174. MARGARET E. KNIGHT: It is only following out nature

Margaret Knight (1833-1914) was an American inventor. From a young age, Knight had a gift for engineering and mechanics, and loved to build gadgets. Her first important invention came when she was working in a factory and witnessed a fellow worker get injured. She devised a safety stop-motion mechanism that would prevent it from happening again. Knight was 12 years old at the time.

She created her most famous invention while working in a paper bag factory in 1868. Instead of having to be glued together by hand, Knight invented a machine that could automatically make flat-bottomed paper bags, the kind still-used today. Knight built a wooden prototype of the device and took it to a machine shop in Boston to be cast in iron. In the shop, a guy named Charles Annan saw Knight’s machine being built, stole her idea and patented the device himself. Knight took Annan to court and the patent office rightly awarded her ownership. Knight is known as the most-famous female inventor of the 19th century and went on to hold 87 patents in her name.

I couldn’t see the sense of cuddling bits of porcelain with senseless faces; the only things I wanted were a jack-knife, a gimlet, and pieces of wood. My friends were horrified. I was called a tomboy, but that made little impression on me. I sighed sometimes, because I was not like other girls, but wisely concluded that I couldn’t help it, and sought further consolation from my tools. I was always making things for my brothers. I was famous for my kites; and my sleds were the envy and admiration of all the boys in town. I’m not surprised at what I’ve done. I’m only sorry I couldn’t have had as good a chance as a boy, and have been put to my trade regularly.”

Sour Cream & Onion Deviled Eggs

We love deviled eggs. When I saw we, I mean my husband and I. My boys, not so much. I find it hard to fathom since they are one of my most favorite appetizers.

For over 10 years I've stuck to my old try and true recipe and my Deviled Egg Spread (what better way to use up all those boiled Easter eggs right?)

I saw a recipe for Sour Cream and Onion Dip Deviled Eggs on A Spicy Perspective and thought I'd give it a whirl with a few additions of my own thrown in.

So I bring you Sour Cream and Onion Deviled Eggs. My version.

Creamy, oniony and satisfyingly delicious!

There's a new deviled egg in town!



Sour Cream & Onion Deviled Eggs
adapted from a recipe at A Spicy Perspective.
PRINTABLE RECIPE
12 extra-large hard boiled eggs
4 large shallots, finely chopped (or 1 small onion)
1/2 cup thick sour cream
1 tablespoon apple cider vinegar
2 teaspoons of Dijon mustard.
2 green onions, white and light green parts only, finely chopped
salt & pepper to taste.

Drain the sour cream  in a sieve over a bowl using a coffee filter or a piece of paper towel. Let drain for about an hour. You should see some liquid drain out.

Peel the hard boiled eggs, cut them in half and place the yolks in a food processor.
Place a skillet over medium heat. Drizzle in some olive oil and add the chopped shallots. Saute for 3-5 minutes until soft and golden. Set aside.

Drain (or strain) the sour cream so it is as thick as possible. Place it in the food processor along with the sautéed onions. Puree until totally smooth. Remove mixture to a bowl and stir in the vinegar mustard and chopped green onions. Salt and pepper to taste. You might want to add more vinegar at this point. I like my deviled eggs a little tangy. If you do too, add in a splash more.

Fill the centers of each egg white and garnish with a little more of the chopped green onion. Cover and refrigerate until ready to serve.

Amazon strives to make it as easy as possible to order pretty much anything online. That includes music, movies, food, gadgets and now plumbers as well. The company’s latest endeavor, Amazon Home Services, lets you quickly hire a professional for anything from home improvement to private tutoring to goat grazing with just a few clicks.

The new service seems designed to challenge work-for-hire sites like Task Rabbit along with Craiglist’s massive job listings, and Amazon already has a few clear advantages. First, the company promises to hold your hand through the process and protect you in case something goes wrong. Second, every worker listed on Home Services will be “hand-picked” and will have passed background checks.

It’s also an obvious fit for much of what Amazon already does. You can order a new TV, computer or shower head online, but you may need a professional’s help installing it. Now you can order that without ever leaving the site.

Amazon Home Services is live, though it’s only available in some areas with a varying concentration of service. For now, only New York, Los Angeles, San Francisco and Seattle boast a high amount of coverage, while much of the U.S. is listed as “medium” or “light” coverage by Amazon.

Apples Apples Apples... is what she used to be! Applejack has grown over the seasons, with a crazy amount of episodes dedicated to her and the Apple family. Living here in Arizona, you tend to burn out on the whole cowgirl thing pretty quick, but when she's not doing that, there is a lot to love about Appleponi.

I still would love to see her completely thrown out of her element though. Not a single mention of apples, rodeos, ranching, or anything of the like for an entire episode, but still focused on her. Could she do it? Will we see it in season 5? I'm hoping so!

7 Days of Pony - Rarity

7 Days. That's a week! We have just a week of waiting to go!

Four years ago when I first stumbled upon the wonderful world of pony, there was one character I went in expecting to absolutely hate. A fashion crazy, materialistic, prince obsessed drama queen?! Every single one of those goes against my nature! Rarity was doomed!

I was so wrong...

Look Before you sleep rolled around, and suddenly Rarity became... tolerable. I was starting to crack. Would I fall for this pony that represents my polar opposite? Hell yeah I did. I fell harder than a bowling ball dropped from the space station. Suited for Success happened, Rarity lost her materialistic little mind in the most spectacular crazy cat lady way possible, and I suddenly found a new favorite pony for WEEKS. If you know me, ponies don't last WEEKS. Only TRIXIE lasts WEEKS. And shes a god not a pony!

The voice acting, the Rarity tantrums, the slapstick! Rarity is pretty much a parody of the ridiculousness of the fashion industry, and I love every second of it. So today, we celebrate 2nd best* fashion horse.

Idaho Republican: Gay People Are Like Slave Owners

Rep. Paul Shepherd, a Republican in the Idaho House of Representatives, forgot to renew the domain for his campaign website and a college student bought it and turned it into a pro-LGBT resource. So naturally he invited a reporter into his office to explain why gay people are just like slave owners.

Shepherd said he’d heard about Hailey’s actions, but hadn’t yet seen the new website. He was bemused, though, and brought me into his office so I could listen to an angry voice mail about the joint memorial.

“Why don’t you butt out… and worry about who you’re sleeping with?” the caller said before insulting Shepherd and his wife.

I asked Shepherd if he was surprised at the vitriol. “I know we have a disagreement out there,” he said, adding opponents of his memorial within the Legislature have been respectful to him.

He then tried to explain his position using historical context.

“Slave owners were very good Christians and good people,” he said, adding he was against slavery. “I totally disagree with that.” This fight, Shepherd told me, is an example of good people who have the wrong idea about moral convictions.

I asked Shepherd to clarify, and he reiterated the connection he saw.

“They (slave owners) weren’t terrible rotten horrible people,” he said — just people who made terrible decisions. “And that’s how I see gay people.”

I think the GOP has their next presidential candidate.

National Portrait Gallery Honors Comedian George Carlin

Yesterday, the National Portrait Gallery in Washington, D.C. added a photo of comedian (and memorable religion-critic) George Carlin to the collection after a public vote:

His daughter Kelly Carlin wrote a brief reflection on his legacy for the gallery’s website:

My dad was a sentimental fool.

And so, when some of dad’s fans commented to me that he would think the hanging of his portrait today in the National Portrait Gallery would have made him laugh, or even bothered him, I had to tell them that they were dead wrong. Dad would have gotten a huge thrill out of it.

He would have relished the fact that his likeness — this latch-key kid from the rough-and-tumble Upper Westside of Manhattan, this man who made the world laugh with fart jokes, this man who dissected the English language to reveal our human folly, this man who was kicked out of every institution he was ever a member of — would be gracing the walls shared by presidents, world leaders, and other Americans of significance. It might have even brought a tear to his eye.

But now I’m getting sentimental.

It’s a well-deserved honor for a man whose comedy holds up after all these years.

By the way, his newly-revamped website features rare recordings from throughout his career.
