Baking 101: Must We Sift This Flour?

Question: Do we really need to sift the flour?
Answer:  Nah… it’s cool, why bother?

 

We’re done here, right?  Almost…

You’ve seen the recipes… they read something like ‘sift together flour, baking soda and salt’, or they say something like ’3 cups sifted flour’.

If you’re anything like me, you read those recipes more like ‘take out that sifter that you sometimes use as a pasta strainer, dirty it up with flour, make more of a mess than you intended, and then keep baking.’  Not ideal.  I know.

Do we rreeeaalllyyy  have to sift the flour when baking?  No, and yes.

Sifting is meant to aerate flour before it is incorporated into a dough or batter.  

First things first:  be honest about your flour.  Is your flour sitting in the paper sack you bought it in?  Is it hiding in the back of your cupboard with a discarded bag of brown sugar sitting on top of it?

Just by virtue of being shipped from a place in a bag on a truck means that your flour has been packed and compressed within its confines.  It’s best to transfer flour to a large, airtight storage container when you get it home.  Transfer it to a big ol’ container and give it a big stir with a wooden spoon.  You just aerated the flour!  Boom.  That was easy.

Second things second:  now it’s time to make and bake!  Take the big ol’ flour container out of the cupboard and once again give it a stir with a wooden spoon.  That’s air in the flour.  Use a light hand when spooning flour into the measuring cup (we’ll talk about measuring vs weighing soon!) and swipe the flour with a knife to that the flour is flush with the measuring cup.  Place in a bowl.  Combine the flour with the other dry ingredients. Things like baking powder, baking soda, and salt will likely also go with the flour.

Next:  we ‘sift’… with a whisk!  Whisk together all of the dry ingredients.  Literally.  With a whisk.  Just get in there and go for it!  Whisking is just the aeration we need to create in our flour.  Using a whisk is like killing two birds with one stone.  The flour is aerated and the dry ingredients are combined. Whisking the flour also gives you a chance to really look at your flour, making sure it’s fluffy and debris-free.

But wait!  What if the recipe calls for 3 cups sifted flour?  Well…. plunge that whisk right down into your flour container (because you have a big one now), give it a good whisking and then measure accordingly.  I promise things will work out.

Hold up!  Should I sift powdered sugar?  Yes.  You should.  Powdered sugar is one ingredient that will meet your laziness with lumps.  Rude (the lumps not the laziness.)

What Does a Quadrillion Sour Patch Kids Look Like?

There are depressing moments. There are dark places.

And then there's being a 31-year-old man carefully stacking Sour Patch Kids on the kitchen counter in a silent apartment at 2:00am.

To understand how I ended up here, let's back up a couple hours to midnight, when I was staring at my computer at a half-completed post that I hated. 

The thing about bad Wait But Why posts is they don't like to reveal themselves right away—they like to disguise themselves as good posts until I work on them for a long time, and then they're suddenly like, "Oh btw I'm a very bad post." And I find myself sitting there in despair, realizing I need to scrap all the work and start something different. 

So that's what I did at midnight last night and decided instead to do a post I've been wanting to do for a long time—visually depicting massive numbers, to help get my (and your) head around words like "quadrillion." 

The obvious means to do this was to use cubes like those wooden cubic centimeter and cubic decimeter cubes that were in our 3rd grade classrooms, but it was late at night and in my mixture of despair and delirium, I ended up making a fairly inexplicable and weird decision to use Sour Patch Kids as my unit of measurement instead. I don't understand it any better than you do, but it turned into me heading to 7-Eleven at 1:00am to stare at this wall for like 70 seconds:



And somehow, there were no Sour Patch Kids.

I wandered around the store for awhile, and finally I came across this, which I looked at for a long time before determining it really wasn't what I wanted.


I moved on and headed to a nearby convenience store. They also had no normal Sour Patch Kids, just some irritating "eXtreme" version. I wasn't pleased, but it was late, I was aging, and they seemed close enough, so I bought ten bags.


I can't imagine what the cashier thought as I made this 1:30am purchase, other than "this guy is about to have one of the most depressing solo parties of all time."

I finally made it back home, broke open the bags, and started measuring.




3cm x 1cm x .5cm.

Next I lined up 10. Note the unappealing, radioactive colors Cadbury has chosen for its Sour Patch Kids eXtreme brand:


Next I laid 50 out:


And added another layer of 50 on top to make 100:


And in a night fraught with moments of self-loathing, carefully placing 50 eXtreme Sour Patch Kids on top of another 50 eXtreme Sour Patch Kids, alone at 2am, was the low point. Moving on—

Mercifully, I was able to copy and paste for all further building. The next step was to make a stack of ten of my 100-structure above to make 1,000:


That box is 10cm x 10cm x 15cm, so 1 million Sour Patch Kids is a 1m x 1m x 1.5m box:


1,000 of those boxes yields a 10m x 10m x 15m box that holds 1 billion Sour Patch Kids. Just a bit lower than the top of the Green Monster:


1,000 of those and we get to a trillion Sour Patch Kids, forming a 100m x 100m x 150m box that kills a bunch of squirrels in Central Park:


This helps illustrate just how huge a number a trillion is. A trillion is important because it's the largest number that comes up in day-to-day life. We come across a trillion mainly when it comes to the government and money, and it's such a large number, a stack of a trillion tightly-packed Sour Patch Kids would cover a football field and be as high as a 30-story building.

Now we enter the realm of numbers that are normally impossible to conceptualize. Luckily, we have my idiotic Sour Patch Kids method to help.

Taking 1,000 of the football stadium-size trillion box above and arranging them in a 10 x 10 x 10 box with dimensions 1km x 1km x 1.5km, we now have 1 quadrillion Sour Patch Kids, covering most of Downtown Manhattan. A quadrillion is a thousand trillion, or a million billion, and written out, it's 1,000,000,000,000,000. 

For reference, I put the Empire State Building and the world's tallest building, Dubai's Burj Khalifa, next to the box.


If you're wondering, experts say that there are somewhere between one and ten quadrillion ants on Earth.

The next step is a quintillion.  At their highest cruising altitude, commercial flights fly just above the top of this 10km x 10km x 15km box, which covers most of West LA:


Want to know how small an atom is? According to Physlink.com, there are 1.2 quintillion atoms in a grain of salt. So think about this massive airplane-height stack of tightly-packed Sour Patch Kids above. There are more than that many atoms in one grain of salt. Even more shocking is that NPR says that the number of grains of sand in the world is roughly 7.5 quintillion, only about seven times greater than the number of atoms number in a grain of salt.

Further, 1.7 quintillion represents the number of Sour Patch Kids you'd need to blanket the entire surface of the Earth with them. I depicted 1.7 quintillion below—so if you spread this box out into one layer, it would completely cover every inch of the planet:

1,000 quintillion boxes gets us to 1 sextillion, or a billion of those trillion boxes we saw sitting in Central Park above. 1 sextillion Sour Patch Kids makes a 100km x 100km x 150km stack that covers Switzerland. Note the airplane depicting the highest commercial airplane altitude:


1,000 sextillion makes 1 septillion, and a septillion Sour Patch Kids (1,000km x 1,000km x 1,500km) covers most of India and stretches deep into space, past the international space station:


Any recollection of Avogadro's Number from Chemistry class? It's the number of hydrogen molecules in a gram of hydrogen, and the number of atoms in a mole. The number is 6.022e23, or .6 septillion, which is 60% of the box above. Avogadro was not attractive.

1,000 septillion is 1 octillion, and at this point we move beyond all relevant reference. An octillion Sour Patch Kids is about as big as the Earth:


1,000 Earth-size octillion boxes equals one nonillion, or 1,000,000,000,000,000,000,000,000,000,000 Sour Patch Kids. It stretches about half the distance between the Earth and the moon (384,400 km), which are both drawn to scale:


I am quivering to keep going. I need to know how big the next one (decillion) looks in comparison to the sun and how big the one after that looks in relation to the whole solar system and how many more illions until we're bigger than the galaxy. But I'm gathering my strength and stopping. Because this is a post about big numbers, not about space and distances, and believe me, there will be a thorough post about space and distances some other time, since I've been seriously dating astronomy since I was three.

P.S. Sour Patch Kids are low quality. Nothing will expose something for being made in a factory in the cheapest possible way like opening ten packages of them and looking at a bunch of them for awhile. 

P.P.S. I ate no fewer than 30 throughout the night even though I was increasingly appalled by them as I made my 100 structure.

The Catholics of France

The French bourgeoisie is very Catholic. To what extent they are truly religious, I can’t say, but for example, most of the top private schools in Paris are Catholic, the upper class goes to church (or pretends it does) more than the other urban classes, and every family seems to be related to a priest (by the way, I am, too). France was long called “the eldest daughter of the Church.” It’s not really true any more, but deep down, most French people still feel strongly about the Church, one way or another.

For the past two years, the French Catholic church has busied itself with loud concern over gay marriage. There have been several huge marches sponsored by the “Manif’ pour tous” movement ["demonstration for everyone"]; the marchers say that they are not against gay people, just against gay marriage. Just yesterday in the Sunday magazine of the Figaro (the most conservative of the main daily newspapers), there was an insert asking people to sign up for the movement. Archbishops of the Church have been active in fighting gay marriage, which is now legal in France. Being anti-mariage gay has becomede rigueur, just as being anti-Halloween was a few years ago.

Cream of Calvados?

Although the Normandie region is just two to three hours from Paris, it’s hardly considered “local.” At least not by the proud Normans! I always get the urge to visit in the fall when the apples are in season to stock up on my favorite French liquor, Crème de Calvados. If you’ve never heard of it, imagine Bailey’s made with Calvados (the region’s famous apple brandy) instead of whiskey. It’s creamy, smooth, delicious, addictive. And it makes the perfect fall aperitif over ice or as a digestif in your coffee. But it’s not easy to find in Paris (Le Lafayette Gourmet sells the brand Dream for a hefty €35). You can visit the 19th-century distilleries of Calvados Boulard in Normandie and pick up a few bottles in person, or check out the website Made in Calvados, which has an excellent (and affordable) selection of the best products from the region, including 5 different brands of Crème de Calvados (Dream is sold for just €20). I haven’t yet found this in the US, so it makes a great gift for the holidays.

Everything White Bean Hummus.

I ignored *everything* bagels for a long time.

I mean, a really long time. I think it was the whole onion thing. I thought I didn’t really like onions back in the day but I think that was only because they are a vegetable and also because they were semi-offensive in raw form when I was a kid.

Then you learn that onions are like, the basis of all beautiful flavors and that you should get your act together.

Then you eat an everything bagel and think you’ve died. So good.

Speaking of bagels, I have a giant bone to pick with Dunkin Donuts. Do people – and by people, I mean the majority of the general population – not like their bagels toasted or something? Like really toasted? Because every time I get a bagel there, it’s barely warm with not a hint of golden toastiness. So for the last few years I’ve been asking for it toasted “well done” and ummm… it looks the same. I find myself screaming into the drive thru intercom (because god forbid I get off my lazy rear and actually WALK inside) PUHLEASE REALLY TOAST MY BAGEL. LIKE I WANT IT BROWN.

Ugh. I’m very passionate about this. Obviously.

It’s just that when I want something toasted, I want it toasted. We’ve already discussed this though so I won’t bore you again. I just don’t get it when people want something toasted and by toasted they mean slightly warm with no crunch.

Now that you think I’m a stark raving lunatic, I’m guessing you’ve maybe also figured out that this hummus is supposed to be like an everything bagel. That would be correct. Yay for smarts.

Here’s my stance on the everything seasoning: I think it’s best when it’s all meshed together and covering something. Does that make sense? That is why I didn’t stir it all into the dip. The hummus certainly has flavor: roasted garlic, toasted sesame oil, all that good stuff, and the seasoning will most likely get swirled throughout this silky beans when you’re dipping your favorite cracker inside, but I think it works best when just showered on top.

It’s prettier too. Pretty food = less calories. Just decided that right now.

Everything Hummus

Yield: serves 2-4 as a generous appetizer

Total Time: 15 minutes

Ingredients:

3 cups cooked cannellini/great northern beans (or 2 cans, drained and rinsed)
6 tablespoons olive oil + more for drizzling
2 tablespoons toasted sesame oil
1 whole head of roasted garlic
1/4 teaspoon salt

2 tablespoons dried minced onion
2 tablespoons toasted sesame seeds
1 tablespoon poppy seeds
1 tablespoon dried minced garlic
1 teaspoon flaked sea salt
1/4 teaspoon black pepper
crackers for serving

Directions:

In a small bowl, combine dried onion, sesame seeds, poppy seeds, garlic, sea salt and black pepper. Toss to mix.

Add beans and roasted garlic to a food processor and pulse and blend until combined the beans begin to puree, about 2-3 minutes. With the processor still going, stream in olive oil and sesame oil, blending continuously for a few minutes (and scraping down the sides if needed) until as smooth as desired. Add salt and taste, adding more if desired but remember - all of the seasoning will go on top.

Add hummus to a bowl and drizzle with extra olive oil. Pour everything seasoning overtop and serve immediately.

P.S. it is essential that you like the "everything" seasoning to enjoy this!

Pulau Ubin

@ASD stuff to do in singapore!

At the suggestion of one of Michael's co-workers, on Saturday we took a little day trip to a small island called Pulau Ubin. 

The small island lies northeast of the Singapore main island near Malaysia. It is described as one of the last original rural areas of Singapore and is inhabited by only a small handful of people - aka a legit jungle(!) Today, Pulau Ubin caters to nature lovers, outdoor enthusiasts, families and tourists looking for anything from a leisurely stroll to off-road biking. We fell somewhere in between :)       


The adventure started out with a 15-20min taxi ride from our apartment to the ferry terminal - easy peazy. From there we hopped on a 'bumboat' to ferry across to the island. The bumboat situation was very interesting. First off, it only cost S$2.50 (USD 2.00) each way. As a rule, I am a little suspect of anything that costs $2.00 nowadays - is that just me? Secondly, the boats only leave when full - 12 people - no set schedules whatsoever. Hmm... Luckily, we were the 11th and 12th people both on the way there and back so we did not have to wait at all. I also read that you can 'charter' a boat yourself for $30 if there are not enough other people. The bumboat chugged along with all its might and we made it across safely in about 10min (but you bes-believe I was mentally calculating if I could swim the distance the entire way there).  



Upon arrival there is a small dock and a main a drag of bike rentals, cold drinks and one or two places to eat. Mostly just bike rentals. 



We picked out a couple bikes and we were off! (next time we are totally getting a tandem bike. Michael said, only in a foreign country, where he doesn't know anyone, can we ever ride a tandem bike. that's love)

And a blue lagoon. 




After 3 hours of walking, biking and hiking, a cold drink and lunch was well earned.

see told you...that time of year again.

So today is October 1st, which means one of my favorite months is upon us. The month where Oreos get filled with orange cream instead of white, boots and scarves become everyday staples and the latest brigade of Halloween costumes hits the shelves. As has become tradition with this blog [Tangent: View prior years here here and here.] , I share with you the ones that baffle me the most- the "sexy costumes." In the past, I have always said these costumes that usually consist of some kind of thigh high, vag patch and bustier are the uncreative way out, but I think that is unfair. If anything the costume masterminds who come up with these costumes deserve at least a pat on the back for having the depravity ingenuity to make something as inoccuous as a scrabble board or a billiards table even a teench erotic. [Tangent: Anyone can decide to be a playboy bunny, a slutty nurse,  a slutty pirate or even a slutty sailor, but it takes a true forward thinker to think outside the box. Pun intended or unintended? You decide.]

Check In: Giraffe Manor

The very talented interior designer Grant Gibson knows a lot about creating a beautiful space, so when he shared pictures and stories of a recent stay at Giraffe Manor we just had to share here.

Giraffe Manor, located outside Nairobi, is a ten-room brick manor covered with thick ivy that will transport you to a lost epoch. The pristine grounds are speckled with a herd of Rothschild’s giraffes that call the manor home year-round. These beautiful creatures are part of an ongoing effort, started by conservationists Jock and Betty Leslie-Melville in the 1970s, to rear and preserve this subspecies of giraffes. These amazing animals charmingly played host at the manor.

Flat (Apartment) Hunting

As Michael is currently working and adjusting to life in Singapore and I am still in New York for a few more weeks, Michael has been tackling the apartment hunt on his own. I have absolute faith in him to find a great place for us to live - after all, he DID find on his own what is very likely the only apartment on Park Avenue with a beer pong table and charcoal grill.      

Michael has seen quite a few places and has sent me a bunch of pictures for my review. 

Some interesting characteristics to note: 

Kitchens-in-cages. Can't you just picture me cookin' up Sunday supper in my little cage. Not surprising, this is built to manage the strong odor of certain foods. It's actually very smart, but its relevance to us is TBD ;)





Bomb shelters. According to Michael... 'new buildings added them after 9/11, the door weights like 300 lbs and can withstand an attack. If the whole building fell down there would be this tall silo of bomb shelters and a helicopter would come pick you up.' Wait, what? I think he made that up and most everyone just uses it for storage. 




Washer and dryer outside - like literally outside. As to not heat up your place. Genius. Also, coming from NYC I would just like to pause and bask in the glory of actually having the option of w/d inside the apartment. I have arrived!  



Balcony's not built for taller people (i.e., 6'4 Americans). Michael is worried he is going to fall over on the edge from the 35th floor because, 'his center of gravity is too high.' 
I mean I guess he has a point...




Over all the places are amazing. Amenities for days. I can't wait to show you our new home once we find it!
