Place the strained pot of liquid back on the stove over medium-high heat, allowing the mixture to reach a boil in order to reduce by at least half – you should have about 2-3 cups of liquid remaining. Remove from heat, cover, and keep warm for service.

Other than my fine assortment of Wusthof knives, my most manly kitchen appliance is my meat slicer. Over the top? Perhaps. Awesome? Most definitely. I realize it’s highly unlikely that you will have one of these in your kitchen, so take your best knife and slice the meat as thin as possible against the grain and on the bias (angle).

Taster’s Notes

All-in-all, this sandwich is a home run. For added flavor and flair, whip up some horseradish mayo (8 parts mayo to 1 part prepared horseradish) and serve as a condiment. You can also add in slices of Gouda or provolone cheese, sautéed peppers and onions, or sliced dill pickles – whatever you fancy. Truthfully, I love the simplicity of the perfectly cooked meat, served with the savory dipping jus. Pair with a cold Yazoo Pale Ale and life is pretty darn good.

The Detailed Survey Showing Law Enforcement Personnel Overwhelmingly Oppose Obama’s Gun Control Proposals

Law enforcement personnel in the United States overwhelmingly disagree with the controversial gun control measures being debated in Washington and across the country, according to a new survey released by PoliceOne.

A law enforcement website with more than 1.5 million unique visitors per month and 400,000 registered members, PoliceOne asked more than 15,000 verified active and retired law enforcement personnel more than 20 questions about how they believe stricter gun control will impact the community.

The participants were spread out across the country, and about 80 percent were current law enforcement, 20 percent former/retired.

Here are some of the results of the survey, which was conducted between March 4 and March 13:

  • Nearly 96 percent said that a ban on standard capacity magazines with more than 10 rounds would not reduce violent crime.

  • More than 81 percent said that “gun buy-backs” do not reduce gun violence. 
  • Nearly 80 percent said that a ban on private transfers of firearms between law-abiding citizens would not reduce violent crime. 
  • 71 percent said that a ban on “assault weapons” would have no impact on reducing violent crime.  20.5 percent said it would actually have a ​negative ​impact.

  • More than 70 percent opposed the idea of a national database of legal gun sales. 
  • Nearly 68 percent said magazine capacity restrictions would negatively affect them personally. 
  • More than 60 percent said that the passage of Obama’s gun control legislation would do nothing to improve officer safety.  Nearly 25 percent said it would actually have a ​negative​ impact.

On the other hand:

  • More than 76 percent responded with either a 4 or 5 when asked on a scale of 1-5 how important legally armed citizens are to reducing overall crime.
  • 80 percent believe legally armed citizens can reduce casualties in incidents of mass violence.

  • More than 91 percent stated they supported the Right-to-Carry by law abiding Americans.
  • More than 76 percent support the arming of trained and qualified teachers or administrators who volunteer to carry a firearm.

Bottom line:

  • Nearly 45 percent said that if they were Sheriff or Chief, they would not enforce more restrictive gun laws, and would vocally join the opposition effort.  Another 17.2 percent said they would not enforce the laws, and “quietly lead the agency in the opposite direction.”  20 percent were unsure of how they would respond.

Glenn Beck and many others have been saying that Americans need to encourage local sheriffs to stand up against gun control measures.

“I’m telling you the sheriffs are the last line of defense, because the sheriffs don’t answer to the governor, the sheriffs don’t answer to the legislature,” Beck said.  “The sheriffs only answer to two things:  You and the Constitution.”

Executive director of the NRA’s Institute for Legislative Action Chris Cox weighed in: “The American people, and particularly the members of law enforcement, want politicians in Washington to stop pursuing a failed political agenda and get to work fixing our broken mental health system, improving school security, and getting criminals off the streets.”

We don’t know much about her, but this 15-year-old girl from Maryland sure knows her facts when it comes to firearms.

Speaking before Maryland legislators at recent a hearing, the young woman made her case against gun control and argued restrictive legislation will only affect law-abiding American citizens. It only took her about three minutes to effectively make her point.

The video was posted to YouTube about a week ago and already has over 1.5 million views.

“I’m 15-years-old and I’ve been shooting for almost eight years. I’ve also been part of the Maryland Rifle Club and Maryland State Rifle Team,” she began. “Because of this I have become eligible for various shooting scholarships around the country to a wide array of even the most prestigious colleges that have shooting teams.”

“Achieving stricter gun control laws would obliterate any opportunity I could have had to attend a decent college on a shooting scholarship,” she added.

She went on to say that it became immediately clear when she began shooting that guns are not the problem, people are.

“Chicago, Illinois has had some of the strictest gun control laws in America enacted in the last few years and it is currently more as twice as likely for you to be killed in Chicago than in the Afghani war,” the 15-year-old said.

She pointed out that of the 3,371 have been killed in Chicago in the past 11 years. Of that total, only 37 were killed with a rifle — barely 1 percent.

“So creating gun control legislation that targets ‘assault rifles’ has statistically proven to only weed out less than 1 percent of the problem if you’re lucky,” she added.

Netflix signs up The Matrix, Babylon 5 creators to develop a new sci-fi series: Sense8

Continuing its quest to sate subscribers' appetites with a flow of original content, Netflix has announced a new original series, Sense8. Due in late 2014, it's being developed by the Wachowskis of The Matrix, V for Vendetta, Cloud Atlas and Speed Racer fame, as well as J. Michael Straczynski, creator of Babylon 5. Details are thin, but the press release promises a gripping global tale of minds linked and souls hunted with a ten episode run for its first season.

As it did with House of Cards, Arrested Development and other productions, Netflix is relying heavily on data from viewers to decide which programs to support. According to chief content officer Ted Sarandos, "Andy and Lana Wachowski and Joe Straczynski are among the most imaginative writers and gifted visual storytellers of our time," whose creations are very frequently viewed on the service. According to the creators themselves, they've sought to work together for a decade, and this idea started from a late night conversation about "the ways technology simultaneously unites and divides us." If that's not enough for now, then there are a few more details and quotes in the press release, which is included after the break.

The Gear – X Watch Concept is a take on retro steampunk styling. I love it for its skeletonized dial that showcases the movement so aptly. Designed as a unisex watch, I can imagine it being worn by me more than my husband.
