luxe butterscotch pudding

by deb

Happy Valentine’s Day! I thought we should make this for a date night in… erm, three weeks ago. It was on my editorial calendar and everything! (Okay I don’t have one, but it was definitely something I would have put on one.) The fact is, I’ve always been a slow cook but I’ve gotten so much worse in the last year or so, and I think I’m just getting fussier. I can’t sleep well until I know I am not making you use even one more bowl or egg yolk than the recipe requires and I wish I was joking because it sounds more quirky and charming that way.

Take this. For years, I’d be hearing about the wonder that is Butterscotch Budino from the pastry chef Dahlia Narvaez at Nancy Silverton’s Mozza, one of Los Angeles’s most famous desserts. Think of it like a classic, homey butterscotch pudding (kinda like this) made as luxe as possible with more butter, a deeper caramel, egg yolks, cream, salted caramel, whipped creme fraiche, yes, I too would be on a flight to Los Angeles right now after reading that if they weren’t all grounded.

A Multi-Faceted 16 Foot Golden Egg With a Beautiful Pine Sauna Interior That Sits in Kiruna, Sweden

by Lori Dorn

In Sweden’s northernmost city of Kiruna, sits a 16-foot multi-faceted brilliantly reflective golden egg that contains a pine surrounded working sauna that’s open to the residents. This shiny installation, known as the “Solar Egg“, was designed by the Stockholm creative team of Bigert and Bergström for the Riksbyggen housing cooperative. Due to vast amount amount of ore mining that had taken place over many decades, the supply was depleted, the mining company LKAB needed to access the ore under the town. Because the mine is a huge employer in Kiruna, entire city now has to move three kilometers to the east to accommodate. Great Big Story caught up with Mats Bigert and Lars Bergström, who spoke how they were inspired to give the residents a beautiful and comfortable space to talk about such a big change.

The thought of people having to move a whole town must be heart wrenching to the people there. The Solar Egg will then work as a golden think tank. …The ambition from the start was for the Solar Egg to become a place where the people of the city can come together and discuss the meaning of this move. …The egg, as a form, is a symbol of something born, and in a way new ideas and thoughts are also born.

The 10-Minute Cleaning Routine That'll Make Your Nights a Million Times More Enjoyable — 10-Minute Triumphs

by Ayn-Monique Klahre

I'm the type of person who can't go to bed with a dirty kitchen. I know that waking up to a mess starts my day off on the wrong foot, so until I get the kitchen in order I can't totally relax. It feels like there's something hanging over my head — a nagging feeling that makes watching Netflix or reading a book just a little less satisfying.

Of course, the kitchen, more than any other part of our house, is a total disaster by the end of the day. Dirty dishes, piles of mail and leftover art projects on the countertops, and general debris (shoes, backpacks, broken toys) seem to be everywhere! That's why I'm always shocked that, once I get started, the cleanup is so quick. No matter how messy the kitchen is, I can almost always get it cleaned up in 10 minutes.

Here's the 10-minute cleaning routine that'll make your nights a million times more enjoyable.

How To Get Scorch Marks Off the Outside of Your Dutch Oven — How To

by Ayn-Monique Klahre

The outside of our Dutch ovens can take a beating. That's where food goes when it bubbles over or splatters — and then it bakes on hard. And let's say you accidentally left your Le Creuset on the stove a little too long (who, you?) and now there are brown scorch marks on the bottom and/or side. Ugh, don't worry — you haven't ruined a $300 piece of cookware. You just need to be gentle (no steel wool!) and grab the baking soda. Here's how to clean the outside of your Dutch oven.

Netflix's Everything Sucks! Captures the 90s in All its Flannel, Alt Rock Glory

by Meryl Williams

Netflix recently capitalized on America's need for more 90s nostalgia in its new original series, Everything Sucks. Taking place in Boring, Oregon (a real-life place, near-ish Portland), the show centers around the teens attending Boring High, as well as the adults working there. It's a pretty accurate flashback in terms of soundtrack and setting, and especially wardrobe – so much flannel! Buckle up, it's 1996!

America Without Student Debt Would Create A Million Jobs

by Richard RJ Eskow
America Without Student Debt Would Create A Million Jobs

Picture the United States without student debt. It’s a country with a larger, more vibrant economy than the one we have today. It’s a country where more than a million people, including many people who never went to college, have jobs they would not otherwise have.

A new report from Bard College’s Levy Economics Institute concludes that this bold idea – canceling all outstanding student debt – would help the entire economy and create more than a million jobs.

To those who say we can’t afford to cancel this debt, the report poses a new and different question: Can we afford not to?

Cancel and Grow

Using widely-accepted economic tools, the report’s authors – Scott Fullwiler, Stephanie Kelton, Catherine Ruetschlin, and Marshall Steinbaum – canceling all student debt this country would create between 1.2 and 1.5 million new jobs. It would also increase the nation’s GDP by $86 billion to $108 billion per year over the next ten years.

It makes sense. More than 44 million Americans now owe nearly $1.5 trillion in student debt, and the numbers continue to grow. Individual students are graduating with levels of debt that were unknown (and are often unimaginable) to people of earlier generations. This indebtedness affects their friends, their families, their communities, and our nation.

quick, essential stovetop mac-and-cheese

by deb

A couple years ago, at my second home (the grocery store, alas, not, like, the shore) I was passing through the boxed macaroni and cheese section and realized my son, then five, had grown up so far without ever trying it. I realize some people pat themselves on the back about this, but I’m more skeptical about things. Realistically, by the time my kids grow up, I will have inundated them so with so many kale caesars, farro salads and wholesome slaws, sweet potatoes, and homemade from-scratch birthday cakes they’ll have no choice but to rebel with a steady diet of sugar cereals, frozen pocketed foods, and frosting from a can. Maybe leveling things up earlier on will help avoid this outcome? So I bought a box, made it for dinner that night (with the requisite steamed broccoli on the side, nobody ever tells you how much broccoli you’re going to steam when you become a parent) and oh, I’m sorry, were you waiting for me to call it terrible? A disappointment? A memory from childhood that did not hold up? It was anything but. I love orange cheese powder and I do not wish to keep it to myself any longer.

How To Clean and Disinfect a Dish Brush — Cleaning Lessons from Kitchn

by Jo First

There's an age-old argument about the best option for cleaning dishes: dish cloths, sponges, or dish brushes. My friend still defends her grandma's crocheted cloths — you know the ones I'm talking about? — but dish brushes, hands-down, are the most hygienic option. Unlike dish cloths (basically petri dishes for bacteria) or even sponges, which have pockets where bacteria can grow, the synthetic bristles of dish brushes shed moisture so they don't harbor bacteria or develop any offensive odors.

Plus, they're easy to clean — here's how.

A Brilliant Animation That Explains the Mythical Tale of Thor’s Journey to the Land of Giants

by Lori Dorn

In a fascinating Ted Ed lesson written by Nordic historian Scott Mellor and animated by Julie Herdichek Baltzer, narrator Addison Anderson tells the wonderful folktale of Thor, son of Odin, god of thunder, and protector of mankind and his fabled journey to the land of the giants. In the story, Thor and his companions, the trickster Loki and Thjalfi travel to a distant land and are subjected to a series of unwinnable tests by the king of the giants, yet these tests were not as they appeared.

…as the king escorted them out, he revealed that nothing in the castle had been what it seemed.
Loki lost the eating contest because his opponent Logi was wildfire itself, devouring everything in its path. Thjalfi couldn’t outrun Hugi because Hugi was the embodiment of thought, always faster than action. And even Thor couldn’t defeat Elli, or old age, which weakens everyone eventually. …Thor and his companions failed the challenges presented to them. But in trying to achieve the impossible, they’d pushed themselves harder than ever before and changed the world in ways no one had expected.

7 Things I Wish I’d Known Before Buying My Fixer-Upper

by Anne Momber

When my husband and I finally started looking for a home (after years of renting a barn loft that was short on insulation and long on character), our budget led us to two options: a newer home we would reluctantly call "nice," or an older home in need of some major updating but one that we could definitely see becoming ours. Despite the fact that everyone who saw option number two clearly had reservations about the work involved, it didn't take us long to start dreaming up all the changes we'd make, and how we would turn this fixer-upper into a dream home.

Wonderfully Modular, Interchangeable Cardboard Cat Dwellings Designed by Taiwanese Architects

by Lori Dorn

When one of their two beautiful cats, Chacha and Lilly had a bit of difficulty adjusting to her new home in Taipei, Taiwan, designerSzuti Tsai and her partner tried to find a way to make the cat comfortable in a manner that worked with their own aesthetic. After trying a number of different cardboard products, the pair gave up and instead employed their respective architectural backgrounds to create A Cat Thing, a collection of wonderfully interchangeable and connectable cardboard cat dwellings that encourage a cat’s curiosity with a sleek modular design.

Being architects, we decided to design ourselves a cat house that would become the first product coming out of A Cat Thing. Our cat house is modular, simple, pretty and safe. …There are four different modules: room, living room, balcony and ramp. Their modular nature makes them easy to assemble. You can create the most suitable structure according to your available space and your cat’s personality.

Lyin' Ryan Blames Social Security And Medicare For Deficit

by capper

Lyin' Paul Ryan went on Faux News' Sunday Morning Futures and proudly declared that, if he gets his way, the poor, the elderly and the disabled will have no future.

Somehow doing it with a straight face, Ryan stated that the only way - the ooooonnnnnnllllllyyyyy way! - to deal with the ballooning defecit is to attack the root cause - the Republican tax cut giveaways to the rich.

Not really.

He tried to blame the trillions of deficit that he and his fellow Republicans caused with their extremely lavish tax cut giveaways on "entitlements."

Yeah, right. The fact that the Kochs alone were going to get $1.5 billion from Ryan's giveaway had absolutely nothing to do with it.

And never mind that the military - already bigger than most other countries combined - is getting even more money.

No, the problem is grandma and grandpa, who put their money into Social Security and Medicaid so that they would have it in their golden years. Those parasites need to be cut off immediately!

Now, the cynical person might say that Ryan is simply trying to cash in on his last year as Speaker of the House, if not in Congress altogether (Go Randy IronStache Bryce!).

But Ryan said himself that cutting off grandma's income and health insurance is good for her and will set her free.

Free to die.
