Vegan eating, tiki Christmas, and more are options this year.

The beginning of twinkling lights and tinsel also means the start of all the fun holiday eating. Pop-up markets across the city are flush with new food options, and some bars and restaurants are completely transforming in celebration of the cooler months, too. Check out the Eater guide below for some of the best options to try this holiday season and beyond — from ski lounges to surfing Santas. Mulled wines, hot chocolate, and hearty soups await you.

— Urbanspace Union Square Holiday Market: Beloved South Williamsburg barbecue spot Delaney Barbecue is offering its Texas-style brisket in Manhattan for the holidays at the market. The more veggie-inclined can hit up Two Tablespoons, a vendor serving vegetarian and gluten-free dishes, or Taste of Persia, a popular takeout counter that offers vegetarian soups along with Persian meat dishes. Chelsea Market's creperie Bar Suzette and bakery Doughnuttery will be open daily, and pop-up market regular Arancini Bros. will be selling its rice balls there, too. Nov. 19 to Dec. 24, Union Square

— Urbanspace Columbus Circle Holiday Market: Northern California street food pop-up Jicama is unique to this holiday market, serving unusual Asian and Latin-inspired food like pork doughnut sliders and kale sausage wraps. Popular local spots with outposts here include Hill Country Barbecue, Per Se alum Susanna Yoon's Nolita dessert shop Stick With Me, and Midtown Turkish street food spot MMM Enfes. Those looking for a quick snack can stop by stands from Three TartsThe Baking Bean bakery, gingerbread shop Leckerlee, and empanada pop-up La Sonrisa. Dec. 1 to Dec. 24, Columbus Circle

— Urbanspace Garment District Holiday Market: This holiday market is the only one with Hong Kong jianbing restaurant Mr. Bing, which describes its food as Beijing-style street crepes. It offers both Chinese flavors like Peking duck and non-traditional ones like ham, egg, and cheese and Nutella. East Village favorite Black Iron Burger already has a brick-and-mortar location in Midtown, but for those looking for a holiday feel, it's serving in the market, too. Crown Heights Asian taco spot Domo Taco and La Sonrisa empanadas, which both make appearances at other Urbanspace markets, are one of the few food vendors here as well. Nov. 16 to Dec. 24, Garment District, Broadway between 39th Street and 41st Street

— Winter Village at Bryant Park: Several new food options have been added to the market, including veggie burgers from Marty's V Burger and macaroni from Super Mac and Cheese. A new Mediterranean pita vendor called Saj Mahal and a health-conscious vendor called Vedge also join the mix. Many old standbys at the annual market have also returned, like mozzarella and cornmeal cake sandwiches from Top Arepa, Turkish street food from MMM Enfes, and the shareable Hungarian Chimney Cakes. And apparently #veganBryantPark is a thing: with all the new vendors — and returning vendor veggie sushi spot Vegushi — the village has more than 80 fashion and food booths that are animal-free. Oct. 30 to Mar. 6, Bryant Park

— Queens Holiday Market: The spot to hit at this Glendale market is Danny Brown Wine Bar and Kitchen, the first restaurant in Queens to be awarded a Michelin star. It closed early in November due to a fire and doesn't know where or when it will reopen, so this may be the last time to check it out for a while. LIC Flea regulars like Sam's Fried Ice Cream, Jessy's Pastries,and Oconomi will be at the market, but it will also be a one-stop-shop opportunity to check out other Queens favorites like the Arepa Lady and Filipino restaurant Papa's Kitchen. Saturday and Sunday, Nov. 28 to Dec. 20, the Shops at Atlas Park in Glendale, Queens, 8000 Cooper Ave.

— Baita: Eataly's rooftop restaurant Birreria will be transformed for the winter into a pop-up restaurant with a ski lodge-theme called Baita. The menu will mostly be cozy winter foods from Northern Italy, like polenta, stuffed veal cutlet with proscuitto cotto and fried piave cheese. Cured meats and mulled wines will also be offered for snacking. Dec. 2 to mid-March, Flatiron, 200 Fifth Ave.

— Miracle on Ninth St: The holiday-themed bar is popping up for the second time at Mace Cocktail Bar. Expect 12 specialty holiday cocktails from Experimental Cocktail Club veteran Nico de Soto, including one with a chocolate gelt-infused tequila and another with pumpkin-infused Barbados rum. Bonus: Some drinks are served in specialty mugs shaped like Santa Claus. Nov. 27 to Dec. 24, East Village, 649 East Ninth St.

Sippin' Santa's Surf Shack: For those who prefer warmer climates, Boilermaker is turning into a tropical Santa-themed bar for the holidays this year. The eight specialty cocktails merge tiki culture with Christmas cheer, like a pumpkin spice eggnog with Jamaican rum, and a vodka grapefruit cocktail with chocolate syrup and mint. Nov. 30 to Dec. 24, East Village, 13 First Ave.

— The Standard, High Line: The hotel's ice rink and dining area returns this year with a new design — this time as a '70s apres-ski lounge. Besides the rink, a Skate Shack and The Standard's Living Room will be serving a seasonal, wintery menu, with dishes like roasted acorn squash and gingerbread cookies. Cold weather drinks — like mulled wine and family servings of hot chocolate — will also be available. Nov. 24 to February, depending on weather, Meatpacking District, 848 Washington St.

After a battle with residents and Community Board 3, it looks as if The Cock is still packing up and moving several blocks up Second Avenue to the former Lit Lounge space.

As an EVG reader noted, the bar has taken to social media with the announcements... noting a Thursday opening date...

In August, the CB3 SLA committee voted against owner Allan Mannarelli's application to move the Cock from its current Second Avenue home to the Lit space between East Fifth Street and East Sixth Street.

The application was heard again before CB3 last month. According to the minutes (PDF) of that meeting:

Community Board #3 denied its application [in August] for a new full on-premise liquor license, in part, because 1) there was substantial opposition from area residents, citing the already overwhelming conditions on this block of Second Avenue from the existing thirteen (13) full on-premise liquor licenses, which include crowds of people on both sides of the street so big that residents have to walk in the sidewalk, drunken people, noise from people, noise emanating from the open facades of businesses, trash and vomit on the street, 2) there were resident complaints of noise and crowds from people in front of the existing business located at 93 Second Avenue and the sometimes impassable conditions from patrons at night in front of this storefront, which is situated behind a bus kiosk, making the available sidewalk significantly narrower for pedestrians, 3) the principal made misrepresentations about its business to Community Board #3 when it applied for its full on-premise liquor license at 29 Second Avenue, for The Cock when it was located at 198 Avenue A, and for Superdive, located at 200 Avenue A, 4) there is a substantial difference in residential character between the block of Second Avenue where its business is presently located, which is comprised of mixed low and medium rise commercial and residential buildings on one side of the street and commercial lots and buildings on the opposite side of the street, and 93 Second Avenue, between East 5th Street and East 6th Street, which is densely populated with five (5) and six (6) story residential tenement buildings ...

And...

BE IT RESOLVED that Community Board #3 asks that the SLA not consider the alteration of the full on-premise liquor license, for 93 Art LLC, by majority principal Allan Manarelli for the premise located at 93 Second Avenue, between East 5th Street and East 6th Street, to wit decreasing its size by one (1) floor and reducing its certificate of occupancy to one hundred fifty-seven (157) people until this principle has appeared before Community Board #3 for the hearing of this application.

Keep in mind that the Community Board's decisions are only advisory. The State Liquor Authority has the final say in these matters.

Lit first closed at the end of July after 13 years. There was talk of a relocation to Brooklyn, but those plans never materialized.

In July, according to multiple published reports, police arrested a teacher and coach at Leman Manhattan Preparatory School for allegedly having sex with a 16-year-old girl inside the bathroom at Lit Lounge.

Why is the Turkey Still Pink?

You’ve covered your bases— the turkey was in the oven with a digital probe, or separated into white and dark meat, and then cooked to the perfect internal temperature. But when you begin carving your bird, you notice the devastating color that is sure to break the hearts of hunger-mad guests moments before Thanksgiving dinner is served: pink. No need to panic. If you’ve carefully cooked your bird, there are other reasons why you might see that hue.

Several phenomena can cause discoloration in cooked meat. By far the most common, and to some people the most off-putting, is the pink discoloration that frequently occurs in poultry and pork that have been over cooked to temperatures above 80 °C / 175 °F or so. This pink tint makes some people think that the meat is still slightly raw—a common complaint with Thanksgiving and Christmas birds. In pork, the pink hue may even lead diners to suspect that a sneaky cook has injected nitrites into the meat.

In fact, a pigment known as cytochrome is to blame. Cytochrome helps living cells to burn fat. At high temperatures, it loses its ability to bind oxygen and turns pink. Over time, the pigment does regain its ability to bind oxygen, and the pink tinge fades. That is why the leftover meat in the refrigerator rarely seems to have this unseemly blush the next day.

Pink discoloration can also come in other forms, such as spots and speckles. Nearly all of these blotches are the result of the unusual way that various protein fragments and thermally altered pigment molecules bind oxygen. None of them indicate that the meat is still raw or that it will make you ill. Nor do they implicate a sneaky cook.

Coli Outbreak Has Spread To New York An outbreak of E. coli that temporarily shuttered 43 Chipotle restaurants in the Pacific Northwest has now been expanded to include three additional states including New York. The Centers for Disease Control released an update about the Shiga toxin-producing Escherichia coli infections, revealing that six states are now linked to the outbreak that has sickened at least 45 people when it was first reported last month.
