Fully Loaded Bacon Hash from Brooklyn Bacon Takedown
We’re thrilled to share with you the recipe for the winning recipe at the latest Brooklyn Bacon Takedown. Adrian Ashby won the Oct 2014 event with his “Fully Loaded Bacon Hash” recipe. The “Takedowns” are a food competition for home cooks where the winning dish is voted on by attendees. We asked Adrian about his love of bacon and how his winning dish came about.
Bacon Today: Tell us about your love for bacon. How did it start?
Adrian: “My love affair with bacon started with my grandma showing me how to cook it up in the old school cast iron skillet. Low and slow is the mantra she taught me back in the day about proper bacon cooking, I’ll never forget way back in either the 3rd or 4th grade her showing me the deal in the kitchen! Very few flips, 4 to 5 strips at a time, and strain that grease y’all!”
Bacon Today: How did you come up with your winning recipe?
Adrian: “I wanted to redeem myself from losing out on a chance to go back-to-back last year. I won in 2012 with a dessert, and I entered a dessert in 2013 forgetting that most entrants would follow suit. I wanted to use a favorite appetizer of mine in a dish. I toyed with the idea of using that favorite appetizer in a soup concept, but my lady and good friends advised it wouldn’t do it justice and it would be weird… So I went the casserole route.”
Bacon Today: What was it like to participate in the Brooklyn Bacon Takedown?
Adrian: “Participating in the Brooklyn Bacon Takedown is awesome! It’s a mad rush of people coming up to you looking to try your dish and you gotta be “on” from start to finish. If your energy is up, people will be excited to try yours, just toe the line and don’t come off as a creeper or shady salesperson (instant turnoff). Seeing the reaction is awesome when you KNOW you made something great, especially when folks come back for seconds and thirds.”
Bacon Today: Did you freak out when you found out you’d won?
Adrian: “It was an awesome feeling hearing my name called as the winner, but you can’t freak out. You gotta act like you been there before, high fives all around for every competitor and thank the people for paying good money and showing up and thanking Matt Timms for putting this thing together!”

FULLY LOADED BACON HASH!
1 bag thawed hash browns (shreds or squares)
1 pound bacon, cooked and crumbled
1 can of evaporate milk
1 cup of sour cream
¼ cup bacon grease
½ stick of butter melted
1 cup shredded cheese (Taco / Colby Jack / Cheddar)
1 tablespoon dried chives
1 packet onion soup mix
1 tablespoon black pepper or taste
1 container French fried onions, crumbled
– Preheat oven to 350. Grease a casserole dish and set aside.
– Mix the evaporated milk, sour cream and melted butter thoroughly.
– Add the chives, crumbled bacon and black pepper to mixture.
– Pour the mix over the hash browns and gently mix. Add cheese at each interval.
– Lay out the mix into the prepped casserole. Sprinkle French fried onions over mix
– Bake uncovered at 350 degrees for 40 minutes or until cooked through.
– Let stand for 5 – 10 minutes then serve!

For those that missed it, a few days ago Storage Wars had a segment with a whole bunch of pony, via a storage locker find and around $800 bucks worth of pony brushables within. The brony they bugged for appraisal, Johnnie JungleGuts, decided to chime in on his experience with the crew, and how exactly they reacted to the pony thing as a whole. It sounds like it was pretty much all positive!

Random Merch: Best Friend Pillows, Swirl Pop, Projection Pen, and More!
LrbeverI saw the swirl pops at Goodwill but I didn't pick it up because it was at Goodwill, I don't trust any snack that would be in that store... even with ponies on it, lol.
TASTE THE TWILIGHT they say. Swirl pops have appeared at a few 99 cent stores. This one in particular was sent in by 2spook. Good luck hunting them down if you want one!
