While everyone else around me is all omg fall! and pumpkin spice lattes and scarves and boots and chilly weather I’m still trying to figure out how I can hoard every bit of summer produce in the universe. All the fruit, all the time.

Oh but I did buy one fall colored nail polish already. Like I really needed another one. But I DID. It’s dark blue with gold flecks and… and… and… totally different from all the other dark blue with gold fleck shades that I have. I KNOW.

But really.

I don’t even feel like it ever got hot enough to eat watermelon, but I sure as heck devoured my share so far.

Perhaps the craziest thing that I’ve experienced in this pregnancy (okay, not the craziest by any means, but odd for me) is that I’ve wanted flavored drinks. I’ve mentioned it a few times here and there and I’m not talking about cocktails or anything (though a margarita sounds amazzzzzing as does some ice cold pinot grigio), just beverages other than water. I’m a lunatic and have always loathed carbonation (burns my mouth, chest and throat) and haven’t cared about flavored drinks, because water tastes so dang good to me.

Like so, so good.

Well.

Now I want every beverage known to man that has some sort of flavor other than plain water. GIVE ME ALL THE DRANKS!

So I made us this.

It starts with a vanilla bean (see the beans??) ginger syrup and some watermelon juice. A drop of club soda. Lots of crushed ice (the best kind, yes ice connoisseur-ism is a thing) and then a few cucumbers added in because they are 1. pretty 2. cute and 3. a vegetable which makes this a health food which means you are practically drinking a salad.

Seriously. Now go eat a donut. It’s friday.

Watermelon Ginger Sparklers

Yield: serves 4

Total Time: 15 minutes

Ingredients:

4 cups watermelon cubes
1 cup sugar
1 cup water
1 knob fresh ginger
1 vanilla bean, seeds scraped
1 seedless cucumber, sliced
1 cup club soda
candied ginger for serving

Directions:

Place the watermelon in a blender and blend until pureed and liquified. Pour the contents through a fine mesh sieve, saving all the watermelon juice in a large pitcher.

Add the sugar, water, ginger and vanilla beans plus the empty pod to a small saucepan. Heat over medium heat while whisking constantly until the sugar dissolves. Allow the mixture to simmer for a minute or two until it becomes syrupy. Remove from the heat and let cool.

To assemble the drinks, add crushed ice in a cup. Pour a few ounces of the vanilla ginger syrup into the cup, then add 4 or so ounces of watermelon juice. Pop the cucumbers in the cub and add about 2 ounces of club soda. Taste and adjust the drink to your desired taste - more syrup or juice, or more club soda. Stir well to mix. Serve!

When it comes to most things in my life, I’m pretty low maintenance. I rarely wear makeup or blow dry my hair, I wear the same outfit pretty much every day and I think a little bit of dirt never hurt anyone. But, when it comes to travel, I can be a bit of a diva. Ok, well maybe not a “I demand only green M&Ms in my dressing room!” diva, but I like to stay in nice hotels whenever I have the opportunity. Julia and I always joke that it’s one of our favorite things we have in common, because whenever we travel we both agree that we’d prefer to get cheap plane tickets and save our money for a nice room. Everyone has their version of pampering and for me, it’s staying somewhere that has strong air conditioning and room service and is a place where I can take a nap in a quiet room without loud neighbors. The chance to do all of the above doesn’t happen often but when it does, I’m in heaven. So while the summer is still upon us, I thought I’d share my favorite hotels we’ve ever posted. From as far away as Turkey and Panama to my beloved Greenbrier Hotel in West Virginia, these hotels are worth the visit (even just for a quick drink or snack at their bars) if you’ve got room left on your vacation calendar. Roasted Asparagus and Mushroom Poutine
Asparagus and mushrooms are a fabulous combination, one that I never tire of using, and my latest creation is an asparagus and mushroom poutine. Poutine is a Canadian dish where french fries are topped with cheese curds and gravy. I figured that the asparagus would make perfect 'fries' and I could toss the mushrooms in along with the cheese curds and top everything off with a tasty mushroom gravy. I always enjoy roasting vegetables, it helps bring out more flavour, and so I decided to roast both the asparagus and the mushrooms for the poutine. For the gravy I started things out by soaking some dried porcini mushrooms in broth and I used them along with some shallots, garlic, thyme and soy sauce to ensure that the gravy was full of flavour. I have too say that this is one tasty poutine; I mean, you really cannot go wrong taking an amazing combo like asparagus and mushrooms and topping them with cheese and a tasty gravy!

The Clark Art Institute in Williamstown, Mass. has a one-acre reflecting pool, but it's not a waste of water. Rainwater is collected from the rooftops where a simple gravity pipe connects them to the reservoir system, which feeds the water feature, as well as plumbing fixtures, site irrigation, and the site's cooling tower. Emergency overflow from the water feature goes into a nearby brook.

It’s not my typical Monday dish but it is soooo now a Monday dish. I am begging for one more day of weekend so I’m just going to pretend today is it while I’m waist deep in boxes and throwing tantrums because I can’t find my 1. favorite whisk, 2. felicity DVD set, 3. neon pink nail polish and 4. all of the above. At least I can pretend it’s still the weekend food wise.

Let’s do it!

Apparently right now I want all the seafood in the world. Salmon salads, mussels and lobster corn chowder are the things I’m seeing in my dreams right now.

And just look at those butter bubbles! I practically want a straw.

With how obviously freaking weird my tastebuds are at the moment, this was a welcomed change. It sounded like the best thing ever in the universe and well… it kinda was. Shrimp and grits isn’t a meal I gravitate towards often but something in the air was just begging for it. It’s one of Eddie’s favoritest of the favoritest things.

The only thing he requested in the grits was… more butter. For real.

We’re talking about the guy that wouldn’t eat white bread Saturday morning but wanted a whole stick of butter added to the grits. #compromise

So. This shrimp is so simple but SO good. The spices have so much flavor, lots of butter browns as it cooks and you stir some flecks of garlic in at the end to top it all off. I can fathom eating it with everything – it is that good. I probably it. It’s def our new favorite way to eat these curly little shrimp.

I cheated and used some quick cooking grits… I KNOW. You southerners are probably staring me down with disgust right now. I’m a hypocrite, I won’t use instant oats but I’ll use semi-instant grits. But when you add enough cheese to something, it always works. Right right? These grits take mere minutes and then you whisk in piles and piles and grated gouda. The GOOD gouda.

EAT IT UP.

Gouda Grits with Smoky Brown Butter Shrimp

Yield: serves 2 to 4

Total Time: 35 minutes

Ingredients:

gouda grits
4 cups low-sodium chicken stock
1 cup quick-cooking grits (I like the quaker 5 minute grits, but you can definitely use the stone ground if you're a grit purist! - just follow the directions they come with.)
8 ounces gouda cheese, freshly grated
2 tablespoons unsalted butter
1/4 teaspoon salt
1/4 teaspoon pepper
2 ears grilled sweet corn, cut from the cob
2 tablespoons freshly snipped chives

shrimp
1 pound raw peeled and deveined shrimp (I like the larger grilling shrimp)
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon smoked paprika
1/4 teaspoon chipotle chili powder
1/4 teaspoon ground cumin
4 tablespoons unsalted butter
2 garlic cloves, finely minced or pressed

Directions:

Bring the stock to a boil in a medium saucepan. Once boiling, add the grits and whisk constantly until they are fully mixed into the stock, about a minute or two. Reduce the heat to low and cover, stirring once or twice more, until the grits are thicker and creamy, about 5 minutes. Stir in the grated cheese, salt and pepper. Taste and season more if desired - this will depend on the salt in your stock and cheese.

Pat the shrimp completely dry with paper towels. Once it's dry, season it with the salt, pepper, paprika, chili powder and cumin. Heat a large skillet over medium-high heat and add the butter. Once it's melted and begins to sizzle, add the shrimp in batches (don't overcrowd it!) and cook on both sides until pink. The butter will brown as the shrimp cooks and you can whisk it occasionally to prevent it from burning. When the shrimp is finished, stir in the garlic (I stir a little in each batche of the shrimp) and cook for a second then place the shrimp on a plate. Repeat.

To serve the grits, spoon them into a bowl and add the shrimp on top. I like to drizzle any of the butter in the pan on top too. Cover with spoonfuls of grilled corn (you can toss it in butter, salt and pepper!) and a sprinkling of chives. Eat immediately.

Blackened Shrimp and Fried Green Tomato Po Boy Salad
The blackened shrimp and fried green tomato po'boy is one of my favourite sandwiches and when I found myself thinking that it would also make a great salad I just had to try it. The po'boy submarine style sandwich can have pretty much much anything in it with common ingredients being fried seafood but this flavour combo is what I usually go with so that's where I started the salad out. The shrimp are simply tossed in some creole seasoning and then cooked at a high temperature in a pan and the fried green tomatoes are just sliced green tomatoes that are dipped in buttermilk followed by flour and/or cornmeal and fried until golden brown. The rest of the salad composed of lettuce and ripe tomatoes and I could not resist throwing some bacon into the mix! The final component of the salad is a tasty remoulade sauce thinned down a bit with buttermilk to make into more of a dressing. The po'boy sandwich salad experiment was a complete success with all of the flavours working well together and working well in salad form; I know I will be making this salad a lot in the future!

On that day Paris’s Picasso Museum is to reopen after a five-year closure for renovation. And on that day I will be there! That date was chosen because it is the anniversary of Picasso’s birth 133 years ago. He died in 1973 aged 92. Superstitious, when he was asked, by family, friends and colleagues, to make a will and to decide on his burial – where it was to be, for example – he bluntly refusedm saying that should he make plans for his funeral, he will be dead the very next day.

American Doctor With Ebola Arrives in U.S. for Treatment

What Do You Splurge On?

I am so anti future living ....it's fine for a time, but then you just gotta put a date on it!!

My past few essays have been all about the things that I don’t buy, so I thought it was about time to come clean and talk about what I do buy and what I splurge on. I love the delayed gratification that comes from the plotting, waiting and then finally enjoying a good splurge. In fact, I actually have found that by carefully planning on what and when I’m going to splurge, I’m able to live more in the present. There’s something about that focus that keeps my attention on what I’m doing at the moment and at the end of the day, it’s all about trying to live consciously rather than living by habit. So rather than ordering delivery every night because I’m not really thinking about it, I’ll do some pre-week planning (aka grocery shopping) so I can splurge on a fancy restaurant in a couple weeks time. So today, we’re asking what do you splurge on? And because fair is fair, I’m going to come clean about my recent splurge in Peru. -Amy

Before we get started, I want to share one caveat: I’ve learned that with delayed gratification, you have to be careful not to turn it into future-living (If you buy me a drink, I’ll tell you all about how I learned this one the hard way). For a stretch of time otherwise known as my twenties, I was so focused on what my life would be like in the future, that I wasn’t living in the present. I was just waiting for that ship to come in. I put off making changes to my apartment because I wasn’t going to be there for long or taking trips because they were too expensive. To make sure I don’t fall into that future-living mistake again, I’ve devised a simple solution: I must have a specific splurge in mind and I need a calendar date for that splurge. Having those specifics in place will let you focus on the reward and not get lost in endless “one day” living.
