Make Vegetable Broth with Scraps

Vegetable broth is as comforting as chicken soup on a cold winter day, and making your own from scraps you’ve collected is easy, healthy, cost-effective, and reduces food waste. Here’s how.

As we trudge through flu and cold season, making your own broth is the perfect kitchen hack to help boost immunity and soothe symptoms. With a little planning ahead (and some freezer space), the “Ugly Bag” of broth will surely be a delicious addition to your culinary repertoire. This big bag of stuff might not look all that tasty (hence its name), but this humble bag of kitchen scraps is more than the sum of its parts.

Regardless of how much you cook, you are likely to generate some produce waste. The good news is, all of those carrot peels, garlic skins, or ends of the onion have a much more palatable purpose than in the bottom of your trash or compost bin. (Check out what other peels you can save and what to do with them.) In fact, some of the most nutritious and flavorful part of your veggies are in the scraps. Rather than tossing your vegetable scraps you can turn them into a tasty, nutritious broth instead.

What is an “ugly Broth Bag?”

The Ugly broth bag is simply a plastic zip top bag that hangs out in your freezer. Every time you have a leftover vegetable trimmings, place them in the bag, zip it up, and store it back in the freezer until you fill it up. When your ugly bag is filled, it’s time to make broth.

Start by taking two one-gallon zip-top plastic freezer storage bags. (Double bag for added protection–no one wants a spill.) You can also use the reusable, stand-up silicone zip bags.
Whenever you cook with vegetables, pull out the bag and toss the leftovers in.

Vegetables that have been hanging out in your crisper drawer or counter for too long and are past their prime can also be added to your bag. Limp or less than fresh vegetables are good to use, however save the rotten ones for the compost – no one wants to sip of rotten onions.

Best Vegetables Scraps for Broth

What vegetables can you toss into your bag? While your ugly bag of broth is a smorgasbord of healthy, but unwanted goodness, not everything can get tossed into your broth. The most common additions are:

  • Onions – skins and leftovers
  • Garlic – skins and leftover
  • Carrots – peels and whole
  • Celery tops and bottoms
  • Mushroom stems
  • Leeks
  • Scallion tops
  • Tomatoes
  • Turnip Peels
  • Herb Stems

Be sure your vegetables are free of rot and dirt. You can get creative and test out new flavors by adding various vegetables, some are generally omitted. Cruciferous veggies, such as broccoli and cauliflower can make your broth bitter (and a bit gassy). Bitter and tender greens, as well as peppers, can overwhelm the flavor of your stock. Potatoes also tend to soak up flavor, rather than release it, and can make your broth cloudy.

How To use Your Scraps

When your Ugly broth bag is filled, grab it from the freezer and dump it in a stockpot. Add enough water to cover the frozen vegetables plus an inch or two. Season with herbs, garlic, bay leaf, and salt and pepper to give your broth an extra pop of flavor.

Cover and bring to a simmer. Let simmer uncovered on the stove for at least an hour or more depending on how dark you want your broth. You can also throw it in your slow cooker, set on low, and let it simmer all day.

Strain the liquid through a fine mesh strainer, taste and season with salt and pepper as needed. Pour into an airtight container and store in the refrigerator for two to three days or in the freezer.

Use your flavorful stock as a base for a soup, sauce, rice, a liquid medium for a braise, or just simply warm and sip plain.

Don’t toss the bag unless there are holes in it. The goal here is to make less wasted. Simply place the used bag back in the freezer and fill it back up.

Turning kitchen scraps into a stock is not only cost effective, but it is also nutritious. Considering how easy the broth bag technique is, the added benefits make it a no-brainer.

Display Your Speech In Realtime To Help Lipreaders In The Mask Era

The system consists of a small screen that can be worn on the chest or other part of the body, and a lapel microphone to record the wearer’s speech. Using the Deepgram AI speech recognition API running on a Raspberry Pi Zero W, the system decodes the speech and displays it on the Hyperpixel screen.

The API is quite capable, and can be set to only respond to the wearer’s voice, or in a group mode, display speech from multiple people in the area, displaying other voices in another colour. There’s also a translation feature using the iTranslateApp API as well.

It’s a neat tool that could be of great use in conferences or in situations where a quick simple machine translation could majorly ease communication. Video after the break.

For Shouichi Yokoi, World War II Ended in 1972

After the Battle of Guam in 1944, thousands of Japanese soldiers refused to surrender, and hid in the jungle, preferring to fight on their own instead of being captured by the Americans. By the time the war ended a year later, there were still 130 Japanese holding out on Guam. They ran and hid whenever they were spotted, refusing to endure the dishonor of defeat. Shouichi Yokoi was among them. Leaflets were dropped on the island, but Yokoi considered them enemy propaganda and not to be believed. He lived with other holdouts, until one by one they left, died, or were captured. Finally, he spent eight years without seeing another human being.

In all, Shouichi Yokoi spent almost 28 years on Guam. Only in January of 1972 did he run into two fishermen, who overpowered him and took him to civilization. Back in Japan, he received a hero's welcome, but the public was split between honoring him for his dedication to duty and pity for a life wasted. Chimney Rock in Chimney Rock, North Carolina

Nestled between the candidly-named North Carolina mountain towns of Bat Cave (after an enormous mountainside bat cave) and Lake Lure (famed for its freshwater fishing, aside from being the primary filming location of Dirty Dancing), Chimney Rock does its part to toe the naming convention line. For miles in every direction, the village’s namesake rock is hard to miss.

The titular rock is a half-billion-year-old monolith stationed along the eastern edge of the Blue Ridge Mountains. While the “chimney” itself is only 315 feet tall, its position high up in the mountains puts it 1,200 feet above the valley floor. It’s visible from nearly every corner of its namesake town and, from its peak, allows for 75-mile panoramic views of Hickory Nut Gorge. While the gravity-defying rock is now the centerpiece of the publicly owned Chimney Rock State Park, it was actually once purchased for about the price of a sports car.

Dr. Lucius B. Morse was one of the many moneyed tuberculosis patients of the early 20th century who relocated to the mountains just outside of Asheville, believing Western North Carolina’s humidity, temperature, and elevation to be ideal in treating his ailment. After catching sight of the falls, cliffs, and geological oddities surrounding Chimney Rock, Morse vowed to make these natural wonders accessible to the masses while preserving their rugged beauty. Along with his brothers, he procured 54 acres for a mere $5,000 in 1902. A century of infrastructure work, including a road and bridge system leading to the base of the rock, a 26-story elevator to the summit, and a marked network of hiking trails to geologic points of interest was completed before the state bought the park in 2007.

Today, views from Chimney Rock are accessible to a range of patrons. From the Upper Parking Lot, visitors can either ride the elevator or take a 500-stair path straight to the summit. From the summit, the Skyline Trail winds through a ridgetop forest beside sheer cliffs to the head of Hickory Nut Falls, one of the highest waterfalls East of the Mississippi and the site location for several pivotal scenes in Last of the Mohicans. The base of the falls is reachable by the shorter, gentler Hickory Nut Falls Trail.

Whether or not the region’s climate alleviated Dr. Morse’s tuberculosis symptoms as he’d hoped, his vision of preserving this singular and striking landscape while creating access for visitors near and far has heartily endured.

German-Italian Memorial Cemetery in Anniston, Alabama

On a little road surrounded by pine trees and quaint houses in Anniston, Alabama, you can find a number of headstones that mark the final resting places of German and Italian soldiers who were held as prisoners of war.

From 1943 to 1946, German and Italian soldiers from the North African Campaign were brought to Fort McClellan as prisoners of war. More than 400,000 Axis soldiers were held as prisoners in camps throughout the United States, and some 3,000 were interned at Fort McClellan, which was widely regarded as a model camp.

A total of 29 men are buried at the cemetery, 26 of them German and three Italian. The Italians that came to the cemetery were reburied there after other camps closed. Most of the deaths had been accidents, at least at Fort McClellan, however, there was one case of a soldier who died by suicide after suffering from psychosis. When these soldiers died they were given the same rights as an American soldier, including proper headstones. In one case the ambulance that took the POW to the hospital came to the funeral. 

In recent years, a project was set in place to restore the graves, where they were all cleaned up and a big fence was put up. There are still events going on to continue the respect for the soldiers, such as every third Sunday of November there is a ceremony of placing wreaths with the ROTC color guard and military. However, due to COVID-19 these are closed services until further notice.
