Sculptures Made from Repurposed PET Plastic Bottles

Sculptures Made from Repurposed PET Plastic Bottles

Most of us just toss our old plastic bottles (hopefully into the recycling) and probably don’t think about them again. Czech artist Veronika Richterová decided to do something with them and now creates sculptures from the repurposed PET plastic bottles. Since 2004, she’s devoted herself to creating with the malleable PET bottles into what she calls PET-ART. Take a small look at what she can do… from plants and cacti to jellyfish and beyond.

Chipotle Black Bean Tortilla Soup

by Dana Shultz

EASY Chipotle Black Bean Tortilla Soup! So simple, hearty and delicious! #vegan #glutenfree #recipe #easy #healthy #mexican

I know it’s getting warmer outside and you likely aren’t craving soup as often. But I love soup year-round, so can we just pretend it’s a little rainy outside and we’re cuddling up on the couch with this bowl of goodness watching Netflix?

Ok, I thought you’d be on board.

Blended Chipotle Red Salsa! #recipe #salsa #healthy

This recipe was inspired by this 30 minute Blended Chipotle Red Salsa!

This stuff was too good just to be eaten with chips. I mean, there would be absolutely no shame in that, but I had bigger hopes and dreams for this jar.

1 Pot Chipotle Black Bean Tortilla Soup! Easy, healthy and so satisfying #vegan #glutenfree #recipe #soup

This soup is simple – just 1 pot required – and is very hands off.

Simply sauté vegetables then add your spices, salsa, stock and beans and let it simmer away! And 30 minutes later you have restaurant-worthy tortilla soup on your hands. Huzzah!

EASY Chipotle Black Bean Tortilla Soup! So simple, hearty and delicious! #vegan #glutenfree #recipe #easy #healthy

This soup may be easy but it’s big on flavor. It’s

Hearty
Savory
Quick
Subtly chipotle-spiced
Super flavorful
Packed with fiber + protein
& simple!

I love making this kind of meal when you need to entertain but don’t want to spend a lot of time and money on the meal. It’s also a great soup to make ahead for lunches and easy weeknight dinners throughout the week. And at nearly 11 grams fiber and 12 grams protein per 1 cup, you can’t go wrong! Add a little avocado on top for some healthy fats and you’re all set.

If you give this recipe a try, let us know! Leave a comment below and rate it! And while you’re at it, take a picture and tag it #minimalistbaker on Instagram or send us a snap on Snapchat (find us at @minimalistbaker and @jshltz). We LOVE seeing what you come up with. Cheers, friends!

1 Pot Chipotle Black Bean Tortilla Soup! Hearty, simple and so satisfying. The perfect make-ahead meal for easy lunches and dinners!
Author: Minimalist Baker
Recipe type: Entree, Soup
Cuisine: Vegan, Gluten Free, Mexican
Serves: 6
Ingredients
SOUP
  • 2 Tbsp (30 ml) avocado, grape seed or coconut oil
  • 1/2 white or yellow onion, diced
  • 3 cloves garlic, minced
  • 1/2 red or orange pepper, diced
  • 1 1/2 tsp cumin
  • 1 tsp chili powder
  • 1 1/2 cups (~360 g) Red Chipotle Salsa (or any blended or chunky spicy salsa)
  • 4 cups (960 ml) vegetable stock
  • 2 Tbsp (24 g) coconut sugar or maple syrup (optional | to taste)
  • 2 15-ounce (425 g) black beans cooked in salt, slightly drained
  • 1 15.25-ounce (432 g) whole kernel corn, drained
FOR SERVING optional
  • Lime juice
  • Fresh cilantro, chopped
  • Red onion, diced
  • Tortilla chips
  • Ripe avocado, cubed
  • Hot sauce
Instructions
  1. Heat a large pot over medium heat. Once hot, add oil, garlic, onion, pepper, a pinch each salt and pepper and stir. Cook for 4-5 minutes, stirring frequently, until onions are translucent and the peppers have a bit of color.
  2. Add cumin and chili powder and stir to coat. Then add salsa, vegetable stock and coconut sugar. Stir to combine, then increase heat to medium heat and bring to a low boil.
  3. Once it’s boiling, add black beans and corn and stir. Reduce heat to low and simmer, covered for 30 minutes or more, stirring occasionally. The longer it simmers, the more the flavor will develop. It’s even better the next day.
  4. Serve as is or with recommended serving options above.
  5. Leftovers will keep covered in the refrigerator for 5-6 days, or in the freezer for 1 month.

dream house: the artwork.

when i finally move into my dream house (is it soon? please tell me it’s soon!), i’m probably going to be a bit more ‘adult’ about my artwork. and by that i mean i’d like to be more selective, a bit more thoughtful about what goes up on my walls, and probably a whole lot more minimal. but it’s hard for me to simply discard or give away art, so what i thought i’d do is select one nook in my future dream house and create a little gallery. that’s where most of my treasured photographs, sketches and paintings will live — in a small gallery of their very own. i’d like it to look something like these gallery walls here – well-intentioned, but not pretentious. just a simple collection of the artwork i love and can’t leave behind.

Cold Bruer Coffee Brewer

by Katie

If you thought cold coffee was for snobs or sugar junkies, think again. Cold brew coffee is often less acidic and less bitter than hot brewed coffee, and more palatable with milk. Using a slow-drip process with an adjustable valve, the Cold Bruer Coffee Brewer lets you play around with brew time to get your ideal cup. However, don’t think you’ll pull this sort of cold brewing off in a quick minute; the recommended brew time is a 6-hour span, at a drip per second.

Designers: Gabe Herz and Andy Clark

Material: Borosilicate glass, food-grade silicone, stainless steel
Size: 10″ h x 5″ w (25.4×12.7cm)

Details: Makes up to 4 cups

Homeless man's A/B test of generosity based on faith

by Cory Doctorow

Redditor Ventachinkway caught a photo of a homeless man conducting a clever exercise in behavioral economics disguised as an inquiry into the levels of spontaneous generosity as determined by religious creed or lack thereof.

When I passed him he proudly announced "The atheists are winning!" (i.imgur.com) (via Glinner)
