Bacon Cinnamon Rolls

Bacon Cinnamon Rolls

We’ve all seen the bacon cinnamon rolls that are made with Pillsbury dough and bacon strips. In fact, we probably have that recipe somewhere here on Bacon Today. But nothing beats making homemade cinnamon rolls from scratch. NOTHING! And when you sink your teeth into one of these warm, soft, sweet, bacony, doughy cinnamon rolls, you will never go back to pre-made dough again. Well, you might, but you’ll be thinking of these as you eat them, pretending they are “the real thing.” Make them for Mom on Mother’s Day to show how much you love her. And how much you love BACON!
Ingredients for filling:
½ cup butter (softened)
1 cup packed brown sugar
5 Tbsp. ground cinnamon
1 cup bacon bits
Ingredients for dough:
1 cup milk (heated approximately 1 minute in microwave)
¼ cup warm water (110°F)
1 tsp. pure vanilla extract
½ cup butter (softened)
2 eggs room temp. and beaten
½ tsp. salt
½ cup white sugar
5 cups bread flour
.25 oz. pack of active dry yeast
1 Tbsp. bacon grease
Ingredients for frosting:
Two 8 oz. packages cream cheese (softened)
½ cup butter softened
1 tsp. Vanilla extract
2 cups powdered sugar
Splash of whole milk
3 slices of candied bacon, chopped

1. Add the yeast to the ¼ cup warm water to proof the yeast.
2. In a 5 qt. bowl of a stand mixer fitted with a dough hook, mix all of the dough ingredients in the order given until a soft dough forms. Check the dough. It should form a nice elastic ball. If dough is too moist, add extra flour 1 tablespoon at a time. If it is too dry, add 1 tablespoon warm water at a time. Dough should feel slightly tacky to the touch.
3. Turn out onto a lightly oiled surface and knead until elastic, approximately 10 min. You can also use your dough hook and knead in the mixer.
4. Cover the bowl with plastic wrap and let rise until double in size.
5. Butter a 9” x 13” x 2” baking pan; set aside.
6. After dough has risen, use a rolling pin to roll and stretch the dough into approximately a 15” x 24” rectangle.
7. Brush the ½ cup softened butter over the top of the dough with a rubber spatula or a pastry brush.
8. In a medium sized bowl, mix the cinnamon, brown sugar, and bacon bits until blended then sprinkle the mixture over the butter on the dough.
9. Starting with the long edge, roll up the dough; pinch the seams to seal. Rolling the log too tightly will result in cinnamon rolls whose centers pop up as they bake.
10. With a knife, lightly mark 1.5” sections on the roll. Using a sharp serrated knife gently saw the log. Place cut side up in prepared baking pan, flattening them slightly. The unbaked cinnamon rolls should not touch each other before rising and baking. Do not pack the unbaked cinnamon rolls together.
11. Cover the rolls and let rise in a warm place for about 45 to 60 min. until doubled in size. After rising, the rolls should be touching each other.
12. Preheat oven to 350° F while rolls are rising. Bake for 20-25 min. until they are light golden brown. Remove from oven and let cool.
13. In the bowl of a stand mixer with the paddle attachment, mix the cream cheese, the butter, and vanilla extract from the frosting ingredients on medium high speed until well blended. Then add the powdered sugar and the splash of milk. Mix on low for about 2 min. then increase the speed to medium high and mix until no lumps are visible and the frosting is smooth.
14. Fill an icing bag with a large open tip and ice the rolls in a spiral motion following the cinnamon swirl, then sprinkle the candied bacon on top and serve. Place in microwave for 15-20 seconds for warm rolls.

Official DJ-Pon3 Album Is Finally Coming!

Way back in July of 2014, we dropped a press release announcing the debut of a My Little Pony remix album with DJ-Pon3 as the head. It was expected last fall, but outside of that initial announcement, absolutely nothing came of it for the entire year.
We finally have some good news!
Over on the Lakeshore Records Facebook Page, one of the staff responded to a query asking if it was still a thing. The exact reply:
Thank for your patience! DJ PON-3 is still coming!
Hopefully "still coming" is sooner than "another year!"

World’s Friendliest Restaurant Serves Breakfast, Lunch and Hugs

While it is common for restaurant owners to connect with their patrons, a restaurateur from Albuquerque is taking customer care to a whole new level. Tim Harris gives out free hugs to every single customer at the end of each meal. The atmosphere at his restaurant ‘Tim’s Place’ is so positive that patrons often call it the ‘world’s friendliest restaurant’.
The establishment has been around since 2010, and Tim has given out over 19,000 hugs in the past five years – he keeps count using a special Hug Counter. “I love giving all the customers a hug because I want them to feel comfortable and connected and being around friends,” said Tim explained.
‘Tim’s Hug’ is actually an item on the menu, described as a “calorie-free”, “guilt-free” treat that guarantees to “improve your lease on life.” Which is true – Tim’s hugs are doubly special because of everything he has achieved in life. The 26-year-old is probably the only Down syndrome sufferer in the U.S. to own a restaurant, but he has several other things to be proud about: he’s an accomplished Special Olympian, an excellent sailor, and an experienced offshore fisherman. And, he was also elected homecoming king and Student of the Year in high school! So when a man like Tim hugs you, it is sure to be a special and unforgettable experience.
10 Best Creative Writing Exercises

Here are ten of the best creative writing exercises for you to enjoy.
1. 7x7x7
Find the 7th book from your bookshelf. Open it up to page 7. Look at the 7th sentence on the page. Begin a poem that begins with that sentence and limit the length to 7 lines.
2. Dictionary
Open the dictionary to a random page. Find a word that you do not know how to define. Write an imaginary definition for it. Repeat.
3. First
Describe a first. Your first kiss, your first kitten, your first day of school—all will make excellent stories.

4. Magazine Puzzle
Cut out interesting words, phrases, and images from a magazine. Place them in a bowl, close your eyes and pull out two of these magazine snippets. Write a mini-story of not more than 250 words.

5. Pin the Atlas
Find a world map and blindly put your finger on a spot. Then pretend you’re a travel writer and write about a weird experience you had in that particular country.
6. Sell the pet
Write an advert selling a boa constrictor as a family pet.
7. Hello, you!
Write a letter to your future self. What do you want to say?
8. Found poem
Find two ads in the newspaper. Create a poem only using words from the two ads.
9. “I remember…”Start a paragraph with, “I remember…” and let your memories dictate what you write.
10. Switch Persona
Write a mini-story in the first person. Take on the persona of someone with a different gender, different nationality, and different age.

Baked Scrambled Eggs

Most of you know that I am a breakfast person. I'll give up lunch any day of the week if it means I can stuff myself silly for breakfast. Even though I don't particularly care for waffles or pancakes, I'm in love with just about every other breakfast food there is, so finding this recipe for Baked Scrambled Eggs made me so happy.
I was searching out brunch recipes for Mother's Day. I looked into taking my Mom out for brunch, but when I saw the prices...forgetaboutit! $32 a person! No thank you. I can do brunch much more economically and I'm pretty sure, much more delicious.
So on the Mother's Day Brunch Menu will be my most favorite breakfast casserole of all time....my Blueberry Croissant Breakfast Bake. You can find the recipe here.

A co-worker had told me that she made Baked Scrambled Eggs for her Easter brunch and that everyone went crazy for them, so I thought I'd give the recipe a whirl.

WOW! I tried it and I loved it! The eggs came out so soft and fluffy. Could you make scrambled eggs in a fraction of the time on the stove top? Sure, but I love the convenience of having the stove free to cook other things while the eggs are baking in the oven. If you have a large crowd to feed, or a bunch of hungry teenagers, this is a terrific recipe.
All the recipes I found were double this amount! I halved it for us. You can certainty double it if you like. If you like to throw in some cheese, or cooked veggies at the half way point, feel free to do so!
Baked Scrambled Eggs
PRINTABLE RECIPE
12 eggs
1 ¼ cups milk
4 tablespoons butter
Pinch salt and pepper.
Heat oven to 350. Place the butter in the bottom of a 9x13 pan. Let the butter melt while you prepare the eggs. Whisk together the remaining ingredients. Remove pan from oven and add egg mixture. Bake for 10 minutes then remove and stir well. You want to break the eggs up. Place back in the oven for another 10 minutes, remove and stir again. My eggs were done at this point, but yours might take a few more minutes. I would check on them every 3 minutes or so at that point. You don’t want to over bake them. If you pull them out at the right time they will be nice and fluffy.
