Easy-peasy 4-ingredient chocolate cookies

by Butterkicap Team
Jim Paull

That does not look like a chocolate cookie. It's so pale.

Easy bake cookies are way more delicious!

Living in this era where everyone is constantly busy and has no time, whether we’re working, chasing our dreams or after our kids, it’s good to take the occasional moment, to pause and breathe, and to make and sit down to a carefully prepared meal you can be proud of calling your own.

But sometimes time is just not on your side, and all you have the energy for is to make something with as little ingredients as possible. And if it’s quick and delicious, even better.

So, if your kid tells you about that class potluck party tomorrow at the very last minute, our four-ingredient chocolate cookies are here to the rescue.

Flour, cocoa, sugar and butter

Ingredients

  • 600g self-rising flour
  • 60g unsweetened cocoa powder
  • 500g unsalted butter, softened
  • 250g castor sugar

Method

  • Preheat oven to 170°C.
  • Sift self-rising flour into a mixing bowl.
  • Then, sift cocoa powder into the same mixing bowl.
  • Mix it until thoroughly combined.
Mix flour and cocoa powder.
  • Cut the softened butter into smaller cubes and mix it with sugar in a separate bowl.
Butter and sugar act as sweetener.
  • Cream butter and sugar with a mixer until they look pale, soft, fluffy and creamy.
  • Total creaming time should be around four to five minutes.
Cream butter and sugar.
Looks pale and creamy.
  • Add flour and cocoa powder mixture into the wet batter, mix it with a spatula until it is combined.
Add flour and cocoa powder.
  • Now use your hands to knead the dough for two to three minutes until all ingredients are combined.
  • It’s ready when it looks like chocolate ice cream!
Yummy!

Shaping and baking

  • Using your hands, shape dough into little balls.
Like a small ball.
  • Arrange dough balls on a baking sheet roughly 2-3cm apart.
  • Press dinner fork on top of the dough and add gentle pressure to give the cookies its pattern. Do not press all the way through to let the cookie hold its shape.
Press down with dinner fork.
  • Bake cookies in a 170°C oven for five minutes.

After five minutes, turn the heat down to 150°C for another 11 minutes.

  • After baking, let cookies rest on the baking sheets for a minute or two before letting it cool.
  • Store cookies in an airtight container.
Let cookies cool.

Millions from scandal-hit MIC firm paid to Samy Vellu’s son, says report

by FMT Reporters
Jim Paull

Like father, like son.

MIC secretary-general Vell Paari.

PETALING JAYA: A 30-year-old scandal involving an investment company has threatened to revisit Barisan Nasional’s MIC following a revelation that hundreds of thousands of ringgit was paid to the son of the party’s former strongman Samy Vellu between 2003 and 2009, according to Sarawak Report.

The website today published documents which it said showed how money, including in cash, was paid to companies connected to Vell Paari, the MIC secretary-general who was appointed as CEO of Maika Holdings, the brainchild of his father in the 1980s.

The company was set up in 1983 as an investment vehicle for MIC, raising RM106 million from some 66,400 members of the Indian community, mostly low-income earners. They were promised handsome profits but never got them, receiving only 80% of their original investment.

Sarawak Report cited a report lodged with the Malaysian Anti-Corruption Commission by a liquidator involved in the winding-up of the company, on payments made between 2003 and 2009.

“Twenty cash payments totalling RM1.6 million were made out by the company to Vell Paari during the period, some under the guise of ‘promotional finder fees’ but most without any explanation given,” the whistleblower site said.

The payments included RM33,500 to a law firm for what was said to be a private case linked to Vell Paari’s mother “over a matter that had nothing to do with the interests of the ordinary shareholders of Maika Holdings”, the report said.

Another RM1.3 million went to an Australian company owned by Vell Paari’s family, which the report said was in trouble with Australian authorities over the non-payment of employee taxes. The company allegedly received a further A$870,000 in 2002.

Other companies linked to Vell Paari which allegedly received payments from Maika were a South African firm (US$3.12 million), media company Tamil Nesan (RM150,000), and a film distributor which was given RM1.3 million to buy the rights for Tamil hit movie “Sivaji the Boss”.

When contacted, Vell Paari told FMT that he would issue a statement soon to respond to the allegations.

Labourer charged with defiling surau, stealing statue of deity

Helmee Othman being brought to court in Klang today. (Bernama pic)

KLANG: A labourer was today charged in two Magistrate’s Courts with two counts of defiling a surau and one of stealing the statue of a deity last week.

Helmee Othman, 38, was first charged before magistrate Roslizi Sulaiman with defiling Surau Sabilul Huda in Taman Pandamar Indah, Port Klang, between 4pm and 4.15pm on Feb 20.

He was also charged before Roslizi with stealing the statue belonging to one Cheong Lin Chai, 51, at a house in Pandaraman near here between 4pm and 9.30pm on the same day.

After the charge of defiling the surau was read out to him, Helmee pleaded guilty but his lawyer, Nur Aida Md Zainuddin, applied to the court for her client to be subjected to a sanity test before accepting the guilty plea.

DPP Mohd Fairuz Johari said there was no documentary evidence at this stage to support the fact that the accused had mental problems but added that he would leave it to the court to make a decision.

Roslizi then ordered Helmee to be sent to Hospital Bahagia in Tanjong Rambutan, Perak, for a month for a mental state examination.

He also fixed March 27 for the mention of the case.

Later, Helmee was charged before magistrate Muhammad ‘Azzam Zainal Abidin with defiling the same surau between 2.30pm and 2.45pm on Feb 23.

‘Azzam also fixed March 27 for the mention of the case.

The charge was under Section 295 of the Penal Code for defiling a place of worship with intent to insult the religion.

The offence is punishable with a maximum jail term of two years or a fine, or both, upon conviction.

It was reported last Monday that police had arrested a man after finding three statues of deities at the surau.

Klang Selatan district police chief Shamsul Amar Ramli reportedly said the man had admitted to having learned deviant religious teachings in a neighbouring country.

I keeeelllllll yoooouuuuu! Fucking crazy.

Wai Foo Sing.

KUALA LUMPUR: A 68-year-old man man today claimed trial in the Sessions Court to two charges of insulting Prophet Muhammad through a cartoon image he posted on his Facebook page.

On the first charge under Section 298A(1)(a) of the Penal Code, Wai Foo Sing is accused of uploading the post on his Facebook account under the name “Foo Sing Wai”.

If convicted, he could be jailed up to five years.

The second charge is under Section 233(1)(a) of the Communications and Multimedia Act, for posting an offensive content on the Facebook page with the intention to annoy any person.

If convicted, he could be fined up to RM50,000 or a maximum one year jail term or both.

Both offences were allegedly committed about 5pm on Feb 17.

Deputy public prosecutor Muhamad Asyraf Md Kamal proposed a bail of RM30,000.

He said the alleged offences were serious and the case had attracted public attention as it involved a revered figure in Islam.

“It will also send a wrong message to the public on the administration of justice in this country,” he added.

Wai, who was unrepresented, appealed for a lower bail amount as he was unemployed and had health problems.

Judge M M Edwin Paramjothy set bail at RM20,000 with one surety and fixed mention on April 5.

This Asian Airline Plans to Open a Fast Food Restaurant Serving Its Inflight Menu

by Jordan Allen
Jim Paull

Hmmm curry puffs before takeoff.

This might be a first. AirAsia’s CEO is planning to open a fast food restaurant featuring the Malaysian airline’s onboard menu.

“Our food is fantastic,” said Tony Fernandes, Air Asia Group’s CEO, on Larry King Now last Friday. “We believe in it so much that we’re going to start a fast-food restaurant out of it. It’s called Santan.”

Santan, which translates to ‘coconut milk’ in Malay, is the name AirAsia’s inflight menu

The food choices stem from data the airlines collected from around 400 million passengers, featuring a variety of dishes ranging from local favorites such as chicken tikka masala with garlic naan, spiral pasta with chicken sausage, Bukhara chicken biryani and plenty more.

TPG contributor Richard Kerr, who flew AirAsia back in 2015, enjoyed his inflight meal (which was the now-discontinued nasi lemak, a Malaysian dish of spicy chicken served with coconut rice) and said that while his inflight meal of the Malaysian national dish didn’t earn any points on presentation, he “was happily surprised by its taste,” and he was “impressed by AirAsia X’s extensive in-flight menu.”

While it’s most likely the Santan eatery will open in its home country of Malaysia first, further details on when this restaurant will be opening or where have not yet been released. TPG did not receive a response to a request for comment from AirAsia, but according to Skift, an AirAsia spokesperson said that there will be an announcement about it soon.

If baking is a science, then chocolate chip cookies are the ultimate experiment. The thing is, most of us don't actually want to do any of the hypothesizing or testing or analyzing ourselves. Rather, just tell us which ingredients and mixing methods yield the best results, and we'll happily start baking from there.

That's where Alton Brown comes in. Known for breaking down the science of recipes, I trusted his chocolate chip cookies would be tested to perfection — ingredients purposefully chosen to yield a specific, delicious result. Try the "5-5-5" Method for Perfect Eggs in the Instant Pot — Food News

by Elisabeth Sherman

Here at Kitchn, we talk a lot about all the ways that your Instant Pot is surprisingly useful. It can make yogurt! It can make Ree Drummond's chocolate lava cake! But it can also help out with those everyday tasks that could be even easier than they already are — like boiling an egg.

Now, boiling an egg is not the toughest kitchen task out there, but it does have its pitfalls: One common mistake people make is that they often overcook the egg, which gives it a gray-ish tint and thoroughly unappetizing sulphuric odor. If you have an Instant Pot, turns out there's an ingenious hack for making sure your hard-boiled eggs turn out just right: It's called the 5-5-5 method.

Here's Everything You Need to Know About Collagen Powder — Wellness Explainer

by Lauren Masur

You've seen it offered as an add-on to your morning lattes at your coffee spot, it's invaded your local Vitamin Shoppes, and it's interloping across our nation's protein bars. That's right: collagen, the most abundant form of protein in our bodies, is now purportedly the closest thing to the Fountain of Youth (according to collagen powder marketers).

The basic premise of these supplements is that, instead of relying on our bodies' natural collagen production, we should be ingesting scoops of animal-derived, powdered collagen on the reg to keep our skin supple, our nails strong, our locks luscious, and our joints nimble and spry. And it is true that our bodies' collagen supply naturally decreases as we age. But does the scientific community agree? Not everyone is on board ... just yet.

We did a deep dive to find out if there is truth to any of these claims and if you should start adding collagen to your morning drink anytime soon.

Super Bowl Exodus Causes Massive TSA Lines at Atlanta Airport

by Brendan Dorsey

The conclusion of the government shutdown didn’t mean the end of incredibly long security lines at Atlanta’s Hartsfield-Jackson Airport (ATL). When the Super Bowl ended Sunday night, it marked the beginning of a mass exodus from the city, and many of those visiting had came to Atlanta via air.

City officials say the airport could see more than 110,000 travelers passing through security — it could be the most travelers that have ever gone through the airport.

“We’re preparing for a potential record-breaking day here at Hartsfield-Jackson airport here on Monday,” said TSA spokesperson Mark Howell, reports WSBTV. The Atlanta TSA normally screens 60,000 to 80,000 passengers per day.

According to the Atlanta Journal-Constitution, the airport’s general manager says security wait times were about an hour and a half on Monday morning. However, that appears to contradict reports on the ground.

Many on social media are reporting lines of two to three hours, and in some cases even four.

Security lines extended all the way into the baggage claim areas and snaked around the luggage carousels.

“We’ve established a plan to essentially use every available square foot and fill it with queuing,” Hartsfield-Jackson assistant general manager of planning Tom Nissalke told the Journal-Constitution.

Even travelers with TSA PreCheck had to endure long lines. TPG himself, Brian Kelly, is traveling back from the big game today and has reported hour-long PreCheck lines. He says the expedited security service Clear is open, but it may be difficult to find. He was lucky enough to be pulled into a newly formed PreCheck line which helped cut down on his wait time. You can see more on Kelly’s Instagram story.Kelly’s brother was also traveling back from Atlanta but was without PreCheck. He had to wait in the regular security line for three and a half hours, leading him to miss his flight back home.

There are reports that you can go through the international terminal’s security which has significantly shorter wait times — those with mobile boarding passes and Delta passengers are eligible for expedited security. However, you may have to travel a bit to get to the domestic terminals once you’ve made it through.

The Atlanta airport advises passengers to get to the airport at least three hours before their flight’s scheduled departure, but it may be worth giving yourself even more time just incase of any unexpected delays. You can track security wait times on ATL’s website or the MyTSA App.

Finally, the airport also tells those with Super Bowl souvenir programs to pack them in your carry-on bag and not your checked luggage, as the material sets off alarms in checked bags.

And for those privileged enough to be flying private, business jets made their own exodus out of Atlanta last night.

How to improve blood circulation to avoid a muscle cramp

by Muhammad Wa'iz

Muscle cramps can be disturbing and irritating. It is the result of poor blood circulation particularly around your extremities such as your legs and arms.

It can be caused by the overuse of muscles during exercise, exercising without stretching first, muscle fatigue, nerves being squeezed, dehydration, deficiency of magnesium and potassium or any injury around your body such as spinal cord injury.

Blood circulation is important to our body system. Blood carries oxygen, nutrients and minerals which are essential for organ function and cell growth.

Poor blood circulation will result in a tingling or itching around the affected area of your body. You will also feel numbness on the limbs where blood flow is compromised.

Throbbing or stinging around the affected part as well as muscle contraction are also considered major symptoms of poor blood circulation.

There are easy ways to enhance blood circulation particularly during a muscle cramp. For instance, stand up and take a walk. Do not apply too much pressure on your leg by sitting in a particular position as it will continue to restrict blood flow. Either change position immediately, stand up or take a short walk.

Stretching helps lessen the incidence of muscle cramps and improves blood circulation. It also helps the organs and muscles function normally.

Meditation helps improve blood flow. Deep breathing, meditating and yoga will help your body relax, reduce blood pressure and improve circulation.

You can meditate or practice yoga in your home or join a meditation group. These exercises not only help calm you, but gives you the opportunity to socialise with others when practising in a group.

A reduction of blood flow caused by dehydration and loss of excessive liquids in your body can spark the cramping of muscles.

To counter this, consume water as needed by your body especially when thirsty. Also keep a bottle of water with you at all times, and drink more when you sweating, after urinating as well as before and after a workout.

Consume oranges as these have a high concentration of Vitamin C and are said to toughen the capillary walls and stop the build-up of plaque which causes poor blood flow.

Research findings presented in the Circulation Journal of the American Heart Association show that dark chocolate which is rich in natural flavonoids has been linked to improved blood circulation.

Other sources of food like salmon and avocados also help increase blood circulation and support the cardiovascular system with its heart-healthy omega-3 fatty acids.

Not only do they serve spectacular classic sandwiches, but they also offer creative vegetarian versions of many of them: ham and cheese can be made as a yam and cheese (roasted sweet potato with whipped goat cheese), an Italian hero becomes a vegitalian (made with butternut squash in place of mortadella and capicola), and, my all-time favorite, a classic reuben becomes a broccoli reuben, made with crispy roasted broccoli, Swiss cheese, and sauerkraut on rye. Cucur Ikan Bilis: Salty, savoury anchovy fritters

by Butterkicap Team
Jim Paull

Yes please.

Anchovy fritters or Cucur Ikan Bilis is the perfect tea-time snack or starter for those who live their lives on the salty side. Crispy on the outside, moist and fluffy on the inside, these fried balls of dough are filled with a delicious umami flavour thanks to the anchovies.

It’s salty, savoury, rich, deep and more-ish all at once, even if the end-product somewhat resembles overcooked prawn fritters. But while it may not be as Instagram-worthy, Cucur Ikan Bilis is undeniably delicious.

Anchovy fritters are a lot less famous compared to its more popular cousin, Cucur Udang, and it’s not something commonly available in roadside stalls or restaurants. Why this is so could probably be due to the intense anchovy flavour that might overwhelm some taste buds. It is somewhat salty, but if you’re the sort who adores Ikan Bilis and always asks for more, then this golden fritter is right up your alley.

Made with ten ingredients, our recipe is super easy and comes together very quickly. It’s an affordable snack and a great alternative if you like to serve your guests something a little less typical. All you need is a pack of nice dried anchovies and follow the instructions below.

Ingredients

  • 70g dried anchovies (Ikan Bilis)
  • 100g freshly-boiled hot water
  • 40g chives
  • 80g yellow onion
  • 40g red chilies
  • 1 egg
  • 140g self-raising flour
  • 1 tsp white pepper
  • ½ tsp anchovy granules
  • Cooking oil

Method

  • Soak anchovies in freshly-boiled hot water for 1 to 2 minutes, and then blend both ingredients together until smooth.
Blend anchovies and hot water until smooth.
  • Cut chives roughly 2cm in length.
Cut chives.
  • Using the large hole on a box grater, grate your onions.
  • Then, deseed and dice chilies.
  • Add self-raising flour into the blended anchovies and mix to form a batter.
  • Next, add pepper and anchovy granules and stir to mix through.
  • Beat the egg and add it into the batter, stirring until thoroughly mixed.
  • Finally, add the chives, onions and chilies, stirring until the ingredients are spread evenly.
Add chives, onions and chilies.
Stir to combine all ingredients.
  • Fill your wok or pot with about 4cm depth of oil and bring it up to frying temperature. To test if your oil is hot enough, plop in some batter. The oil should start bubbling immediately.
  • Use two regular tablespoons to scoop out and shape the batter into a rough ball. It doesn’t have to be perfect as the batter is soft and won’t hold its shape for very long. Immediately drop the shaped batter into the oil.
  • Add in a few more scoops of batter (or as much as you can handle) and let it fry until the skin is golden brown and crispy, turning it around in the oil occasionally to ensure all sides are fried evenly.
A wok filled with yummy balls of anchovy fritters on its way to perfect crispiness.
  • Scoop out and transfer fried Cucur Ikan Bilis to a plate or colander lined with paper towels.
Paper towels help soak up excess oil.
  • Let cool for a few minutes before serving with your favourite chilli sauce.

Extra tips

  • This recipe don’t require any salt as dried anchovies are already quite salty. However, different anchovies have different levels of saltiness, so give your batter a taste before frying just in case any adjustments need to be made.
  • If you don’t want your fritters to be too salty, reduce the amount of anchovies used and maintain the same measurements for the rest of the ingredients.
