Whether you board 1st or last, sip champagne or beg for an extra bag of honey roasted peanuts, the view from the plane is a democratically ho-hum experience from any seat. Tiny, frosted and scratched plastic windows – hardly changed since the era of propeller-based flights – offer the most modest and warped glimpses of outside. But in the possible future, travelers might be offered a flying experience not unlike IMAX, with an all-encompassing OLED display simulating sensory-stimulating views not unlike wearing an Oculus Rift headset.

British technology research company, CPI (Centre for Process Innovation), envisions a near future when planes will be outfitted with low resolution flexible OLED displays (just 150 ppi resolution) embedded into fuselage lining panels and across seat backs, extending the view from outside the plane into the inside cabin. These multi-screen panels can be used either as entertainment displays, lighting, and likely for cabin crew notification and safety presentations, and in the process reducing overall weight.

Ride Cycle Club Opens in Vancouver: a Spin Workout in the Dark

RIDE Cycle Club in Yaletown is a fifty-five minute full body workout designed to strengthen your body and mind.  In addition to the intense cardio aspect, each RIDE tones your core, arms, back, butt and legs through a series of small movements and weight-lifting on the bike that add to dimension to your workout. RIDE classes move with the rhythm of the music. Each instructor sets their own unique playlist, keeping your mind inspired and your body challenged.

By the way, this is all done in the dark.

RIDE Cycle Club was started by four Vancouverites – spin instructor Ashley Ander, mother and son duo Shannon and JJ Wilson, and Moe Jr. Samieian.

Ashley first discovered spin while living in New York City.  When she moved back home to Vancouver, she taught at other local studios with the intention of eventually opening her own.

“I am very lucky to have the partners I have with Moe being a close friend who saw my passion first hand and JJ who was an student of mine while I was teaching. JJ and I had many conversations around our love for spin and he had mentioned wanting to open a studio, so really, everything just aligned at the perfect time.” – Ashley Ander, RIDE Cycle Club

Three months before the opening of their current Yaletown location, RIDE had a temporary UNDRGRND space in Gastown, which served as a training area for instructors to ride, practise and teach.    Modern Mix Vancouver had the opportunity to take a lesson from Ashley in the UNDRGRND location, and brought along three of our girlfriends, to try out this invigorating workout.

In the UNDRGRND space, a dozen stationary bikes were huddled in a semi-circle around three teacher bikes.  When we first arrived, many of the class participants were already on their bikes, warming up.  We later found out that most of the attendees were actually instructors practising their RIDE in preparation for the Yaletown space to be open to the public.

“A good instructor needs the right music, loads of energy, a strong voice and most importantly, has to be able to genuinely motivate a class and get every single person riding that bike to be fully committed – mind, body and soul!” – RIDE Cycle Club

At RIDE, each participant is given a pair of shoes to change into for the workout (just like at a bowling alley, you have to wear special shoes).  These shoes have a special clip on the bottom, which clicks into your bike pedal.

When the class began, the loud dance music began and the lights were turned off. The only light source were from candles lit in jars on the ground.

“I love loud music and when I’m on the bike I find that I lose myself and I’m taken to another place. It’s a workout that not only just touches on the physical side, it also gets you to another level emotionally. Whether that’s just getting away from your phone and email to being able to completely decompress from every day stress. Personally, no other workout has provided me with those two things at the same time.”  – Ashley Ander, RIDE Cycle Club

Ashley wore a microphone so we could hear her over the music.  According to her, a good fitness instructor needs the right combination of music, high energy and a strong voice in order to genuinely motivate a class and get every single person in the room to feel fully committed – mind, body and soul.  Every 30 seconds or so, Ashley would ask us to turn up the gears on our bikes to mimic an uphill climb.  Sometimes we’ll bike sitting down, and other times standing up.  On cue, the entire class will start rocking back and forth in unison to the beat of hip hop, electro and dance.

At the end of the 55-minute class, there is a warm-down of stretching, leveraging the angles of the bike in order to stretch your calves and open your hips, as well as a one-minute meditation to clear your mind.

Top 7 Tips for first-timers at RIDE Cycle Club

  • Bring Water - Like any workout, bring a bottle of water with you.  There is a bottle holder on the stationary bike, so you can keep it with you while you RIDE.
  • Wear Fitted Clothing – You don’t want to have loose fabric that could get in the way of the pedals as you bike.
  • Come with a Love for Music – Each session of RIDE has a different playlist, we went through pop, hiphop and electro during our 55 minute workout.
  • Bring a Friend – I came with three of my girlfriends to my first class at RIDE, and I loved being able to look over at them and see if they were huffing and puffing as badly as I was. (They were!)
  • Remember It’s Not a Race - As you are peddling on stationary bikes, this is literally not a race.  The only person you are challenging is yourself, and it’s completely up to you on how hard you want to RIDE.
  • Come to at least 3 classes – According to Ashley, “the first time will kick your butt both mentally and physically as you are figuring out the workout, beat and rhythm, but by the second or third class you really get the full feeling of what to expect, and then you can make a decision on whether it is a fit for you”.
  • Have Fun – This is always such a cheesy tip, but at our RIDE session, the bikers around us were pumping their fists in the air, and swaying back and forth to the beat.  Granted, they were mainly instructors-in-training (with the matching enthusiasm), but we we found that it was easier to let loose when the other people around you are doing the same.

Go into any Target store and walk down the air freshener aisle, and you will notice a few things: opaque bottles, flowery pastel colors, goofy scent names… But then, all of a sudden you spot them: five vibrant and exciting clear plastic bottles with funky looped tops. This is exactly what Method was after: a complete disruption of the air care market—something that makes consumers stop in their tracks. And rattles the competition. A Better Way to Spray: Method Disrupts Air Care Industry in sponsor main home furnishings Category I wanted to learn more about why this new product was so unique (from its contents to mechanism down to its creative packaging) so I talked with Josh Handy, Method’s VP of Product Experience. Josh first began working with Method in 2001, while heading up product design at Karim Rashid’s atelier in New York. He then moved on to found the industrial design studio at Method. This isn’t the first time Method has been in the air care category. Back in 2008, they had a product called an air enhancer, in aluminum aerosol can that worked very well and was sustainably made, but didn’t resonate with consumers. They didn’t really know how to use it, and it didn’t look like a Method product. So Method ended up phasing it out. A few years later, Josh was working on the development of a laundry product. He explains, “we do studies where we spend time in people’s homes to see how they use products. We were in Sacramento in a lady’s house who used our green laundry product, and while we were there, I asked her if I could take a peek at some of her other cleaning products. When I opened a cabinet, I began stacking all the products up on the counter and I counted 29 spray cans. Here was a consumer who was supposed to be green and she had all these products, so I asked her about it, and she explained that she simply loved spraying things. So I took a picture and thought a bit about it afterward.” “It occurred to me: ‘I like spraying stuff, too!’ It made sense to me that this is a preferred and pleasurable way to dispense products, but when you’re doing a large area, people especially want to spray stuff. And there wasn’t really a good way to do it.” A Better Way to Spray: Method Disrupts Air Care Industry in sponsor main home furnishings Category But if Method was to do this (again), how could it be done—and better? Josh began to ask around to see whether anyone had done an aerosol in a plastic container, but he couldn’t seem to find any. People saw Method as transparent and clear and colorful… not an aluminum can, so if he could make it happen, it might just be the ticket. “I talked to a lot of people in the industry and they all told me it was practically impossible. And I thought ‘Well, it is impossible, or is it just hard?’ I figured out it’s just hard. Can we knock down these obstacles, could we develop a plastic aerosol? We wanted to deliver something recyclable with Method attributes and experience… turns out it was really hard!” Josh said. He explored the idea for another 1.5 years, bringing in technical resources and such yet still ran into roadblocks such as price and performance. Around 2011, the product was put on hold. Then, one of their researchers was on a trip and stumbled across a shaving gel package with technology they hadn’t seen before. It was a plastic tube that was pressurized in a new way, which Method decided to use as a springboard for their design. “We realized that with easy modifications, you could spray an aerosol out of it,” Josh explained. The primary challenge with the design was: how do you create a plastic container that’s strong enough to withstand the pressures involved in aerosol dispensing? The problem with plastic, although it feels solid, is that it is actually very porous, Josh told me. Method uses PET plastic, similar to what’s used for soda and water bottles, which can be pressurized with the gases used in aerosol containers, but over time they seep out through the plastic and the pressure inside the plastic container dissipates. Therefore, this has been the big stumbling block in the industry. Josh said that it had to pass the test of having a product on shelves or in someone’s homes for a year and a half without losing the pressure. Most of the pressure experts work for soda brands and are used to talking about diffusion of carbon dioxide. Josh explained that one of the epiphany moments was when they looked at the pressurized charts and thought, “what if we pressurized it with air or nitrogen?” And that shifted the game, solving all of the shelf life issues. “So it went from ‘impossible’ to ‘maybe!’” A Better Way to Spray: Method Disrupts Air Care Industry in sponsor main home furnishings Category The Method Air Refresher bottle is divided into two sections—top and bottom—the “juice” (as Josh calls it) is at the top, and underneath is a cylinder that gets pushed up to dispense it. This is a very divergent way of delivering the spray. Typically, a propellant is added to the liquid you want to dispense, which is what pushes it out. “So when you get a can of spray, when you’re spraying it, it’s kind of a like a 60/40 mix of stuff you actually want and propellant. And although these propellants have gotten better in recent years, they’re still probably not things you want to be spraying around all the time. Also, when you’re paying for 10 ounces of something, you’re not actually getting 10 ounces of it, you’re getting maybe 6 oz or so, so not the best deal for the consumer,” Josh explained. Method’s air refresher doesn’t use a propellant, just compressed air, so you’re only dispensing the product itself, therefore you’re getting a much better, more effective, more efficient utilization. “It’s a much better way to spray.”

Once the mechanism was sorted out, they moved on to the packaging. Some of the earlier concepts looked much different than an aerosol, so different that some of the consumers had no idea what it was or how they worked. Another important issue for Method was keeping down the amount of material used in the design, so some early concepts were eliminated based on the quantity of plastic required. Not only is this a design and cost issue, but it’s also an environmental one. Josh’s design philosophy is one we can relate to:

I don’t really believe in adorning products with lots of little unnecessary details. If you can strip products down to their essence, you get a much purer product experience.

In the past, Method has used a cap on their cans, as do many other air freshener brands. They noticed that people would take off the caps at the store, and store managers would get frustrated because the caps would end up all over the floor at the end of the day. Therefore, Method decided to try and create an alternative to a cap, because aerosols really don’t need caps. The loop on the Method bottle acts like a cap, protecting the spray nozzle during shipping, but uses less material. And, you’ll never lose it! Plus, Josh says, “people love putting their fingers through it and swinging it around. It’s fun to use, but serves a purpose. It does it in an elegant way.” A Better Way to Spray: Method Disrupts Air Care Industry in sponsor main home furnishings Category The scents are a totally different story. I asked Method if they have someone who is in charge of scents, and they actually do! Suzanne McCormick is their Director of Fragrance, and I envy her job. Not only does she spend a lot of time smelling stuff (hopefully mostly good stuff), she also spends a lot of time reading up on the science of smell. She told me that sometimes they spray a fragrance and a group of Method employees come into the room and all walk around and sniff the air. I love this! I’m really fascinated by this entire process, and hopefully I will be able to get up to the Method HQ one day to experience it myself. Suzanne and the Method team cooked up five scents in the introductory collection of Method’s Air Refreshers collection: Beach Sage, Wild Poppy, French Lavender, Fresh Clover, and Sweet Tangerine. The goal was to get these scents as close to nature as possible, and I think they nailed it. I can’t pick a favorite.

I’ve been a long-time Method fan, so seeing them come out with a product that makes sense functionally, and does it while looking good, while also solving problems and being planet-friendly… you can’t ask anything else from a brand. Call me a fangirl, but I’m going spray cray cray. ‘Hot desking’ trend grows: No offices or assigned seating at new Deloitte headquarters

It’s the office building without any offices. When professional services firm Deloitte unveils its new massive Toronto headquarters in late 2015, not only will it have no offices, there will not be any permanently assigned desks.

Even the top dog, the managing general partner in Toronto, has to forgo his customary corner suite. Like everybody else, Mark Whitmore will get a locker to stow his personal stuff in the firm’s new complex at Brookfield’s Bay Adelaide Centre East.

He and Deloitte’s 3,500 other Toronto employees, spread out across 19 floors, will make way for the latest office concept: more meeting rooms and collaborative space and less personal room.

“This is a chance for us to do something pretty dramatic and change the way or structure of how we work,” says Mr. Whitmore.

It’s also an opportunity to take advantage of the fact that a large percentage of any firm’s workforce is not in the office on a given day. A 2013 study from real estate firm CBRE found 30% of U.S. offices are vacant on average.

The cost of moving into fancy new digs is being offset by savings from better space utilization, packing employees in tighter than ever before.

Whether the latest trend, called “hot desking,” is here to stay is unclear but landlords are feeling the demand and most of the new buildings in the country are being constructed with less offices and more collaborative space.

Mr. Whitmore likens the new experience of working at his firm to your high school years — the days when you would show up at school, put your stuff in a locker and then figure out what you had to do the rest of the day.

“You had gym, you grabbed your gym stuff. You’re going to the library, you’d grab your books. Science project, grab that stuff,” said Mr. Whitmore. “We are asking people to be agile, as opposed to 20 years ago, when you would have gone to the office and had your space, your cubicle.”

By getting rid of offices, Deloitte has been able to create more space for meeting rooms and other collaborative efforts. There will be an online system set up so people can sign up for a desk when they’re in the office and need one or a meeting room for dealing with a client.

The concept is being taken across the country and Deloitte has already unveiled this type of space in Langley, B.C., and Ottawa as well as three or four other centres slated for change with Montreal getting new space next year too.

Not everybody has been thrilled with the idea, concedes Mr. Whitmore. “There are pockets of people that have expressed concern about it. We are a large firm, so not everybody is going to love it. People are excited about it, particularly younger people.”

Instead of your spouse’s picture on your desk, get ready to have it be the screensaver on your computer.

Adam Wasilewski, head of design at Icon Legacy, says the fact that humans are by nature territorial might come into conflict with the idea of not having anything permanent at a desk.

“It’s unclear how people will react to these docking stations, usually they are for people who are mostly on the road,” said Mr. Wasilewski.

“People are used to having a desk. This a huge change to office culture and when you get to the core of it, it really depends on what type of office culture you have.”

Ross Moore, head of research for CBRE in Canada, says the real estate company’s global office in Los Angeles operates the same way. “You grab your phone and plug in where you want,” he says.

He notes all off these open-concept offices have one thing in common — tons of private meeting rooms. There are still many conversations — from human resources to finance — that have to take place behind close doors.

Hidden from the discussion is how much companies actually save by squeezing more people together. He estimates lease rates on these new builds are 15%-20% more but companies are putting 10%-15% more people in the space. “It’s almost a wash,” said Mr. Moore.

Space per worker has been shrinking dramatically over the past 50 years. In 1970, the amount of space per employee was 500-750 square feet, according to Cresa Partners, a firm that represents tenants. By 2017, it is expected to be down to about 150 square feet.

Put another way. In 2000, you had four workers per 1,000 square feet. By 2020, Cresa projects that to swell to seven.

“The question is, if you’re not in your office all day long, do you need that desk all day long,” says Dean Newman, the broker of record for Cresa Toronto. “We don’t just do one type of task in a day. We may be focusing, we may be collaborating or we may be socializing or may be doing teamwork,” says Mr. Newman. “That open area is no good if you have to do heads-down work.”

This glittering US$2.4B Atlantic City casino is closing its doors in September just two years after it was built

ATLANTIC CITY, N.J. — When it opened just over two years ago, many people hoped Revel would save Atlantic City’s struggling casino industry, which has been bleeding money and jobs for years.

But now the US$2.4 billion resort that was widely seen as the last, best chance for Atlantic City’s gambling market is shutting down, unable to find a buyer for even pennies on the dollar.

In addition to putting 3,100 people out of jobs and hurting state and local budgets, Revel’s demise shows just how cutthroat the East Coast casino market has become, and how difficult it is for even the newest and nicest gambling halls to survive in an oversaturated market.

Revel Entertainment said the casino and its 1,399 hotel rooms will close on Sept. 10, never having turned a profit.

Despite the effort to improve the financial performance of Revel, it has not proven to be enough

“We regret the impact this decision has on our Revel employees who have worked so hard to maximize the potential of the property,” Revel said in a statement Tuesday. “We thank them for their professionalism and dedication; however we are faced with several unavoidable circumstances.

“Despite the effort to improve the financial performance of Revel, it has not proven to be enough to put the property on a stable financial footing,” the company wrote.

Revel’s most recent Chapter 11 filing listed assets of US$486.9 million and liabilities of US$476.1 million.

The company said its situation was compounded by a “considerable non-controllable expense structure” that financially burdened the property. It said it had no choice but “an orderly wind-down of the business at this time.”

Revel said it still hopes to find a buyer through the bankruptcy process. But it acknowledged that if that happened, it would be after the facility had already shut down.

Matthew Levinson, chairman of the New Jersey Casino Control Commission, called the closing “enormously disappointing,” but held out hope for a future sale.

“I sincerely hope that possibility materializes, especially for the employees who face the loss of their jobs,” he said.

Israel Posner, who runs a tourism and gambling study institute at Richard Stockton College, said he expects Revel to sell as a non-casino building.

“I still believe Revel will sell, for pennies on the dollar, to someone who will figure out that it is the most modern, beautiful structure that’s going to be built for generations to come,” he said.

The casino was due to be sold at a bankruptcy court auction last week, but that was postponed to allow casino officials to study bids that were received. After Revel’s board met on Monday, the decision was made to shutter the glittering glass-covered casino at the north end of the Boardwalk.

Revel opened in April 2012 as the first new casino in Atlantic City since the Borgata opened nine years earlier, and carried great hopes for many that it would be the catalyst to jolt what had been the nation’s second-largest gambling market back to life. Atlantic City has since slipped to third place behind Nevada and Pennsylvania, whose casinos touched off the New Jersey resort town’s revenue and employment plunge in 2007.

Since 2006, when the first Pennsylvania casino opened, Atlantic City’s casino revenue has fallen from US$5.2 billion to US$2.86 billion last year.

So far this year, the Atlantic Club closed in January, bought at a bankruptcy auction by the parent companies of Tropicana and Caesars and shuttered in the name of reducing competition. Caesars Entertainment will close the Showboat on Aug. 31, also to reduce the competition in Atlantic City, where it currently owns 4 of the 11 casinos. And Trump Plaza is due to close Sept. 16.

Revel has ranked near the bottom of Atlantic City’s casinos in terms of the amount of money won from gamblers since the day it opened.

Its original owners envisioned it as a luxury resort that just happened to have a casino, and eschewed many staples of casino culture, including a buffet and bus trips for day-trippers. But that strategy — as well as the only overall smoking ban in Atlantic City — turned off customers, and Revel filed for bankruptcy in 2013, a little over a year after opening.

That led to new ownership and a “Gamblers Wanted” promotional campaign to emphasize the company’s new emphasis on its casino.

But despite some improvement, Revel’s finances never recovered enough, and it filed for bankruptcy a second time in June.

Eat It: Steak Frites | Béarnaise Flan

According to Chef Bob, there is no better sauce than béarnaise, period. It is the savory version of ice cream—an eggy mixture that coats your taste buds in luxurious richness. Paired with frites and steak? C’mon, how good is that?

YIELD: 12 servings
SPECIAL EQUIPMENT: mandoline or Japanese slicer, takeout chopsticks (or food tweezers), oil thermometer, fine-mesh strainer, blender

Frites
1 Russet potato, about 1 pound in weight and roughly 2 inches in diameter, peeled
2 cups vegetable oil

Line a baking sheet with paper towels.

Slice the potato wafer-thin, no more than 1/16-inch thick, with a mandoline or Japanese slicer. Cut 2 parallel 1/2-inch slits into each slice, about 3/4 inch apart from each other. “Thread” the potato onto the end of a chopstick by gently poking the pointed end of the stick through each cut to hold it open.

Heat the oil in a heavy-bottomed 2-quart sauté pan until an oil thermometer registers 350˚F. Shallow-fry the potato on both sides until golden and crispy, then transfer to the prepared baking sheet. Gently pull out the chopsticks and repeat.

Béarnaise
1/4 cup tarragon vinegar
3 tablespoons white wine
4 tarragon sprigs
1 teaspoon cracked black pepper
2 tablespoons roughly chopped shallots
2 large egg yolks
5 tablespoons (2 1/2 oz.) unsalted butter
kosher salt to taste
freshly ground black pepper

Add the tarragon vinegar, wine, tarragon sprigs, pepper, and shallots to a small saucepan and bring to a simmer over medium-low heat. Cook until the liquid is reduced by a third.

Strain the liquid into a blender. Discard the tarragon sprigs, pepper, and shallots.

While the liquid is hot, add the egg yolks, then whole tablespoons of butter one at a time while blending until incorporated. By adding the eggs and butter slowly, the reduction and the friction from the machine will cook the eggs. Season with salt and pepper to taste.

ASSEMBLE AND SERVE

Additional Ingredients
6 oz. hanger steak
1 teaspoon Maldon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon chopped fresh tarragon

Slice the steak into 1 1/2-inch rectangles. Season each piece with salt and pepper.

Heat a heavy-bottomed stainless steel or cast iron skillet over high heat. Add the steak and cook until medium rare, about 3 minutes total.

Slice the steak into small pieces the same diameter as the chopsticks.

Agent: “Ah, yes. I see a bag here the housekeepers dropped off. You will need to contact a next day mail service, have them send us a pre-paid shipping box, and we will have them sent to you.”

Guest: “WHAT!? I HAVE TO PAY FOR THAT!? You should just sent them to me! Everywhere I’ve ever stayed at before sent things to me I that left behind! This is outrageous!”

Agent: “I’m sorry, ma’am. This is our hotel’s policy.”

(The guest slams down phone, but calls back five minutes later.)

Guest: “I’m sorry I got so upset. You see, I am a Christian missionary on a charity mission and I have very little disposable funds. Please call your boss and kindly ask him to pay for the shipping and tell him to consider it an act of charity. Thankyougodblessyoujesuspleaseplease.”

(I call the hotel owner, the most frugal man I have ever met and a devout Hindu.)

Owner: “Call her back tell her we will be very happy to drop her son’s clothes off at a nearby homeless shelter and she and Jesus can feel very good about the clothes being given to people more needy than herself. A wonderful act of charity on her part.”

A Russian Foton-M4 research satellite, which launched last Saturday, held a precious payload of five geckos as well as some plants and a few insects. The original mission was to observe these creatures doing it to better understand mating in zero-gravity. Then after a few orbits, the satellite stopped responding. Al Jazeera America reports a glitch in the satellite's engine is the problem. The Russian gecko sex satellite has gone rogue.
