How and Why to Soak Your Nuts! ... {and How to Store Them, Too!}

Nuts are indispensable in the raw kitchen. Nutrition rich, they form the base of creamy nut milks, cheeses, pie crusts, pies, and more. But, some of them, if not soaked before use, can cause problems with digestion or taste bitter. Soaking will improve the digestibility, and the flavor, of any nut.

 It’s the nut’s enzyme inhibitors and tannins that cause a great deal of the problem. Enzymes are what power any biological process, including germination. Nuts contain enzyme inhibitors to prevent them from germinating until they’re in the right conditions. Water not only deactivates the enzyme inhibitors, it’s most important for a growing seed.


Also, you’ll notice the water from soaked nuts turns brown. This is the tannins which have been released into the water. It’s very acidic and shouldn’t be used in your recipes, but it’s excellent for watering plants.

Once soaked, or soaked and dried, nuts are much sweeter and will have a lighter, fresher taste and be easier to digest.

To soak, place the almonds in a container along with approximately twice the water that is needed to cover them completely. The nuts will soak up much of the water, so make sure you have enough. Soak for two to three hours at room temperature, or overnight in the refrigerator.

Pour off the soak water and rinse the almonds well. For milks and other recipes that will have added water, just set aside the wet nuts. They can be drained and placed in tubs and put in the refrigerator for up to three days or in the freezer until needed.


For recipes that require dry nuts, like pie crusts and truffles, spread the nuts on a lined sheet and dehydrate for several hours or overnight at about 118 degrees. They can also be dried in an oven set on a low temperature with the door left slightly ajar. These dried nuts can be stored in jars or other lidded containers at room temperature. For even more freshness and longer shelf time, they can be kept in the refrigerator or freezer and will keep this way for up to three months in the freezer.

Find and Replace Searches For, Replaces Text in Multiple Files at Once

Windows: Find and Replace searches multiple files on your system for a string of text and replaces it with whatever you choose. Think of it like the Find/Replace tool in your favorite text editor on steroids. The app is portable, supports regular expressions, case sensitive searching, and it's free.

If you're not interested in replacing text, you can just use "Find" to do a whole-system search for a string of text. For example, if you know you wrote a document about eucalyptus at some point but you have no idea where on your system it is or how deeply buried in the document your comments were, Find and Replace can find it—whether you're on your computer or a work machine where you may not be able to install something like a desktop search tool.

#749 The quiet satisfaction of settling the group bill after dinner

The root cause of the problemGut busting with chicken chow mein, nursing a fried rice hangover, your frenzied hour of pillaging the steam trays quickly dissolves into a table full of sticky-smeared plates, bloated bellies, and quiet groaning.

Folks, if you’re like me this scene is called The End of The Buffet, a dimly-lit freeze-frame featuring you and your friends lazily sliding in chairs with slack jaws and heavy eyelids.

And it gets worse, too.

The chipper waitress drops off the bill and everybody just eyes each other suspiciously. Who owes who money? Who ordered drinks and who didn’t? Is anyone riding a fat paycheck high and feeling generous? Since I am an extremely cheap person, I generally choose this exact moment to skedaddle to the bathroom in the hopes that everyone else will overpay and allow me to just drop a fiver on the stack before heading out.

Of course, it never works out that way.

You know what you need to do, Math GuyInstead, I return to an untouched bill and generally get pegged as Math Guy, also known as The Job Nobody Wants After Dinner. See, my friends start chatting about what movie to see and I’m suddenly stuck with my head down, brows furrowed, figuring out tips, collecting cash, and trying to follow the paper trails of who paid what.

If you’re hanging out with me and my friends then Math Guy is a doubly terrible job because we’re always forty bucks short. People shrug, eye contact is avoided, and there are some phantom wallet reaches, until we figure out that two people didn’t add tax and tip and one guy still needs to get cash from the bank machine.

Holla if you been there.

Math Guys and Math Girls of the world, we feel each other’s pain. It’s tough asking people to put more money in and sometimes we just reach into our own wallets to get the job done. Twenties are broken, coins are counted, and there is constant checking and rechecking that it all adds up right.

Yes, if you’re picking up what I’m putting down, then you know that moment of quiet satisfaction when you finally close that sticky, vinyl, duck-sauce smeared billfold over a stack of crumpled bills and sliding coins.

Because at that exact moment the shackles of Math Guy are finally busted.

And you’re free.

AWESOME!

REVIEW: Dunkin’ Donuts Glazed Donut Breakfast Sandwich

Dunkin' Donuts Glazed Donut Breakfast Sandwich

Throughout the course of human history, it becomes necessary, at certain times when the illusion of progress has been reached, to stretch culinary creativity even further.

Especially in fast food lest we become too far accustomed to dry hamburger patties on stale sesame seed buns or rubbery egg byproducts adorned with nothing more than cold, unmelted processed “cheese.”

In 2009, it was the Double Down. More recently, it was the fusing of chip and taco for Taco Bell’s Doritos Locos Tacos. Shocking, innovative, delicious, and perhaps even life threatening in copious amounts? No doubt. But completely freaking worth it.

But has such innovation been available before 10:30 AM?

No.

So with an eye towards pushing the envelope of acceptable gluttony at the breakfast table even beyond the realms of Fruity Pebbles consumed with half-and-half while sitting naked in front of reruns of Looney Tunes*, Dunkin’ Donuts has unveiled the Glazed Donut Breakfast Sandwich.

To be honest, I wasn’t surprised when I heard about it. Don’t get me wrong, I was excited to try the sandwich, but not in the OMG shock-and-awe kind of excitement that resonates in middle school text message conversations. Personally, I’ve been eating salty and meaty things on donuts for years.

What with the proximity of Burger King and Krispy Kreme in Salt Lake City Airport’s Terminal B, it was inevitable during my money-strapped and homesick college days that those two worlds would collide in a surprisingly tasty combination. And given the burgeoning popularity of any number of Luther Burger designs, I know I’m not the only one who has been waiting for the mainstream acceptance of using a donut as a bun.

Boasting a pepper-fried egg and cherrywood-smoked bacon, the sandwich comes out just like any of Dunkin’s other toasted sandwiches — an employee zaps the egg and bacon in a microwave/toaster oven/silver box I presume cooks (or at the very least warms) the food, and then the contents are assembled on the bread of choice. I didn’t ask if I could get the sandwich with another type of donut, but the Original Glazed is a no brainer.

However, Dunkin’s Glazed Donut has its flaws. Namely, it’s a bit on the petite side, and doesn’t have the kind of homemade rise that really, really good donuts have. But it’s still light and airy with that sweetly rich taste of fried dough that makes eating a donut much more pleasant than eating…Well, celery or some crap like that.

I especially liked how the flavors of the fried egg and bacon, oozing their own buttery and pork fat juices, respectively, seeped inside of the donut. It’s like someone decided to put sweet cream butter on a donut. Why has no one thought to do that before?

Anyways, the glaze, while slightly chipped in places and not boasting 100 percent topside coverage, had been warmed in the radiant heat of the wrapper, resurrecting it to a fresh baked, slightly gooey, and stick-to-your-fingers texture that will leave you licking your lips hours after finishing.

As for the pepper fried egg and cherrywood bacon, both were good, but not that good. The egg had a decent flavor with some saltiness and butteriness. It didn’t, however, have a crisp fried egg texture. And the only thing the black pepper specks added to the party was a hint of disjointedness with the donut’s sweetness.

The bacon was good, but limp. They were the standard fast food precooked strips that (ironically) many fast food restaurants are moving away from these days. Lacking crunch or a pronounced smoke flavor, I didn’t pick up on the cherrywood and missed what could have been a real textural contrast with the donut. Worse yet, I even managed to pick up a slightly burnt taste on the edges of one the stripes.

However, despite the bacon’s faults and it being cliché to say sandwiches scream for more bacon when all other attempts at improvement fail, this donut sandwich needs more damn bacon!

I also have to admit the sandwich is already a bit awkward to eat given its construction. Wrapped tightly in paper, the donut itself is compressed and somewhat steamed by the warm contents of the egg and bacon. That combination causes the donut’s underside to break down like a helpless burger bun battling against too much fat and moisture from a seeping patty.

Thusly, attempting to pick it up and eat it like an actual sandwich is a recipe for getting donut goo on yourself. I don’t mind so much because I think donut goo could make an attractive moisturizer or cologne.

Dunkin’ Donut’s new Glazed Donut Breakfast Sandwich is innovative, but messy. It’s good, but not great. It’s well thought out, but not executed well. In short, it’s not all that it could be, and not all that fast food junkies demand it should be. Still, for those spurred on by a bit of impulse and a hankering to try something new for their morning (or afternoon) routine, it’s an enjoyable bite of sweet and salty.

*Hypothetically speaking, of course.

Pros: Another affirmation of team sweet ‘n salty in the fast food world. Glazed donut gets resurrected in an gooey way. Egg patty has surprisingly good flavor. Tastes like a buttered glazed donut. Less calories than Dunkin’s “healthy” Turkey Sausage Sandwich.
Cons: Doesn’t go big or bold enough. Bacon lacks crunch or cherry smoke flavor. Pepper fried egg is not actually fried in butter, but instead infused with “Natural Sautéed Flavor.” Messy. Awkward to eat. Doesn’t feel quite worth its price tag.

Edward Snowden: NSA Whistleblower Revealed

Edward Snowden has been revealed as the whistleblower who provided The Guardian (UK) with information for its groundbreaking new report on the NSA.

The man who controversially outed the National Security Agency's surveillance practices to the newspaper unexpectedly outed himself on Sunday.

He's been working with the NSA for four years and copied the last set of documents he intended to leak three weeks ago at his Hawaii office.

Snowden, 29, is a Booz Allen Hamilton employee who requested a two-week leave of absence, told his girlfriend he had to leave and flew to Hong Kong.

Why there? "Because he believed that it was one of the few places in the world that both could and would resist the dictates of the US government."

Snowden, who previously worked at the CIA after being discharged from the U.S. Army, has now been holed up in a Hong Kong hotel for three weeks.

He's seemingly at peace with the consequences his actions could bring, although he is "intensely nervous" about being spied on, according to reports.

"I understand that I will be made to suffer for my actions," he tells the Guardian.

"I will be satisfied if the federation of secret law, unequal pardon and irresistible executive powers that rule the world that I love are revealed even for an instant."

"The only thing I fear is the harmful effects on my family, who I won't be able to help any more. That's what keeps me up at night," he added.

Snowden's motivation for leaking NSA documents and information are rooted in a desire to check what he considers government's abuses of power:

"The government has granted itself power it is not entitled to. There is no public oversight. The result is people like myself have the latitude to go further than they are allowed to."

Snowden will likely draw comparisons with that against Wikileaks source Bradley Manning, though Snowden, as a civilian, will not face a military tribunal.

Just the same, several lawmakers have already called for him to be prosecuted.

The Guardian also published a video interview with Snowden came as the paper was under increasing pressure this weekend to be more transparent.

After doubts were cast on its original reporting about the NSA's surveillance programs, Snowden's choice to reveal himself immediately turned heads.

More often than not, productivity apps are at least loosely based on a productivity method. The idea of getting excited about a productivity app might seem silly, but we've seen it time and time again. Years ago apps like AutoHotKey, Simplenote, or TextExpander completely changed the way we do things. Within the last year, apps like Clear and Mailbox answer the increasing desire to keep things simple and easy to use. Just yesterday, the notes management app Vesper garnered attention even though it's "yet another notes app" because it was built by an all-star team and manages to look fantastic while doing something several other apps already do.

The internet gets excited about this stuff because no matter what platform we're talking about, there's still room for improvement. Whether that's automating routine tasks, providing a more intuitive user interface, or simplifying things to the point that anyone can use them, we clearly desire productivity tools that work better than what we have. When something new comes along that fills that void, even if it's only a partial filling, it's easy to get excited.

Again, as was mentioned above, it's also about finding what works for you. Clear isn't great for people who need tons of options, but for a vast majority of users out there, an app that just displays a simple to-do list is really all they need. Mailbox isn't really useful for people who don't care about inbox zero, but if you do, it's an excellent tool for getting there. Each of these apps offers something to someone, and that alone is worth talking about.

From our point of view, if we can see a use for an app, or if it does something differently, it's worth mentioning. But that doesn't mean you have to go out and try every new thing that hits the digital shelves. For every app we do talk about, thousands exist that we don't ever mention.

We Still Suck At Being Productive on Smartphones

Why Are There So Many Productivity Apps and How Do I Pick One?

Despite the fact that many of us have been using smartphone apps for over five years, the actual experience of getting things done on a smartphone hasn't improved all that much. Heck, smartphones might actually hurt us more than help.

So, a lot of mobile apps out there are still trying to fix this problem. Email is still broken for a lot of people. It's hard to manage, it's impossible to keep up with, and it's a pain to use. For whatever reason, desktop mail clients have all but given up on fixing this issue while the mobile market has exploded with mail apps to the point where it feels like we're at a mobile email bubble. The same goes for everything else in the productivity suite. Calendars are trying to be smarter. Contact management apps want to integrate all parts of your life automatically. Notes apps are syncing across multiple services. They're all trying to make life simpler, and many of them succeed at this, but there's still a ton of room for improvement.

This isn't as much of a problem with desktop software. It's pretty rare that the internet gets excited about a desktop productivity app because for the most part they're all doing what we want them to. That's not to say it doesn't happen, every once in a while something comes along that blows us all away, but it seems more rare than mobile apps, at least for the time being. Mobile is new, it's shiny, and it's still broken. So when something comes along that might fix that it's hard to ignore.

How Do You Pick an App?

Here's the hard truth: an app alone isn't going to make you more productive. So, stop relying on the app. It's not about the app you use, it's how you use it. Find one that works and stick with it. These things are a dime a dozen, and I can almost guarantee you'll find something that works for you specifically.

If you need a good starting place, our own App Directory is a good place to begin the search for the perfect app. Once you find that app, stick with it. While it's a good idea to continue paying attention to new stuff to see if something fits your needs a little better, don't feel like you have to try every single app out there just because it's new. Some aren't going to work for you, and that's fine. Use what works for you, and get things done.

4-Year Old Shoots, Kills Father in Arizona

A fatal accident in Arizona on Friday resulted in the death of 35-year old Justin Stanfield Thomas.

At the hands of his four-year old son.

While details are still coming in, this much has been confirmed by the Prescott Valley Police Department:

Thomas and his young child were visiting a friend in Northern Arizona when the four-year old somehow came across a handgun in the living room.

He asked those around him what the item was... and then fired it at his dad. The bullet struck Thomas in the chest.

Justin was rushed to the hospital soon afterward and pronounced dead by doctors.

"This appears to be an accident. There was no conflict in the stories of those in the house," said police Sgt. Brandon Bonney. "The resident didn't know his former roommate was stopping by to visit."

No charges of any kind are expected to be filed, while the boy is currently at home with his mother.

Chalk another one up for Mila Kunis.

After Maxim's Hot 100 list surprisingly placed Miley Cyrus at #1, one Reddit user was beside himself, and thusly decided to take matters into his own hands.

Daxl70 urged the Celebs subreddit to vote on its favorite leading ladies, and came up with his own ranking system. In the end, Mila Kunis came out on top.

Mila Kunis: HOT!

Each participating user had to post his own list of hottest women, numbered 1-10. The order mattered, with greater weight assigned to higher-ranked stars.

After all the lists - which included 220 different women - were tabulated, Kunis won by a landslide, which isn't too surprising given her recent list of accolades.

After all, she was also named FHM's "Sexiest Woman in the World", Esquire's "Sexiest Woman Alive" and Details' "Most F--kable Celebrity" ... you get the idea.
