TIME FOR CHILI

In my fantasy recipe-writing league, I’d cover everything, a million questions you hadn’t even thought to ask yet. Every recipe would work on a stove, slowly braised in the oven, on a grill, in a slow-cooker, a pressure-cooker, on a train, in a car, or in a tree. You could make the vegetarian carnivorous, the carnivorous paleo, the gluten-full gluten-free, the sour cream could always be swapped yogurt which could always be swapped with buttermilk, or milk and lemon, or soy milk and vinegar. We’d find a way to put kale in everything. You could use flat-leaf parsley instead of cilantro (because cilantro is the devil’s herb, naturally) or none of the above, because green flecks = grounds for dinnertime dismissal. We’d make food that your picky spouse, your pasta-eating kid, and your pesky fad-dieting house guests would applaud at every meal, and all of those promises made by food writers greater than myself in tomes more epic than this blog of food bringing people together for the happiest part of everyone’s day would be made good on at last.

Of course, I’d also write about one recipe a year. Despite understanding this, sometimes I get carried away with The Dream of this kind of recipe-writing. I make Lasagna Bolognese with homemade noodles (but you can use store-bought), homemade bechamel (but you can use ricotta; just don’t tell me about it), and bolognese with milk, wine or both. We make Hot Fudge Sundae Cake for crazy people (everything, down to the cookie crumb filling, homemade) or for people with a life (everything, down to the cookie crumb filling, store-bought). We make Lazy Pizza Dough on three different schedules, whatever your orbit demands that week. And in this episode, I found as many ways as I could dream up to make a three-bean chili, so nobody would have an excuse not to make it.

Tiny Octopi Hatch at Mote Aquarium

Check out these tiny Ocotopus hatchlings at Mote Marine Laboratory & Aquarium in Florida!

Octopi reproduction is really quite interesting. Males have a specially adapted arm, called a hectocotylus, which they use to transfer sperm packets called spermatorphores into to a female's mantle cavity. Octopi lead short, solitary lives of one to two years; the pair do not remain together, and males die within a few months of mating.

A female can store the sperm in her mantle until she is ready to fertilize and lay her eggs. A female may lay hundreds of thousands of eggs, which she anchors to a hard surface in a protected den.

After eggs are laid, she devotes the rest of her life to caring for them. She will guard the eggs and keep water circulating around them so that the developing offspring receive enough oxygen. The mother stops eating after her eggs are laid, and she will die soon after they hatch. 

Newly-hatched octopi are called larvae, and will develop into hatchlings or fry. The newborn octopi, though tiny, are independant and require no more maternal care. Survival in the ocean is often a matter of luck, and very few of these offpspring will survive to adulthood— which is why so many eggs are laid to begin with.

I have a theory that Mondays are for repentance, for undoing whatever damages to your liver, psyche or saddlebags you’ve done over the weekend. They’re for getting back on the gym horse, resuming those eight daily glasses of water, and going to bed early. They’re for kale salad; they are not for chocolate cake. But, guys, those bananas that are one day from fruit flies are not going to eat themselves, and they must be addressed, which brings us to this.

I joked earlier this year that I had a new mantra to address all future cooking indecisions: WWAE (What Would Alex Eat?), because my husband rarely chooses wrong. Thus far, it’s had spectacular effects: hazelnut-nutella linzer hearts, a chocolate-peanut butter cheesecake, and a dijon and cognac beef stew. (Don’t worry; my interests haven’t been fully occluded, see also: fennel and blood orange salad and stuck-pot rice — you know I can hear you snoring, right? — oh, right, and morning bread pudding with salted caramel.) And for years, he’s been angling me to put chocolate in my banana bread. “But why?” I’d demand to know. “Banana bread is perfect the way it is. Can’t there be one dessert that’s not improved by the addition of chocolate?”

Crocodile Skink a First for Fort Wayne Children's Zoo

The Fort Wayne Children’s Zoo welcomed a new addition on February 10 – a two-inch-long Crocodile Skink.  It’s the first time this lizard species has ever hatched at the zoo.  The hatchling weighed two grams, approximately the weight of a pencil eraser.

This little Crocodile Skink came as a surprise to zoo keepers.  Late last year, zoo keepers discovered that the zoo’s two adult Crocodile Skinks had produced an egg in their exhibit.  Zoo keeper Dave Messmann accidentally disturbed the egg while cleaning the Skinks’ aquarium.  “We were concerned about the disturbance.  It’s best practice to avoid moving a reptile egg,” Messmann said.  That’s because if a reptile egg is disturbed, an air pocket inside the egg can shift, potentially causing the embryo to suffocate. 

Hoping for the best, zoo keepers decided to incubate the egg by placing it in a deli tub filled with wet moss.  The egg incubated at room temperature, undisturbed.  After 60 days, the egg hatched.

Now more than a month old, the hatchling is developing normally.  The gender is not yet known.  Adult Crocodile Skinks are about eight inches long and weigh about one pound.

Crocodile Skinks are native to New Guinea in Southeast Asia, where they inhabit moist areas along waterways.  They are one of the few lizards that make sounds.  Because they are secretive, little is known about them in the wild.

The Los Angeles Zoo and Botanical Gardens welcomed a female Sichuan Takin on February 12. Takin (pronounced “TAH-kin”), are stocky goat-antelopes native to China’s remote mountain forests.

In the wild, baby Takin begin to follow their mothers along steep paths when they are just three days old – a crucial survival skill for these leaf-eating animals.  Though heavily-built, Takin are surprisingly agile on the rocky cliffs of their homeland.  Their large hooves have a spur that makes them sure-footed even on steep terrain.  Males can weigh up to 800 pounds.  Both males and females have thick upward-turning horns.

Takin are well-suited to life in the cold.  In winter, they grow a secondary coat as protection from freezing temperatures.  Long nasal passages warm frigid air before it reaches the lungs. 

Because Takin live in remote areas, not much is known about their wild populations.  But habitat loss, hunting, and human disturbance have caused Takin to be listed as Vulnerable by the International Union for Conservation of Nature.
