These days, when I walk into my local vegetable market, the bin holding zucchini is just a sea of deep green freshness. Sometimes, in the winter, you’ll see some sad-looking specimens. But not in the summer. I have a hard time resisting them, even though I usually still have a small supply at home. I can’t help it—fresh vegetables are my weakness. Especially since I’ve given up trying to grow anything in my backyard. (The deer and groundhogs won that battle.)

Whether you are fortunate enough to have zucchini plants in your garden, or like me, want to bring home way too much zucchini every time you head to the market, there’s no denying it: there’s zucchini everywhere. So let’s put that abundance to good use, shall we? Tell us:

What’s your favorite way to use zucchini?

I love grilled vegetables, like Ree’s Grilled Zucchini with Lemon Salt that you see in the photo above. Zucchini bread is another favorite, and I’ll sometimes add shredded zucchini to other baking recipes because I’m sneaky like that. As a bonus, the zucchini makes the end product moist, so I think that’s a win-win!

It has EVERYTHING.

It has figs. It has nectarines. It has crispy pancetta slices and goat cheese and avocado and omg PISTACHIOS. It has a crazy nectarine vinaigrette that I could probably drink out of a straw right now because I want all things tart and briney and vinegary. It’s the perfect mix of flavors and textures that I am LOV.ING.

It makes me not hate Monday.

This was such a welcomed change – a few weeks ago I finally ate a salad and it tasted SO good. Complicated flavor combos haven’t been doing me any favors lately and this was one of the first trashed up salads I could get behind.

Let’s be real. Probably because of the pancetta. Of course. I’m sure.

BUT!

That’s just how it goes.

This is like that weeknight salad that you aren’t quite sure can pass for dinner but can totally pass for dinner. It’s my summer version of this salad. It can also be a weekend salad and then you can add extra goat cheese and pancetta and essentially eat a salad of goat cheese and pancetta with a side of greens… perhaps while starting to watch the entire series of the west wing again because you can’t sleep and the characters feel like your friends.

Is that sad? It was like midnight. They are my midnight friends. I should probably start living in 2014 and not 2006.

The perfect accompaniment to this salad is a fresh baguette. Now THAT is a complete meal. The second I made us (and yes, I say “us” but no, my husband would never classify this as a real meal – he adds chicken) I added the softest on the inside but crustiest on the outside baguette and it was heaven. It makes for the perfect ending too because the residual dressing is sweet and savory.

(And then you add extra goat cheese. Duh.)

It will just make you feel good!

And full. And happy. And maybe like you want six more baguettes.

Nectarine and Fig Summer Salad with Crispy Pancetta

Yield: serves 2 to 4

Total Time: 35 minutes

Ingredients:

4 cups spring greens
2 cups baby arugula
8 slices of pancetta, fried
2 nectarines, sliced
1 cup fresh figs, quartered
4 ounces goat cheese, crumbled
1 avocado, sliced
3 tablespoons chopped pistachios
a pinch of salt and pepper

nectarine vinaigrette
1 large nectarine, peeled and cubed
1/4 cup golden balsamic vinegar
2 teaspoons honey
1 garlic clove, freshly grated
1/4 teaspoon salt
1/4 teaspoon pepper
1/3 cup olive oil

Directions:

Add the greens and arugula to a large bowl and season with a bit of salt and pepper. Add the pancetta, sliced nectarines, figs, goat cheese, avocado and pistachio to the greens and toss as desired. Dress with the nectarine vinaigrette!

Add the nectarine cubes to a blender or food processor and blend until completely pureed. I have a vitamix and it purees it completely, but if your blender leaves some chunks, you can add a little water to the blender, blend it and then strain out the juice. Combine the nectarine puree, vinegar, hoey, garlic, salt and pepper in a large bowl and whisk together. Stream in the olive oil while constantly whisking until the dressing comes together. Store in the fridge for up to one week.

A Tiny Cottage in Venice Beach

Whitney Leigh Morris and Adam Winkleman don’t let size define their tiny cottage in Venice Beach. It might only be 362 square feet but they’ve managed to make use of every square inch of space. In designing the space, Whitney put her experience as a stylist and designer to work.  She is inspired by simplicity and prefers decorative objects to also serve a functional purpose. Part of the challenge in decorating this space was in blending the couple’s different styles preferences – Whitney prefers a warm, rustic aesthetic, while Adam leans toward a more modern and refined look – but they share a home office, so Whitney did manage to make it work out. And they also haven’t let the lack of square footage stop them from entertaining. Not long ago, they had party for 50+ people (including family who had flown in from Florida) – they used as many twinkle lights as they could get their hands on and had the even catered by a great local restaurant. The culmination of the party was when Adam pulled Whitney to the side and proposed. She said yes and then the couple returned to the party to share the good news. What a fantastic memory in their beautiful home! -Amy

We should all grant ourselves freedom from complicated, involved cooking on this day and instead focus on enjoying the fun with our friends and family as much as possible. 

There are times when spending hours slaving in a kitchen is really worth it. Thanksgiving, Rosh Hashanah, a special romantic meal. But not on the Fourth of July. This is, of course, not to say that the Fourth of July doesn't deserve wonderful food--that's not the case at all. But it's a holiday celebrating freedom, and as such, I think we should all grant ourselves freedom from complicated, involved cooking on this day and instead focus on enjoying the fun with our friends and family as much as possible. 

With this in mind, I bring you what I believe is my cleverest, easiest summer dessert yet: grilled strawberry shortcake. It's really, really simple. All you need is cubed, storebought pound cake, though I suppose if you are more ambitious than I, you could make it yourself (if you don't eat gluten or are paleo, try this coconut flour version), plus fresh strawberries and bamboo or metal skewers. 

After being assembled, the skewers get grilled very briefly, just long enough to char the berries and crisp the cake. Then I top the finished product with a dollop of whipped cream (whipped coconut milk is also delicious and dairy-free/paleo and makes a good substitute for traditional whipped cream. Sprigs of fresh mint are lovely but totally optional.

Hey, you're grilling anyway. Why not throw your dessert on the grill too, while you're at it?

After Hearing, Lyft And NYC Taxi Commission To Negotiate Brooklyn Launch

Potato bars are such a fun and simple dinner…where everyone gets to make their own dinner and you don’t have to short order cook! Well, it’s FAR TOO HOT outside to be baking potatoes in the oven. Just the thought of 400 degree oven running for an hour right now makes me sweat. BUT…you can cook the potatoes in the slow cooker without heating up your kitchen!

I also love this because I can cook a bunch of potatoes all day, while we enjoy an afternoon at the pool…then we all come home ravenous and all the boys get a hearty and filling dinner to enjoy!

The Little Jew?!

funny boneI just whacked my funny bone and oww did it hurt. I realized I didn’t know how to say “funny bone” in French. None of us are actually Franco-French in my house, and I can’t say it would normally come up in a conversation. So I looked it up on WordReference (which by the way is a great resource), and it said that the informal translation was le petit juif (the little Jew). As in (this is the example given), “I accidentally hit my little Jew and my arm is still tingling.” I think I’ll be using le nerf ulnaire instead.

{ Nando's Peri Peri Chicken }

I grew up in South Africa, as many of you know.  One of the things that I also grew up on, was the amazing taste of Nando's Chicken.  Oh my word, I can't begin to tell you how excited I would get when my parents would say that we were getting Nando's for dinner.

The minute you would walk into the Nando's Restaurant, you were hit with the delicious aroma of flame grilled chicken.  I remember we would get a whole chicken, plus fries and a salad and it was like the highlight of my week.  So good.

Since moving to the USA 16 years ago, I have not had any and I've missed it so very very much.  I do know that Nando's has a few restaurants here in the States but they are nowhere near where I live, unfortunately.

A few weeks ago I got an email asking me if I would be willing to try out some Nando's Sauces.  I swear, if you had to see my expression you would have thought someone just offered me a million dollars.  LOL

Nando's Peri Peri Chicken

I immediately said yes and waited *impatiently* for them to arrive, which didn't take very long.

The perfect time for me to try it the out, came when the World Cup game between Portugal and USA aired.  I invited my family over, because they too are huge Nando's fans, and we had a barbecue out back.

We used two chickens, and one with slathered on the Nando's Medium Sauce, the other we used the Garlic Sauce.

My word, these were to die for.  We didn't even really eat anything else that was cooked that, we dug right into the chicken and devoured.  My husband and kids were in heaven, my brother and sister in law, niece and nephew and I were transported back to South Africa with just one bite, and everyone agreed that this was the best grilled chicken EVER.

I don't really know what else to say about this other than TRY it.  Do yourself a favor and get some of the Nando's sauces, you will love them.

Best thing is that even though they are renowned for their amazing chicken, these sauces can also be used for seafood and meat.

I had one jar left and decided to throw something together for dinner.  I didn't use a recipe, just marinated the beef in the sauce, then fried it on the skillet with some tomato sauce, onion and garlic.  Made a nice gravy with it and then added in some rice.

It was AMAZING, so delicious and had a nice kick to it.

All this to tell you that you have to buy Nando's sauces, and you have to cook with them, and if you can, you have to visit a local restaurant.  If you're in Washington D.C, Maryland and Virginia, be sure to check them out, for locations look here.

Pop Rocks Truffles.

I have the easiest last minute treat for you… as long as you have a million pop rocks hanging around.

Which you do, I’m sure. Maybe? It’s embarrassing. I know.

I made these truffles based on one of my favorite chocolate bars ever. I can’t get enough of this thing and if I’m lucky enough to find it in target (I can also find it at another local grocery store) I go to town. It’s like a crunchy chocolate bar with firecracker pieces in your mouth! Insanity. I can usually get by with a square or two of chocolate at night but when it comes to that one, I lose it and before I know what’s happened I’m searching the wrapper for remnants.

So. This is my little trashed up version for your 4th of July. I rolled my truffles in pop rocks (so literally, like this is white trash – make some truffles, roll them in pop rocks, done) – but I also think you could add the pop rocks to the INSIDES of the truffles kind of like that chocolate bar… so it’s a wacky surprise inside.

Right? Firecracker in your face! It’s perfect.

Pop Rocks Firecracker Truffles

Yield: makes about 25 to 30 truffles

Total Time: 2 hours

Ingredients:

4 ounces milk chocolate, chopped
4 ounces semi-sweet chocolate, chopped
1/2 cup heavy cream
1/2 teaspoon vanilla extract
10 packets of pop rocks! (aka, a lot)

Directions:

Add the chocolate to a large bowl. Heat the heavy cream in a saucepan over medium-low heat until it is bubbly around the edges. As soon as it begins to bubble, pour the cream over the chocolate and allow it to sit for 30 seconds. Add in the vanilla extract and stir constantly until a thick and smooth chocolate ganache forms. Place the ganache in the fridge for 1 to 2 hours, until set.

To roll the truffles, it helps if you hands are a bit wet. Use a spoon and roll the chocolate into nickel-sized balls, placing them on parchment paper after rolling. Once all of the chocolate is rolled, set out a few plates for the different flavors of pop rocks. Pour the pop rocks 2 to 3 bags at a time onto the plates, make sure your hands are completely dry and roll the truffles into the pop rocks, pressing gently to adhere. Place the truffles back on a sheet of parchment paper (on a plate or a baking sheet) and stick them in the fridge until ready to use. These are best when made as close to serving size as possible.

atlantic limpet the paris blogThe crepidula fornicata, or Atlantic limpet as it’s soon to be better known in English (sometimes also known as the Atlantic Slipper Shell, or berlingots de mer in French) is actually native to the northeast of the U.S.

Until now, few people have tasted this shellfish as it’s very difficult to extract the edible part from the shell. But now, Brittany native Pierrick Clément and his team at the company Britexa have invented a machine that separates the shell more easily. Why is this machine in Brittany, if the limpet is native to the U.S.? As the story goes, the limpet was actually brought over from the U.S. to France in the D-Day invasion. The shellfish stuck to the hulls of the military ships. The limpet has multiplied exponentially in France, making it an environmentally friendly food to eat; it is not overfished.

Happy Monday, friends! I just wanted to shoot you a note to let you know that I’m guest blogging over at The Economical Eater today. Head over to Michelle’s blog to see my recipe for Watermelon Jalapeño Mojitos (and stick around because Michelle’s blog is awesome).

Also? A little FYI that WANM will likely be down starting tonight and possibly for a couple days. But for happy reasons… It’s time for the big redesign! It’s been a long time coming and I’m crazy excited for larger, cleaner photos, recipe organization that’s a billion times better, and more. I’m hoping (fingers crossed) to get on a more regular blogging schedule, with lots of fabulous recipes and other fun stuff that I’ve been slacking on a bit. Seriously excited.

Also, also? Just for fun, I had to share these. And ask if anyone has tried them. And would you? They’re pricey, but I’m SO SO intrigued.

Yes, edible cupcake wrappers. They’re from Dr. Oetker, who frankly I had no idea made anything but frozen pizzas. Consider my mind blown (though  I can’t find where these are sold in the U.S., FoodBeast reports that they’re $4 for a 6-pack). Speaking of edible cake decorations, though, Wilton’s Gold Shimmer Sheets are a bit more reasonably-priced (and can be fashioned into a seriously fab chevron design).

Anyway, I hope you all had fabulous weekends. Mine was gone in what felt like the blink of an eye and I can’t even believe it’s Monday already. Here’s to another productive, perfect summer week for everyone (hey, I’m trying to have some Monday morning optimism here!)

In the Netherlands, a new project plans to use a plastic fisher set up in a harbor to trap wrappers, bottles, and other junk as it floats by, before the litter is lost in the North Sea. The captured trash will be recycled into plastic blocks that can create floating parks and wildlife habitats.
