Coming Soon: All The Details on Dang Banh Mi, Opening This Summer

dangbanhmilogo0603142.jpgThere's a new banh mi shop coming to Austin from an unlikely team: the three founders of Pluckers Wing Bar. The restaurant, called Dang Banh Mi, will serve up banh mi, bun, and pho, all of which are based on research and recipes from Vietnam. Pluckers co-owner Dave Paul travels often in Vietnam, and the three saw the need for a restaurant serving what Paul calls in a press release, "authentic Vietnamese cuisine that is approachable and easily accessible."

Eater spoke with co-owners Dave Paul, Sean Greenberg and Mark Greenberg, who say the shop came out of their mutual love for banh mi, and it is not intended to expand Pluckers-style. The banh mi will be made using recipes from the Bánh Mì Phuong street stand in Hội An. Paul says the stand's owner agreed to share her 100-year-old recipes in part because "she loved the idea of people in America enjoying her food."

Paul and the brothers Greenberg hope these recipes and the restaurant's focus on scratch preparation appeals to "die hard banh mi fans." They also hope to draw in people who have never tried Vietnamese food before with a "well-designed" space. Check out the full opening release, which includes a menu, below.

DANG BANH MI DEBUTS THIS JULY IN AUSTIN, TEXAS

AUSTIN, TX (May 29, 2014) – Dang Bánh Mì is pleased to announce that it will open its doors this July. The north Austin restaurant will offer a variety of bánh mì sandwiches as well as with pho, bun noodle bowls, pork and shrimp spring rolls and som tam along with other Vietnamese dishes, beverages and snacks served in an approachable fast-casual setting.

Austinites Dave Paul, Sean Greenberg and Mark Greenberg – all bánh mì fanatics – were inspired to create Dang Bánh Mì after Dave, a frequent traveler to Southeast Asia, visited Vietnam with a mission to find the world's best bánh mì. Dave discovered the bánh mì that inspired the Dang Bánh Mì concept at the popular Bánh Mì Phuong street stand in Hội An. Thrilled to meet someone with a true passion for Vietnamese cuisine, street stand owner Phuong agreed to share her 100-year-old recipes with Dave. After countless long distance phone calls with Phuong and several follow-up trips to Hội An for hands-on training, Dave mastered the art of the bánh mì. And so, Dang was born.

"We are opening Dang Bánh Mì because we see a need for authentic Vietnamese cuisine that is approachable and easily accessible in Austin," says Dang Bánh Mì co-owner Dave Paul.

Dang Bánh Mì's menu features a variety of bánh mì sandwiches:

• The Dang original (Char Siu pork belly, steamed pork tenderloin, ground pork, homemade pate, mint, cilantro, green onion, cucumber, tomato, Char Siu sauce, Sate, Japanese mayo, pickled papaya & carrots, topped with a fried egg)
• Char Siu Chicken (chicken thighs, homemade pate, mint, cilantro, cucumber, white onion, kaffir lime, Char Siu sauce, Sate, Japanese mayo, pickled papaya & carrots, topped with a fried egg)
• Oxtail (10 hours braised oxtail from homemade pho stock, homemade pate, mint, cilantro, white onion, cucumber, tomato, Char Siu sauce, Sate, Japanese mayo, pickled papaya & carrots, topped with a fried egg)
• Lemongrass Beef (Lemongrass beef, homemade pate, mint, cilantro, white onion, cucumber, tomato, Char Siu sauce, Sate, Japanese mayo, pickled papaya & carrots, topped with a fried egg)
• Lemongrass Tofu (Lemongrass marinated tofu, mint, cilantro, white onion, cucumber, tomato, Char Siu sauce, Sate, Japanese mayo, pickled papaya & carrots, topped with a fried egg)
• Egg Mì (two fried eggs, green onion, white onion, cilantro, white onion, cucumber, tomato, Char Siu sauce, Sate, Japanese mayo, pickled papaya & carrots)

Dang Bánh Mì also serves traditional Vietnamese pho and bun noodle bowls, pork and shrimp spring rolls, and som tam. Asian snacks and fresh baked baguettes are available for purchase. Dang's beverage menu includes Vietnamese coffee (hot & cold), Vietnamese iced tea, fountain drinks, and import and domestic beers.

The menu focuses on quality ingredients, made in-house. The Dang Sauce (a housemade siracha), pâté and baguettes are just a few of the ingredients made fresh daily in the Dang Bánh Mì kitchen.

The design for the restaurant was inspired by the energy, colors and textures found in traditional Vietnamese street market culture. Designer Joel Mozersky of One.Eleven.Design. incorporated these elements with a sleek, modern design scheme to bring the space to life. Featuring reclaimed wood floors and unique street basket inspired lighting, the restaurant evokes a contemporary spin on Vietnamese culture. Local artisan, Michalovic Wood Art created a unique wall of art that epitomizes the juxtaposition of the food's warmth and comfort with the beauty and sophistication of its freshness and deep culinary flavors.

Plywood Update: Garbo's Lobster Restaurant Slated to Open Mid-June

Great news for North Austin and/or lobstah fans: Garbo's Lobster Truck's new restaurant in Wells Branch is getting close to opening. According to a Craigslist posting, Garbo's will open in mid-June, and they're currently hiring for all BOH positions.

The popular lobster roll truck announced their brick and mortar plans earlier this year. In addition to their rolls made with Maine lobster, the new restaurant will serve lots of other New England classics, like steamed and fried clams.

The folks at Nike football spared no expense in landing ALL of the biggest international soccer stars for their latest 4-minute commercial. You will be spotting the likes of Cristiano Ronaldo, Neymar Jr., Wayne Rooney, Zlatan Ibrahimović, Gerard Piqué, Gonzalo Higuaín, Mario Götze, Eden Hazard, Thiago Silva, Andrea Pirlo, David Luiz, Andrés Iniesta, Thibaut Courtois, and Tim Howard. Thoughts for Wednesday

Hopefully it's as good as the last Greenhouse.

Many days I wake up in the morning, or sometimes in the middle of the night, and ask myself why on earth I decided to open a brewery.  These moments of awake-ness are generally the result of the little creature in the back of my brain that continues to pester me about things that could potentially go wrong.  You all know that little creature, the one that brings doubt, anxiety, angst and sometimes down right pissed-off-edness.  Maybe it’s the multiple batches of beer that need to be brewed in order to meet our goals, maybe it’s managing staff, investor relations, payroll, bookkeeping, tax filing or dealing with state and federal regulators.  You know, the simple stuff in life that would keep anyone up at night.  Right?

The past few months my inbox has been flooded with requests for information on what I’ve learned since opening the brewery.  If you could do it all over again, what would you do?  What is the biggest mistake that you’ve made?  What is your advice for someone wanting to start a brewery?  Most, if not all of these emails have come from someone that is looking to start a brewery in our fair city.  And I’ll be honest, it’s an exciting time for beer in Austin.  And yes, I’m very excited at the prospect of more breweries opening in Austin that are making fantastic beer.  After all, there is always enough room for more fantastic beer.

But I must admit that I’m always hesitant to respond to these emails or even further, agree to meet with someone to discuss.  And it’s not because I feel like what we’ve learned since we opened is some kind of wonderful secret that we need to hold onto and not tell anyone.  After all, making beer is a fractional piece of what it actually takes to open, and maintain, a successful brewery.  And in no way am I trying to imply that we are a successful brewery.  We’ve successfully dodged quite a few bullets in our 2.5 years of business and that’s the success that I’m talking about.  The feeling of accomplishment that can only come from working through a serious problem and coming out on the other side victorious.  Worse for the wear and potentially beat up? Yes. Satisfied? No doubt about that.

So, it’s a battle for me as to whether or not providing all of these “lessons learned the hard way” is beneficial to anyone.  Some may argue yes but to me, that’s the joy in opening your own business.  Figuring out that you have no idea what you’re doing is one of the greatest thrills that life can throw at you.  You’ll never know how much fun opening and operating a brewery is until you’ve had plenty of those moments where you literally thought that everything was coming apart at the seams and you have no idea how to keep it together.  Those moments that involve shedding a few tears, screaming into the night air as loud as you can or throwing a pallet across the parking lot.  Ok, I’ve never thrown a pallet anywhere, but you get the point.

The pride that comes from overcoming obstacles that would keep the majority of people away from doing what we do is a beautiful thing.  Honestly, it’s one of the most fulfilling things that I’ve ever felt.  Is owning a brewery everything that I thought it would be? Not at all, it’s so much better because it’s so much different than I thought it would be.  Being mentally and physically tired at the end of the day is good for the soul as long as you can find peace with the exhaustion and understand that the bigger piece of what we are doing is to create a product and community that people can trust and enjoy then you will find happiness.  Transparency and collaboration are what make our industry so great.  Talking about the hurdles that you’ve overcome with someone that has gone through them as well is one of the many reasons that brewers are so drawn to each other.  But I don’t believe that telling someone else how to overcome those hurdles is really that enjoyable or, to be quite honest, very helpful to the receiver of this information.  Figuring life out is what makes life great.

Well, that and of course the facial hair.

A new restaurant serving "Texas-inspired American cuisine" and craft beer is slated to open near Cedar Park. Foxhole Culinary Tavern is opening in a space that once housed a Bennigan's according to eagle-eyed Chowhounders. On their website, Foxhole says:

Our goal is to create an inviting place to share great food and great moments with family and friends. Our wood-fired grill is an integral part of our Texas-inspired American cuisine, adding bold flavors to every dish. Foxhole believes in quality and community. Our seasonal menus are prepared largely with fresh farm to table products from local vendors.
No word on an opening date, but according to their Facebook page, they're looking to open "soon."

Dale Hansen of Dallas ABC affiliate WFAA—who won a Peabody Award for his reporting on the SMU football scandal—had an excellent response to the criticism of NFL prospect Michael Sam, who announced on Sunday that he was gay. In his "Dale Hansen Unplugged" segment, the sportscaster rejects all arguments that say Sam would make things "uncomfortable" in the NFL.

I Can't Stop Watching This Goal Celebration

This is the greatest celebration of a totally pedestrian goal you'll ever see. This guy, playing in an amateur game in Italy, is really fired up for his tap-in goal off a soft rebound. While it is a nothing goal, the celebration is so great that you will completely forget that he even scored by the time he's done. It may actually be the best celebration, period. Just watch; it's awesome.
